I've used to make this cake without the chocolate glaze, but let me tell you, I've been missing a lot!. This time I've decided to use the glaze from my lovely chocolate cake, and boy was it a great thing to do. Take a look for yourself.... aaaah-mazing.

I am not a fan of ice box cakes, but I suddenly remembered this cake from long long time ago. I've found the recipe in my old notebook that came with me from Egypt a decade ago.

The story goes back to when I first got married. When you get married and after coming back from the honeymoon , friends and family come to congratulate you on your new home and wishing you the best in your new life.

Of course, you'll have to entertain your guests usually desserts are served. Being a no cook type of girl, I used to buy from a pastry shop near my work place on my way back home.. and it was pretty expensive for a new couple.

One of my dearies, who got married a couple of months before me, suggested I make this cake. I was like " What!!, do you expect me to bake a cake for people?". She explained how easy it is to make, and that she is no better than me, yet she had much success.

Her recipe called for rolling the bade in aluminum foil thus making a big log, then freeze. I enhanced the recipe a bit and decorated it with chocolate balls.. any kind will do the trick.

I did not put mine in the freezer, I only refrigerated it overnight. If you are in a hurry put it in freezer to set. This would be a great easy cake for any occasion... think mother's day?! Even kids can make it with a little supervision.

To make it even easier, roll it as originally stated in a foil to make a log and refrigerate until it sets then pour the chocolate sauce over, I repeat it is a must to make this incredibly delicious chocolate sauce.

This cake goes by so many name, lazy cake, rocky road cake to name a few.

How do you make a lazy cake?

Now this cake is high and packed full with chocolate and biscuits, so I am estimating that it would be ok for 24 servings, more or less depending on who are you sharing this with.

Prince William’s Chocolate Biscuit Cake. In honour of the royal wedding here’s a favourite of the entire British royal family and was chosen by the Prince as his grooms cake for the wedding. Prince William’s Chocolate Biscuit Cake

The inspiration for this chocolate biscuit cake came when I went for a stroll downtown with the kids a couple of days ago. We came up with the idea to make Prince William’s groom’s cake which he has requested be served at the wedding reception. 

Apparently, this easy no-bake refrigerator cake is a childhood indulgence of his and a particular favourite of the entire royal family. With this idea in mind, we dropped into Fat Nanny’s grocery store on Duckworth Street.

There, I procured the necessary Lyle’s golden syrup and a large sleeve of McVities original digestive biscuits. Both Lyle’s and McVities are venerable brands in the UK, which adds a little extra authenticity to the recipe on this occasion.

Golden syrup is a little difficult to come by in these parts, so I would use dark corn syrup as a substitute. Any brand of digestive biscuits will do.

Dark chocolate is the way to go with this recipe but you can mix semisweet and dark chocolate if you like the chocolate flavour to be a little lighter.

I’ve also read numerous versions of this recipe online that include such ingredients as dried cherries, and roasted nuts. I even saw one ingredient I might just try the next time I make this; broken Crunchie bars!

There’s lots of room for experimentation with this recipe, so go discover your own favourite version.

When Prince William got married, apparently he requested a chocolate biscuit cake for his groom’s cake. After doing some research, it turns out that this recipe is a favorite of the entire Royal family – especially Queen Victoria. I found it quite endearing that despite all the fancy delicacies they’d have, the Queen loves an easy chocolate refrigerator cake.

The Perfect Chocolate Biscuit Cake

The recipe uses a few everyday ingredients that are very common in the UK but can be a little harder to get overseas. Specifically, you’ll need golden syrup and McVities Digestive Biscuits. If you live in the US or Canada, these ingredients can often be found at an import store or the import section of your grocery store. If need be, you can also substitute golden syrup with corn syrup. Digestive biscuits or shortbread cookies can also be substituted with graham crackers. However, I do find using digestive biscuits makes the cake more classic. Digestive biscuits and golden syrup for making chocolate biscuit cake.

To make the recipe, you essentially just melt together butter, chopped chocolate, golden syrup and heavy cream. You get a thick, chocolate sauce that should look nice and glossy. Then you’ll stir broken biscuits into the mixture. I like larger pieces of biscuits about the size of a large coin, but it doesn’t really matter.

The mixture gets poured into a round cake pan that’s lined with plastic wrap and lightly greased, and then goes in the fridge to set. No baking, no cooking, and very little effort. After the cake has set, you’ll lift it out of the pan using the overhang of the plastic wrap.

Instead of frosting, a thick chocolate ganache goes on top for a little extra pizzaz (but you could skip this if you prefer). A sprinkling of powdered sugar or even cocoa powder on top can also look nice for something a little less rich. Round chocolate biscuit cake topped with chocolate ganache on a plate.

While this cake is very easy to make, I main tip/piece of advice is to use high-quality dark chocolate for the best flavor. I typically use something between 50-70% dark chocolate, because the golden syrup will add more sweetness and the cream will make it milkier and less bitter. You definitely don’t want to use anything stronger than 70% dark chocolate though, otherwise, it will be very bitter and rich.

Variations & Substitutions

If you love this chocolate fridge cake, I’d definitely recommend trying this chocolate hedgehog slice (a delicious Australian treat) or classic, Canadian Nanaimo bars.

Today’s recipe today for The Queen’s Chocolate Biscuit Cake is a variation on one I have been making for years, without realising that it was Her Majesty the Queen’s favourite cake. It was a favourite for birthday parties and the cake tin, with my daughter taking a small square to school in her lunch box sometimes.

Apparently, Her Majesty is so fond of this recipe for The Queen’s Chocolate Biscuit Cake, that she has it daily in the afternoon with a cuppa, and will enjoy a slice every day until it is all gone. I love this idea that The Queen is a bit of a chocoholic, and enjoys a simple no-bake cake above other more complex cakes.

She’s so fond of it, that any leftovers of the cake is transported in a biscuit tin with her, when she moves from Buckingham, Palace to Windsor Castle, according to herchef Darren McGrady, The Royal Chef and former personal chef to Queen Elizabeth II, see below:

And, she’s not the only Royal who is a fan of this Chocolate Biscuit Cake, Prince William is also known to be a fan of this simple cake too. So much so, that he had one made for his weddingto Catherine Middleton, as a “Groom’s Cake”.

I can see why it is so popular with The Queen, it is a simple cake insofar as it only has 5 main ingredients in it, namely chocolate, butter, sugar, cream and Rich Tea biscuits. I love Rich Tea biscuits which are essential as a “dunking” biscuit in a cup of tea.

The humble Rich Tea biscuit has a long and interesting history. Originally called “Tea Biscuits”, they were developed in Yorkshire (England) during the 17th century, as a light snack for the gentry to enjoy between meals.

The Queen’s Chocolate Biscuit Cake is a cake often known as Tiffin, these no-bake cakes were very popular in a little cafe I used to work in Cornwall, in the school holidays; there the cake was called “Wicked Cake”. It comprised melted chocolate, butter and cream, mixed with leftover cakes and biscuits. Served in squares, it was the most popular cake on the menu.

I hope you enjoy this cake if you make it, it’s very easy and the children can get involved too. The Queen’s cake, as seen on the Royal website, is decorated with chocolate curls and scrolls, but I’ve just added a sprinkling of cocoa nibs and some grated chocolate on top of mine.

You can be as inventive as you like with decorating this cake, although it’s simply divine with just its chocolate ganache coating. Just look at how this simple cake has been decorated in the Royal Kitchens below:

The monarch’s former personal chef, Darren McCrady, revealed the 93-year-old has something of a sweet tooth, and always prefers a chocolate dessert over anything else. 

Darren, who cooked for the Queen for more than 20 years, revealed there was one particular recipe which was her favourite. 

It’s the chocolate biscuit cake, and Darren claimed she eats it “until it is all gone”. 

He told Today: “This chocolate biscuit cake is Her Royal Majesty the Queen's favourite afternoon tea cake by far.

"This cake is probably the only one that is sent into the royal dining room again and again until it has all gone."

Darren added the Queen would make sure she finished the cake by having it sent to whatever palace she was heading to next, so she could enjoy every last crumb. 

He added: “I used to travel on the train from London to Windsor Castle with the biscuit cake in a tin on my knee. It was half eaten.”  

With the Queen’s birthday coming up, Darren shared the simple recipe for the cake - and you don’t even need an oven to make it. 

The key ingredient is biscuit, with Rich Tea working well for this recipe. 

You’ll also need butter, as well as dark chocolate, sugar and an egg, plus extra chocolate for the icing. 

Explaining how to whip it up, Darren said to first grease a cake tin and pop it on a baking tray lined with parchment. 

Next smash the biscuit until they’re roughly the size of almonds, and pop them in a bowl to one side. 

In another large bowl, mix the butter and sugar until they’re well combined. 

Melt the dark chocolate for the cake in another bowl, and once melted - taking care not to burn it - add it to the butter and sugar mixture. 

Crack the egg into the bowl and mix everything until it’s well combined, then add in the biscuit pieces, ensuring they’re all coated in chocolate. 

Pour the mixture into the tin, with Darren advising to make sure you push the mixture right to the bottom as this will be the top once it’s turned over. 

Pop it in the fridge to chill for three hours until it’s set, and once it’s hard, turn it over and remove the cake tin.

Let it stand, and in the meantime you can make the icing by melting the remaining chocolate, and pouring it over the top and smoothing it with a knife round the edges. 

Darren would then finish the cake with a decoration piped in chocolate, but we’ll leave that step as optional unless you’re up for a challenge. 

Plus we revealed the Queen’s baths are only seven inches deep and measured precisely by a member of her staff.

About This Biscuit Cake

I have many wonderful dessert recipes on the site, from Chocolate Cake to homemade Ice Cream and lots of sweet goodies in between.

This is a recipe which I had seen in my childhood in one of the cookery shows on the Indian Doordarshan channel and I still remember it. I had never forgotten this one. I used to make a few changes and make this no bake biscuit cake on occasions.

After several requests from readers for a no-bake cake made with biscuits (known as cookies in the US and other regions), I am sharing this foolproof recipe that’s a hit every time.

Likewise, this chocolate biscuit cake is easy to prepare with nearly any sweet biscuit you like. I use glucose biscuits, but feel free to make no-bake cookie cake with Marie biscuits, your favorite digestive biscuit, or sweet crackers.

The taste is similar to a traditional chocolate cake, but has a slightly firmer and more tender texture. Biscuits are briefly soaked in coffee, then layered with a delicious chocolate sauce.

I have prepared the sauce with Cadbury’s Bournville raisin and nut chocolate for even more deep flavor. You can also use Cadbury’s Dairy Milk Chocolate, couverture, or compound chocolate, if you prefer. (However, do not use Cadbury’s Silk Chocolate. It does not work well for a smooth chocolate sauce.)

Step-by-Step Guide

How to make Biscuit Cake (No Bake) Prep The Ingredients

1. First assemble all the ingredients. You will need the following:

2. Line a cake pan or a loaf pan with parchment paper, butter paper or aluminium foil. You can use any medium-sized cake pan.

You can use any medium-sized loaf pan. If you do not have a loaf pan, you can also use a regular medium-sized round pan or a tray which has some height and depth.

Make Coffee Solution

3. Add ⅓ cup of water to a small sauce pan and heat slightly over a low flame. The water should be warm or slightly hot, but not simmering.

4. Now pour the warm water into a medium bowl.

5. Add a ½ tablespoon of instant coffee. If you prefer to make this biscuit cake without coffee, simply substitute with drinking chocolate, hot cocoa powder, or regular cocoa powder or ground cacao.

6. Mix very well. Set aside.

Make Chocolate Sauce

7. Next add ½ cup of milk in the same saucepan. You can also use almond milk or cashew milk or soy milk for a dairy-free biscuit cake.

8. Add 1 tablespoon of cocoa powder.

9. Mix very well with a wired whisk until the sauce is smooth without any lumps.

10. Next add 1 tablespoon of sugar. You can add more or less depending on personal taste and how sweet your chocolate is.

The cadbury chocolate I use is already quite sweet, but bittersweet or dark chocolate bars might need a bit more sugar.

11. Place the pan on stove top and turn the heat to low.

12. Stir with a wired whisk to dissolve the sugar.

13. Slowly bring this cocoa mixture to a gentle boil as you continue to whisk regularly.

14. After it comes to a gentle boil, then continue to simmer for 2 to 3 minutes on a low to medium-low heat. Continue to stir often.

15. After 2 to 3 minutes, switch off the heat and place the saucepan on your kitchen countertop. Add the chopped chocolate.

16. Begin to mix the chocolate into the sauce.

17. The heat of the cocoa sauce will melt the chocolate. Mix to a smooth glossy consistency. At this point, you can add some chopped nuts or dry fruits if you want.

Also, check the taste and add more sugar if required. But do keep in mind the sweetness of the biscuits you will be using. Set the pan aside so that it cools slightly to warm.

Making Biscuit Cake

18. Take each parle glucose biscuit and dip in the coffee solution. If using glucose or marie biscuits or digestive biscuits, then just dip for a second and quickly remove.

Do not keep in for any longer or the cookies will become too soggy.

19. You just need to coat the parle g biscuits with the coffee syrup.

20. Then place the biscuit in the pan lined with parchment paper. Continue to dip each biscuit in the coffee syrup and line the pan with a single layer of biscuits.

21. Stack on top to make a second layer of dipped biscuits. Depending on the size of the pan, you can make 2 to 3 layers.

22. Now pour half of the chocolate sauce over the biscuit layers, and spread it evenly but gently with a spatula. Tilt the pan a bit so that the chocolate sauce spread all over the biscuit layer.

23. Make another third layer of coffee solution dipped biscuits.

24. Then make a fourth layer.

25. Finally, pour the remaining chocolate sauce and spread it evenly.

26. Seal the pan with a lid or cover with foil. Place in refrigerator and let the biscuit cake set for at least 4 to 5 hours. You can also keep it in the fridge overnight.

27. Below picture is of the biscuit cake after being set.

28. When ready to serve, carefully lift the sides of the parchment paper and place the biscuit cake on a chopping board or tray.

29. Slice the no bake cake gently.

30. The chocolate biscuit cake will have many layers. It looks as pretty as it tastes, so I suggest you serve it in such a way that the layers can be seen. And be sure you also eat those yummy little bits of biscuits and chocolate left on the parchment paper!

31. Serve biscuit cake as a dessert after meal or with tea or coffee. You can also enjoy it as a sweet snack anytime of the day.

This no bake chocolate biscuit cake is one of the easiest no-bake recipes, takes only 20 minutes from start to finish, and it tastes incredible! This recipe doesn’t require an oven, but still tastes amazing!

What you will need for this chocolate biscuit cake recipe: How to make chocolate biscuit cake:

1.   Start out with making the chocolate syrup: In a small pan mix together granulated sugar, cocoa powder, and water on low to medium heat.

2.   Mix the mixture with a whisk until it's fully melted. Add the vanilla extract and mix for another minute. When the mixture is completely smooth, set the mixture aside to cool for 15 minutes.

3.   Break the biscuit into small pieces with your hands or with a food processor.

4.   Pour the chocolate sauce into the bowl with the biscuits.

5.   Mix well with a wooden spoon until all the biscuit pieces are well coated.

6.   Add the mixture into a parchment paper-lined cake pan and press down the mixture with a spoon. Place in the fridge for 30 minutes.

7.   Make the chocolate ganache: In a small mixing bowl, pour the heavy cream, and the dark chocolate. Microwave it for 1-2 minutes and let it sit for 10 minutes before mixing.

8.   Mix the chocolate ganache well until smooth.

9.   Pour the chocolate ganache on top of the biscuit cake and smooth the top with a spoon.

10.  Cover with plastic wrap and place the biscuit cake in the fridge for at least 4 hours.

11.  Toast walnut in a pan and chop with a sharp knife.

12. Top the cake with the toasted walnuts. Serve next to a coffee or tea, and enjoy!

How to serve chocolate biscuit cake?

Serve this biscuit chocolate cake with ice cream on the side with some chocolate syrup and whipped cream. If you don’t want to use ice cream, serve it with fresh fruit on top.

Can I use regular cocoa powder?

We like to use Dutch prosses cocoa powder, because it gives the cake a deeper rich chocolate taste, and cocoa powder will work! It’s just a personal preference.



Can I freeze the chocolate biscuit cake?

Yes, you can freeze this cake after it in an airtight freezer-friendly container for up to 3 months, some people find the cake tastes better after freezing it.

our tip is not to freeze it decorated or covered with frosting, because it can ruin the decorating on the cake, we suggest freezing the cake and decorate it when you defrost it.

If you’re not looking to impress anyone with your decorating skills, it’s absolutely okay to freeze the cake with the frosting on.

When ready to thaw, place the cake at room temperature for a few hours or overnight in the fridge.

I made mine in a 8×8 square tin, this gave me 16 big chunks! Feel free to use what you have. If you want to half or double this recipe go for it! You will just need to alter the chill time. You could make this recipe in a round cake tin and use it as a birthday cake covered in fondant or buttercream! Its so so versatile. If you want to only make a small amount you could half the recipe and make it in a loaf tin, then cut up into slices! This would be so nice!

With this Chocolate Biscuit Cake recipe you can change up the ingredients to whatever you have. Stick with the dark & milk chocolate, condensed milk and butter then add in anything else. This is what I love so much about the recipe. You can change up the biscuits to your favourites or change up the other treats for anything you like. Just stick to the same quantities of what I have in the recipe.
