If I had my way, I’d skip the candy on Halloween and instead greet costumed kids with a true “treat” – a sandwich baggie filled to the brim with rib tips.

For the uninitiated, the rib tip (a.k.a. brisket, costal cartilage, or break) is the triangular, cartilage-dotted slab of meat attached to the lower end of the sparerib. When preparing St. Louis cut ribs (a.k.a. center cut ribs), this section of meat is removed in order to square up the slab of ribs.

While many see the slab of ribs as the star of the two cuts, the rib tip takes flavor to a whole other level by combining the meaty goodness of spareribs with the fatty richness of pork belly, which sits nearby. Many butchers grind the rib tips for sausage or pork burgers, but if you call a few days in advance of your cookout, butchers will often set aside the rib tips for you. Alternatively, you can simply purchase two full slabs of spare ribs and trim off the rib tips at home.

Some recipes call for rib tips to be cut into long, wide strips prior to smoking, but I find that keeping the slab of tips intact helps keeps the meat from drying out during the long cooking process. After 2 1/2 hours, I wrap the meat in foil to ensure maximum juiciness and tenderness, though this step is completely optional.

Use an instant read thermometer (rather than an exact time) to indicate when you’re done (115 to 120°F for medium rare, or 125 to 130°F for medium – remember these temperatures will rise by about 5 degrees after resting).

Let it Rest

Finally, allowing for the best prime rib you need to let it rest at least 15 minutes, but ideally closer to 30 minutes. This will make it juicier and easier to cut. Juicy Barbecue Pork Rip Tips, made on my charcoal grill!

Recently my “younger” brother & his family came to visit. If you’ve been following me for a while, you know that every my baby bro ( he’s almost 26, but I still call him my baby ) comes to town, I have to cook for him. Well the first night that he was here I made him his favorite meal: Mac n Cheese, fried chicken, and peas… The second day, I fired up the grill and made some of the most juiciest barbecue rib tips EVER!

I made pork rib tips, although you can can use beef. I started off with my homemade barbecue rub, and I generously seasoned the meat.

Once the meat was seasoned I made a simple “barbecue mop”, and I grilled the ribs using indirect heat

It took me about 2 to 2 1/2 hours to make these ribs. Although these ribs took a lot of time, they were super easy to make. If you a “unseasoned” griller ,you should definitely start off with this recipe.

Keep in mind that you can use this recipe for chicken as well.

What Are Rib Tips?

The rib tip is basically the section removed from the spare ribs when a butcher is making a more squared off cut. They are a less common cut, but are one of the best kept secrets of Chinese cooking!

They contain soft bones or cartilage, which, when cooked properly, are absolutely melt-in-your mouth DELICIOUS. And this isn’t an exaggeration! If you get this recipe right, you’ll see what I mean…

Many Chinese takeout restaurants have pork rib tips on the menu with a choice of rice––fried or plain, naturally. I remember my parents’ restaurant had Chinese BBQ rib tips with fried rice at the very top of the takeout menu, and it was no coincidence, because people would order this dish every night without fail.

The Keys to This Recipe

The key to making these pork rib tips delicious is twofold. First there’s the Chinese BBQ sauce. The secret is maltose, which really gives it that Chinese restaurant flavor and stickiness.

The second is baking them until they are f a l l  a p a r t t e n d e r. What comes to mind is meat falling off a bone, but what makes these rib tips so special is the fact that all you get is the soft white bone and cartilage. It’s loaded with flavor and melts in your mouth.

Chinese people love tendon, cartilage, and chewy bits in general. Think, braised beef shank, chicken feet, pig feet, sliced pig’s ear, etc. etc.

It may sound unpleasant to some, but it’s one of the great, surprisingly luxurious textures of Chinese cuisine in my opinion! What’s more, for all the health-conscious folks out there, the soft pork bones contain loads of collagen for your skin as well as your joints! That tender pork belly skin in our Hong Shao Rou recipe? Go for it. It’s ~*~healthy~*~. (Just eat around the fat!)

Trimming Your Own Rib Tips

So where do you get these rib tips? Now before you all go running to the supermarket to buy this cut of meat (we may be ruining a valuable secret here…see oxtails and pork belly, which are now regrettably as expensive as they are popular), there are a few things you should know.

Usually you see pre-cut ribs in the supermarket––the long racks that are uniform in width. Unfortunately, these ribs already have the tips trimmed off. You’re looking for a full rack of ribs. You can see what I’m talking about in this photo of a full untrimmed rack of ribs.

There is a hard bone near the bottom of the rib and as you move up, the bones are soft cartilage at the top.

When you’ve gotten your hand on your untrimmed ribs, take a chef’s knife and cut down the length of the rib.

On the left is a trimmed rack of ribs, and on the right is the whole rib tip. In our kitchen, we use rib tips cut in chunks for soups like our Pork Rib Watercress Soup, and we also cut them into smaller pieces to make Dim Sum Steamed Pork Ribs with Fermented Black Beans.

You can marinate and bake these ribs whole, which I recommend, or cut them into smaller pieces. The recipe and cooking method is super easy and the results are DELICIOUS! Judy and the girls were going gaga over these ribs. The day we blogged them, productivity came to screeching halt because everyone was stuffing their faces with ribs and fried rice.

That said, you can serve these oven-baked Chinese Pork Rib Tips with plain white rice, vegetable fried rice, or any preferred fried rice (you can go full on meat lovers and make beef fried rice or pork fried rice to go with this). Enter the amazing world of the pork rib tip! Let’s cook!

Chinese Rib Tips: Recipe Instructions

Rinse the pork rib tips, and pat dry with paper towels.

In a large mixing bowl, combine the maltose with the hot water using a spatula. Maltose is VERY thick and sticky, so the hot water helps to loosen and liquefy it so it’s easier to work with and can serve as the base of your marinade.

You may mistake the stuff for super glue. You can use your hands to soften it faster, but a spatula works fine too. Microwaving the maltose for 10 seconds softens it up also. Working with maltose is admittedly a bit difficult, but the rich stickiness really makes it worth the extra steps!

If you can’t find maltose, we’d love to hear your kitchen experiments with honey or agave as substitutes in the comments!

Add the garlic, hoisin sauce, salt, sugar, five spice powder, Shaoxing wine, ketchup, and red food coloring, if using.

Next, add the rib tip pieces to the bowl, rubbing the BBQ sauce into the meat and ensuring that it’s completely coated. You can cut the rib tips into smaller pieces but I leave them whole to ensure they’ll be tender and juicy. Cover the bowl with a large plate or plastic wrap and let the rib tips marinate overnight in the refrigerator (12 to 24 hours).

Baste the ribs every 20 minutes for another hour until done. At this point, if you like a slightly crispy bark on the rib tips, increase the oven temperature back to 325 degrees F for the last hour. Add 2 tablespoons of water to the pan around the perimeter of the rib tips if it starts to dry out and burn.

Carefully transfer the rib tips to a cutting board. I wasn’t kidding when I said they would be fall-apart tender!

Slice into bite-sized pieces, and serve with your favorite fried rice or plain white rice.

Although we love great burger recipes, a seared steak or even a weeknight chicken cookout, ribs are the ultimate grilled meal. They’re messy, indulgent, delicious and turn an ordinary summer afternoon into a festive occasion.

When learning how to grill ribs, it may seem intimidating because they require more time over the coals than many other types of meat. Here’s the truth: Because they cook low and slow, they actually have a wider window of perfection than something like, say, a T-bone steak that relies on a savvy sense of timing and temperature. If you take some time to prep ribs correctly and learn where to cook on the grill, they’re easy enough even for beginners.

Let’s start by covering the basics of how to cook ribs on the grill.

How to Choose the Best Ribs

Don’t just grab any pack of ribs at the store and run. Different types of ribs have different flavor and texture and, thus, cooking techniques. Here are the three most common types of ribs:

Step 1: Prep the meat

Most store-bought ribs have what’s known as silverskin, a membrane over the underside of the ribs. Sometimes, if you’re lucky, your butcher will remove it for you. Otherwise, you need to remove it before you cook. Don’t panic, it’s simple to do.

Insert a knife between the membrane and the meat at one end of the ribs. Be careful not to pierce the membrane. Work your fingers under the skin to loosen it. Now you’re going to tug it off. Wrap a paper towel around your hand so you can get a good grip. Gently but firmly, pull off the silverskin. It should peel off quite cleanly.

Step 2: Make the marinade

Pork is tasty as is, but marinating before cooking ribs on a charcoal grill enhances the flavor. It adds a deep savoriness that makes the meat more satisfying and delicious.

Making a marinade is easy. It’s really just stirring together a variety of liquids and spices and letting the meat soak in them overnight. For this recipe, combine the broth, soy sauce, ½ cup sugar, vinegar, olive oil and garlic in a bowl or measuring cup with a pour spout. Place the ribs in a shallow baking dish, like a 13×9. Pour two-thirds of the marinade over the meat. Turn to coat both sides, then refrigerate overnight. Turn the meat occasionally, to ensure that the meat is marinading evenly. (No need to get out of bed to do this. Just turn at night just before bedtime and turn again in the morning.)

Don’t toss that remaining marinade. Cover and refrigerate it. You’ll use it while you’re grilling.

Test Kitchen Tip: Seasoning your meat in advance gives the meat time to take on the flavors. This means you’ll serve up a meal that’s already delicious, even if you don’t add salt or barbecue sauce at the end. (OK, we’d never skip the sauce, but it’s nice to use the sauce as a highlight rather than as a coverup for bland food.)

Step 3: Treat the meat to a spice rub

Trust us: You want to add the spice rub. Like making the marinade, it’s simple to prep, just tossing some ingredients together in a bowl. Here, we use the remaining ½ cup sugar, plus salt and seasonings.

Take the ribs out of the fridge. Drain and discard the marinade from the 13×9. Pat the ribs dry (this helps the spice rub stick). Rub the spice mixture over all sides of the ribs, patting with your fingertips to encourage it to adhere.

Test Kitchen Tip: When it comes to ribs, some people only use a marinade. Some people only use spice rub. We like to do both! Marinading adds layers of flavor that penetrate deep into the meat, while the spice rub adds flavor to the surface of the meat. When the grill sears the ribs, the spicy, crackling exterior of the meat makes a delicious contrast to the tender, succulent meat inside.

Step 4: Grill

Here’s the real secret to how to cook ribs: Cook them over indirect flames, and give them time. This lets the connective tissue melt away, leaving you with perfectly tender, toothsome ribs. If you cook them too quickly, over high heat, the meat can turn out chewy and tough. Have a charcoal grill like we do? Use these tips to make using a gas grill easy.

First, preheat a clean grill to medium heat (about 200°F), then oil the grill. By the way, this is how to best clean your grill.

Place the ribs right on the grill, using tongs to maneuver them into place. Grill, covered, over indirect medium heat for 30 minutes on each side.

After the first hour, move the ribs to direct medium heat and cook 20-40 minutes longer, or until the pork is tender (more on this in a minute).

Occasionally, turn and baste with the reserved marinade (or barbecue sauce, if you prefer).

Test Kitchen Tip: Once you start to baste with the sauce, keep a watchful eye on it in case the sugars start to caramelize (brown) quickly. You’d hate to burn the ribs now after all your preparations up to this point. This is why we wait to baste until the end of the cooking time.

Step 5: Test for doneness 

We’ve all heard the old saying: Ribs should “fall off the bone.” But should your ribs really fall off the bone? Our Test Kitchen experts say no. We can all agree that chewy ribs are no fun, but if the meat is literally falling off the bones, then the ribs are overcooked and might be dry.

Start testing for doneness once the meat begins to pull away from the ends of the bones. This visual cue means it’s time to test. Pierce the meat with a fork and the tines should glide through easily. You also can twist a rib bone a little bit; you should feel it move easily but not fall apart from the meat. If the meat falls off the bone, your ribs are overcooked. Remove from heat right away and make sure to have sauce at the table in case they’re a bit dry. Don’t beat yourself up! Next time, remember to check earlier.

Overall, your ribs should be cooked to a temperature of about 190°F. This high temperature melts the tough collagen in muscle fiber, resulting in a tender rib. To take the temperature of your ribs, insert a meat thermometer ($99) into the meat, being sure not to pierce through the meat or touch the bone.

Step 6: Let Rest and Enjoy

By now, you’ve certainly built up an appetite. After letting your ribs rest for 10-15 minutes, you’ll want to split them up into manageable portions. Using a sharp chef’s knife, carefully cut them into two-bone sections. Make the cuts as close to the bone as possible so there’s a lot of meat on each one.

Smoked rib tips recipe featuring tender and meaty pieces of pork ribs rubbed with spices and slow-smoked to moist chewy morsels. They're small and boney, but pack big flavor.

Baby back ribs and pork spare-ribs get all the attention and shine, but the real ones know, pork rib tips are where it's at. Flavorwise and just plain old eating enjoyment wise they are on the same level.

This pork rib recipe is great for a holiday appetizer particularly the family Fourth of July barbecue or if you're like me it's messy finger foods that are so tasty you can't just eat a few making it more of a main course dish. You'll need to have your paper towels ready since these smaller pieces of tender goodness when slathered in tangy barbecue sauce can be a rewarding messy affair.

Being a ribs guy, I was aware of rib tips, but it wasn't until I moved to Chicago that I got to know rib tips, like really know 'em. And if you don't know them, you definitely need to know them. Northsiders in Chitown know nothing about rib tips, so you gotta go to the Southside. Lem's was my go-to spot for rib tips.

Rib tips are that humble fantastic ish. It's cheap but it's damn good like most hood food. Southsiders like their ribs heavy on the sauce, but I'm a Texas cat through and through so it's either no sauce or on the side.

What Are Rib Tips?

Pork rib tips are like pork belly but with small pieces of cartilage. Because of their small size many call them riblets. They are meat cuts which come from that shorter section of a full rack of ribs that is cut-off to make St. Louis-style ribs which is more of a cleaner rectangular box look. What you end up with are spare rib tips, "short ends," pork riblets

This is what you'd get if you asked the butcher for trimmed ribs. Rib tips are the bottom trimmed off parts.

It's a well-kept secret in the hood that rib tips are the most flavorful part of the rib. Because not everyone is in the loop on this, they run pretty cheap.

Smoked Rib Tips Ingredients

It's just ribs and a simple spice dry rub. Use your favorite rub recipe or try the simple one I made which includes: paprika, cayenne, kosher salt, black pepper, garlic powder, brown sugar, and cumin. Sauce is optional.

Since rib tips are fairly common in the midwest, particularly Chicago, you can find pre-cut rib tips readily available. However, if you don't have access you can easily have your butcher give you the tips or just cut them off your slab yourself.

Tips for Smoking Tips Frequently Asked Questions (FAQs) For BBQ Rib Tips What Special Tools or Appliances Do I Need?

You'll definitely need a grill. I have made this recipe on my Kamado Joe Smoker, Traeger Pellet Smoker, and an old-school charcoal grill. I'm partial to smokers set-up for indirect heat which makes it easy for low and slow smoke cooking which gives slabs of rib tips their magic.

If you're cutting your own rib tips, you'll need a really sharp knife to cut through the cartilage and strip of meat.

Can You Cook Rib Tips In An Instant Pot?

I personally haven't cause I'm partial to the traditional old-school way. I'm not above changing things up and I'm a big instant pot fan, but I haven't made the pork rib tips in an instant pot yet. Maybe at some point, I will and I'll update this post with the creation. If you're dead set on going the instant pot rib tips route, try this recipe.

Where Can I Find Pork Ribs?

If you live in Chicago, you'll find them all over the Southside in any grocery store. For us not lucky enough to be Chicago Southsiders, you can buy full slabs of St. Louis-style ribs and cut them yourself reserving the rib tips or you can have a specialty butcher shop do the dirty work for you.
