Clapshot is one of Scotland’s better known vegetable dishes. Although, it has to be said, there aren’t that many in the first place.

According to F. Marian McNeill (The Scots Kitchen, 1929) clapshot is an Orcadian dish, or rather, clapshot is an Orcadian word.

In his book Reminiscences of an Orkney Parish (1920), John Firth remembers eating clapshot with bere bannocks: ‘This vegetarian dish bore the curious name of “clapshot.”’

A spartan, but all the same, filling and nutritious meal.

It is hard to imagine such an elemental mixture of turnips and potatoes, mashed together and enriched with butter, not being made wherever turnips are enjoyed.

It is the perfect accompaniment to haggis, or lamb chops, or a rich lamb stew.

To clarify, it is the Swedish turnip, or swede, what is generally called turnip in Scotland, which I refer to in this article.

Despite the fact that Scotland has never been famous for its vegetable dishes; it does, however, play a vital role in the British and European potato industry, supplying the finest potato seedlings for commercial growers all over Europe.

Scotland’s cooler climate is perfect for producing potato seedlings which are disease free, producing extremely healthy crops more naturally.

This is one of the rare occasions where Scotland’s cooler climate has been an advantage in the vegetable department.

As clapshot is such a simple dish it almost seems silly to write down a recipe for it. Boil turnip and potatoes, bash them, mix with butter etc. However, there are a few things that can make a difference. McNeill includes chives in her recipe.

As she was an Orcadian herself, and wrote down the first recipe, chives may be an essential component if you are a stickler for authenticity.

Finely sliced chives are so pretty, and apart from their flavour, they have the wonderful effect of making this basic dish look extremely appetising.

However, they are not so essential if they happen to have travelled half way round the world to get to Scotland. The other thing I like to add to clapshot is fried onions, they add a savoury sweetness that transform this dish into something very special.

My parents always make clapshot this way when they have haggis and I love it.

The quantities in the recipe below is enough to serve 2 - 3 people.

The quantities you make are usually dependent on the size of turnip you buy, either that until you get fed up of chopping it. You need a sharp knife for turnip, otherwise you will be in despair.

Ingredients

• 1 small swede, roughly 500g, (i.e. the size of a grapefruit)

• 3 medium potatoes, roughly 500g (Desiree are of course the best for mashing, but mealy potatoes, such as Golden wonder or Records, are what were traditionally grown in Scotland)

• 1 medium brown onion (optional)

• small bunch of chives (optional)

• butter

• salt and pepper

• nutmeg (optional)

1.Prepare the turnip by removing the outer skin, then cut it into small and even cubes.

2.Peel the potatoes and chop them into cubes. Boil both vegetables in salted water in separate pots.

3.Meanwhile peel and slice the onion as thin as you can, then fry it slowly in a pan with a little butter, or cooking oil, until well browned, sweet and crispy.

4.When the turnip and potato are soft, when they can be pierced easily with a sharp knife, drain them and leave them to steam for 5 minutes to help get rid of any excess water.

5.Mash the turnip and potato together in a pot over a low heat, this helps to remove any excess water, and to keep it hot. Add a generous knob of butter, a grating of nutmeg and grinding of black pepper.

6.Stir half the onions through and save the rest for the top. Check for seasoning and serve sprinkled with the remaining onions and chives.

Return with us to the days of yesteryear, when glamorous movie stars roamed the streets of Los Angeles -- and dinner was served during the Academy Awards ceremony.

Imagine, if you will, the Cocoanut Grove, where the awards presentation banquets were held from 1930 to 1936. It looks like a scene from “The Aviator.” (Wait, it is a scene from “The Aviator”!)

A vast room with hundreds of tables lighted by tiny lamps, waiters rushing by with silver trays, women in evening gowns and serious jewelry, men in tuxedos.

But what are they eating? How can you duplicate that excitement, that sense of occasion at your home Sunday? What would the Cocoanut Grove’s Chef Henri, who oversaw banquets honoring presidents, emperors, admirals and comedians, do for such a noteworthy event?

Why, he’d create a theme menu. Something to represent each of the films nominated for best picture in each course.

To start, a toast from “Ray.” Champagne? Maybe not: Instead, we’ll sip Bols gin, just like Ray Charles’ (Jamie Foxx) girlfriend (Regina King) did when she drank her dinner. She drank it straight out of the bottle; we’ll raise a martini glass.

The first course, a goat cheese and hazelnut salad with oven-dried tomatoes, is drawn from “Sideways,” the surprise hit about a couple of middle-aged guys, Miles and Jack (Paul Giamatti and Thomas Haden Church), on a yuppified bender through the Santa Ynez Valley. This is the same salad Miles has for his first course at Los Olivos Cafe, where Miles and Jack go on a double date with Maya (Virginia Madsen) and Stephanie (Sandra Oh). It pairs beautifully with Fiddlehead Sauvignon Blanc, one of the wines served in that scene.

Our main course is from “The Aviator”: steak and 12 peas. In a scene set at the Cocoanut Grove in 1927, Howard Hughes (Leonardo DiCaprio) is such a regular that the headwaiter, upon seating him and Katharine Hepburn (Cate Blanchett), simply asks if he’ll have “the usual.” Hepburn is offered clementine soup (whatever that is), roast duck and poached pears in rose-petal sauce. Hughes’ “usual” was a steak and “12 peas,” which had to be meticulously arranged on the plate in a grid pattern because he was, shall we say, a picky eater.

Chef Henri, by the way, though French, had a streak of Alice Waters-like passion for local produce, according to Betty Goodwin, author of “Hollywood du Jour: Lost Recipes of Legendary Hollywood Haunts.” He created dishes with avocado, citrus fruits, abalone, sand dabs, California oysters and California figs.

To accompany the steak, turn to “Finding Neverland” for a traditional Scottish dish of mashed potatoes and turnips called clapshot. OK, it wasn’t actually served in the movie, but it could have been: In the scene in which “Peter Pan” author J.M. Barrie (Johnny Depp) endures a tense, silent meal with his wife, Mary (Radha Mitchell), they dine on roast beef and a potato dish that’s spooned from a square silver serving dish. Clapshot? Likely as not. Our tasty version, with chives and just a wee bit of butter, is from “Traditional Scottish Cookery” by Theodora Fitzgibbon. The wine pairing? Whitcraft Pinot Noir, imbibed in “Sideways,” of course.

From “Ray” comes the bread basket, featuring cornbread and molasses, a dish so much a part of African American folklore that it’s enshrined in story and song (“Don’t want no cornbread and molasses, / Gimme beans, Lord, gimme beans!”). Cornbread and molasses were among the few staples that got rural poor Southerners through the Depression.

In the film, when Charles takes his future wife, Della Bea (Kerry Washington), to lunch while he’s on tour in Houston, he teases her for being a country girl. How does he know that? She’d asked for molasses with her cornbread.

And for dessert -- what else but lemon meringue pie from “Million Dollar Baby”? As Clint Eastwood’s tough-on-the-outside character, Frankie Dunn, begins to warm up to the fiercely ambitious Maggie (Hilary Swank), he reveals a fondness for lemon meringue pie -- but, he says, the real thing, with homemade lemon custard, none of that store-bought stuff. Maggie helps Frankie find the pie of his dreams even as he helps her fulfill her own dreams.

The Times Test Kitchen director Donna Deane’s recipe is from her mother, a classic version with a buttery-toasty crust, terrifically lemony filling and a cloud of ethereal meringue.

It’s so good, we couldn’t help but name it “Million Dollar” pie.

There is nothing exotic about the ingredients used to make this particular comfort food. They are cheap and easy to find anywhere in Ireland. I got all mine from a local farmer who has a roadside stall once a week.

It is so handy when you miss the weekend farmers’ markets and don’t want to tackle the orienteering course that is the modern supermarket just to pick up some carrots. What my children initially thought was a huge rock caked in mud was in fact a turnip – freshly dug from the ground in the lashing rain that morning, as all good turnips should be.

Neeps (turnips) and tatties (potatoes) are traditionally served on Burns Night in Scotland alongside haggis. Mix them together and add some chives and it becomes the traditional Orkney dish clapshot. Who wouldn’t love to dig into a big bowl of clapshot on a cold night? The same mash is known as ponch maip in Wales.

I have made my own version here, adding some parsnip for sweetness. Yellow, buttery turnip mash is delicious with slow-cooked ham, smoked haddock or a beef or lamb stew. One of my favourite childhood dinners was ham with parsley sauce, turnip, carrot mash, potatoes and lots of pepper.

Turnips have a distinctive peppery taste that is further enhanced by a liberal amount of pepper. I remember passing around the yellow and red Saxa shaker and sneezing as our plates were enveloped in a cloud of pepper.

As a nostalgic nod to those ham and turnip dinners, I have added Parma ham crisps to my mash. These are so easy to do and great for serving with a salad or on top of a soup. You simply place the Parma ham on trays to crisp up in a hot oven, then serve in shards or crumble over for an intense, salty ham crunch.

They are very tasty sprinkled over potato and leek soup, or over poached eggs for breakfast as an alternative to rashers. You can serve them on top of the mash or crumble them and stir through.

If you would like to go the whole hog and serve this mash as they would in Orkney, seek out some haggis or serve with its Irish cousin: white pudding.

I often make turnip chips. They are an alternative to potatoes but are really a different dish altogether. They can’t be compared to a regular chip. Just peel the turnip and cut into thick farmhouse-style chips. Coat in a little olive oil and roast in the oven at 200 degrees for 25-30 minutes until golden and caramelised around the edges. Sprinkle with sea salt before serving.

They are delicious with lamb chops. Roasting the turnip makes it sweet and nutty – so unlike the watery mash that people dread.

Turnip grows very well here and is cheap and full of vitamin C. It is lovely grated and mixed with other vegetables in fritters or latke-style cakes and is fantastic in stew.

CLAPSHOT WITH PARMA HAM CRISPS: SERVES 4

Preheat the oven to 200 degrees. Peel and chop all of the vegetables and place in a large pot. Just cover with cold water, then bring to the boil and simmer until just cooked (about 15 minutes). Meanwhile lay the Parma ham on a greased baking tray and bake in the oven until crispy. This takes about 10 minutes, but watch that the ham doesn’t burn, as it easily can. Set aside to crisp up.

Drain the vegetables well in a colander over the sink. Place vegetables back in the pan and leave on the heat for a minute so any residual water steams off. Add the butter, maple syrup and mustard. Mash until smooth and creamy. Season to taste with salt and pepper.

Add more mustard or maple syrup, depending on how hot or sweet you would like it. Butter a serving dish and spoon the mash in. Top with the Parma ham crisps and serve.

Seem to be identical with the Swedish rotmos. Sometimes made with chives or other herbs (in my part of Sweden with either parsley (sv. bladpersilja), bear's garlic (sv. ramslok) or chives (sv. graslok), since chives are native to Sweden, I would guess that it was used first (parsley and bear's garlic has been grown in my part of Sweden since at least the 8th century (bear's garlic is now growing in the wild) and rutabaga (sv. rotabagge/kalrot) is a native, wild growing, species, it was mostly replaced by potatoes as a crop in the 18th century). Rotmos, in its modern form, have been eaten in Sweden for as long as potatoes have been grown here. Before that it was made by using only cultivated rutabaga, and before that from wild growing rutabaga and other wild plants of the genus Brassica (then the mash was called grot/grautr (meaning something that has been coarsely ground), a word now only used for porridge in written Swedish).
