Be sure to remove the bag of giblets, usually inside the cavity of the chicken, and discard before cooking. It also helps to pat the chicken dry on all sides with a paper towel to help the Greek seasoning rub stick to the chicken.

Step by step Greek Lemon Chicken directions:

In a small bowl, stir together oregano, basil, salt, lemon pepper, minced garlic, and olive oil. Spread over entire surface of chicken.

Pierce a lemon and place inside the cavity of the roaster-chicken. Slice the second lemon in half and squeeze both halves over the chicken, being sure to catch any seeds that may fall. Place the lemon halves along with the chicken in the baking dish. Pour 2 cups of chicken broth into the bottom of the baking dish.

Bake the chicken at 350 degrees for 1 1/2 – 2 hours or until juices run clear and internal temperature reaches 165 degrees. Transfer chicken to a platter and cover tightly with foil.

My family lives in a neighborhood with streets lined with lemons so I’m always looking for new lemon recipes to try in addition to Lemon Bars and Lemon Meringue Pie.

Greek lemon chicken, like Greek lemon chicken soup, is a popular family dinner recipe.

This dish is easy to make and perfect for anyone who loves lemons. You also may like Chinese Lemon Chicken which is actually Canadian.

IS KOSHER CHICKEN BETTER?

Yes and no.  It is not necessarily healthier as far as bacteria is concerned, since bacteria can only safely be killed with heat. 

What is better is that kosher animals are kept in better conditions than not kosher animals due to strict kosher health requirements of the animals.  They are also killed in arguably more human conditions.

Also, the salting process used to remove blood from the animal is also believed to provide better quality meat. 

Kosher poultry and meat are salted to remove blood which is forbidden to be consumed according to Jewish law.  This is said to create a sort of quick dry brine.

While I’ve only eaten kosher meat so I cannot compare, I’ve been told by non-Jews who do not keep kosher that they’ve noticed that kosher chicken is of superior quality to cook with.

SHOULD YOU WASH CHICKEN?

No.  According to the USDA washing meat or poultry in water spreads bacteria throughout the kitchen.

Water can splash bacteria up to 3 feet surrounding your sink, including onto countertops, other food, towels, and you (i.e. cross contamination).

A study done by Drexel University shows that it is best to move meat and poultry directly from package to pan.  The heat from cooking will kill any bacteria that may be present.

One exception would be if there are bone fragments or residue from giblets, as in a roasting chicken. In that case, feel free to rinse if you like.  However, make sure you wipe down your sink afterwards.

HOW TO DEFROST CHICKEN IN THE FRIDGE

This method is the most highly recommended. Chicken typically takes a full day to thaw. Once thawed, the poultry can remain in the refrigerator for a day or two before cooking.

IN COLD WATER

This should take two to three hours.  Submerge your sealed chicken in a pot or bowl full of cold water.  Change out the water every 30 minutes or so. 

Do not use warm or hot water.  It is unhealthy to do so. It can start cooking your chicken, and doesn’t evenly.

IS IT SAFE TO REFREEZE RAW CHICKEN

If you have extra raw chicken that you didn’t use but want to refreeze, you can as long as it was thawed in the fridge.

According to the USDA, “food thawed in the refrigerator is safe to refreeze without cooking.”  However, you do lose quality when refreezing previously defrosted meat. 

Every time you defrost meat, it loses moisture through thawing which also leads to a loss in flavor.  To compensate for this, marinate the meat to add more flavor and juice.”

The USDA also says not to “refreeze any foods left outside the refrigerator longer than 2 hours; 1 hour in temperatures above 90 °F.”

Adjusting for a Convection Oven

An ordinary oven cooks by enveloping food in hot, dry air. This air heats the outside of the food which slowly penetrates to the inside of the food until it’s cooked all the way.   

Now, in a convection oven, the fan produces extra energy. It takes the hot air and blows it around, producing around 25 to 30 percent more energy, depending on the fan’s power. 

Regular ovens also can have hot spots, but the fan in a convection oven will circulate the air to help even out the temperature variances. 

Since convection ovens produce more heat, you need either lowering the temperature or shortening the cooking time to compensate.

When recipes specify temperatures and cooking times, it’s for conventional ovens. Of course, this is unless the recipe is specifically for convection ovens.

The simplest method is to set the oven 25oF to 50oF lower than the recipe says.  

A simple rule to follow is to lower the temperature by 25oF when baking cookies and pies, but 50oF when roasting meats. Some convection ovens offer separate settings for baking and for roasting.

You can also leave the temperature the same and instead shorten the cooking time by 25 percent. For example, if your recipe calls for 60 minutes in the oven, check the food after 45 minutes instead.

However, keep in mind, some convection ovens actually make a heat adjustment for you. That is, if you set a convection oven for 350oF, it might actually set itself to 325oF to compensate. So, check your manual before making adjustments.

HOW TO STORE

Place cooled chicken in an airtight container or wrap in heavy-duty aluminum foil or plastic wrap.  Store in the fridge for up to 4 days.

HOW TO FREEZE

Freeze leftovers within 3-4 days.  Place cooled chicken in an airtight container or resealable freezer bag. 

Freeze for up to 4 months.  After that, it is safe to eat, however, the quality begins to degrade.

Back when I was in college, my signature dish was Pasta Greco, an easy-to-make Greek-inspired pasta dish that I adapted from a local restaurant.  When James and I were in the wee-beginning of our relationship and I was just beginning to realize that I could, in fact, make my own food instead of spending all of my money on takeout, I made Pasta Greco at least 3 times a week.  It was my lifeblood.

Remember how I said I was super sick of Greek food? Yeah, well, I’m over that.

I have improved the flavor of a simple pasta and chicken dish.

You see pasta and chicken is pretty standard fare. Most people would add a creamy white sauce and call it a day. However, I always need to have 37 different flavors per dish in order to satisfy my highly demanding palate.

This is why you see olives + tomatoes + onions + garlic + lemon zest + oregano + spices. Lots of yummy spices.

Right, back to the Greek Pasta with Chicken.

Do you see all that brown stuff stuck to the bottom of my pot? It’s called “fond.” I live for it.

Basically, it’s all the amazing caramelized loveliness that comes from the introduction of food to high heat. It’s the key to adding lots of flavor to your meals. Never let it burn and never waste it.

I like to brown my meat and veggies in an enameled cast iron Dutch oven (I love this reasonably priced one from Lodge Logic). If you try to do this with non-stick pans it just won’t work. Let the meat cook in just a *little* bit of oil until the pieces come un-stuck from the bottom of the pan.

I know it’s kind of scary when they start sticking to the bottom, but just trust me, it’s supposed to happen that way. Once it’s un-stuck, flip it over and let the other side get some color on it.

Then just dump a bunch of other stuff in…

…and gobble it all up.

Easy peasey… lemon…squeezy. Yep, not going to erase that. I said it, so you have to read it.

Basically I am full on ready for summer, and this recipe proves it. I know it’s only mid April, but in my defense, I feel like most everyone (in the US at least) is slowly beginning to experience warmer days that are fit for grilling. Are you? My fingers are crossed that you are, but if not, don’t worry, you can easily roast this chicken too!

Either way, this is the perfect recipe for Monday. It also feels very April appropriate – healthy, colorful, and delicious! All very important things.

With Easter this Sunday, I have Greek food on my mind. Something about Easter always inspires me to create recipes with a Greek influence. I say influence because I know that my recipes may not be traditional, but this is my personal spin on a more traditional recipe.

Last year I even made my first spanakopita

(Greek spinach and feta pie), along with these Greek orzo stuffed peppers

! Both of which are some of my favorite spring and summer recipes. And then there’s these Greek lamb meatballs

, which so many of you have made and seem to have loved. Those meatballs inspired this recipe. Ever since I made those meatballs a year ago, I have been obsessed with the recipe. I make it every chance I get, which honestly is not often enough, as I’m consistently testing new recipes.

Point is, I love the flavors so very much, but more often than not I end up having chicken on hand opposed to ground lamb. Soo, enter the chicken version of these bowls. But made in a very different way, because well, I never seem to make the same recipe twice. Both bowls are SO GOOD, but right now I am all about this Greek chicken.

And it feels kind of fitting for Easter, doesn’t it?

I marinate the chicken in quite possibly one of my favorite marinades. It’s a combination of olive oil, balsamic vinegar, smoked paprika (which is not really “Greek”…but it’s good), fresh oregano, shallots (the secret!), garlic, and lots of lemon (always so much lemon). Now, when I say marinate, I really just mean toss the chicken in this mix and let it sit while you get everything else for the bowls together. I’m not sure about you guys, but I can never plan ahead enough to cook a recipe requiring a long marinate time.

It almost never happens…

So, I do a quick marinade. It works.

While the chicken is “marinating”, make the sizzled mint goddess sauce.

Here’s the truth, I really do not love mint. I find it overpowers most recipe. Unless it’s a cocktail, in which case I think mint is perfect, did you see these mojitos? Mint used in savory dishes however, well it throws me off. Until today. Cooking mint in olive oil really mellows out the flavor and makes the mint much less pungent. I found it to be perfect when stirred into a yogurt based goddess sauce. Which I am now spooning over everything, so addicting. Roasted salmon and potatoes are especially delicious.

Once the sauce is made and the chicken is grilled, it’s assembly time! I used orzo pasta as my grain, but feel free to use quinoa, couscous, or brown rice. Any would be great.

I then layered in some roasted red peppers, avocado, cucumbers, olives, and even some arugula. Lots of veggies… and a good amount of feta cheese too.

Super pretty, on the (very) healthy side, and so very delicious.

The added bonus about this recipe is that it’s so great for weekday meal prep. I recommend making this on a Sunday or Monday night and doubling the recipe. Then simply use the leftovers to make lunch or dinner bowls to enjoy throughout the week!

Cook everything at once…get multiple meals…love that!
