Achieving jacket potato perfection in the oven can take up to 90 minutes, but using the microwave you can do it in less than half the time.

The only downside to cooking jacket potatoes in the microwave is that you won’t get that crisp skin you’d get from long oven baking. But you can either halve them and turn them into loaded potato skins and grill them, or bake the jackets in the oven for a few mins to crisp up.

Microwaving potatoes whole is also a really good way to maximise the flavour of mashed potato. Once they're cooked, leave them to cool then peel away the skin. Mash the flesh with butter, milk and a little grated cheese if you like, then microwave to heat through.

There are plenty of ways to cook a jacket potato – many methods take quite a bit of time – but today, we’re going for the quickest method I know, the microwave jacket potato.

Is it the best way to cook a jacket potato?

In my opinion, no, it’s not. It doesn’t come out all crispy on the outside, like it does when it’s baked in the oven (but you can crisp it up if you really want – more on that later), but sometimes speed is the name of the game in the kitchen, and microwaving a jacket potato certainly ticks that box!

And actually, it does taste pretty good, especially with the right jacket potato toppings. 

How To Cook Jacket Potatoes In The Microwave

As discussed in the introduction above, microwaving a jacket potato is the most convenient method as it is so quick. You can cook more than one baked potato at a time, making it a suitable choice if you are cooking for more than one person.

Pick Your Potato

You’ll usually find loose baked potatoes available at the supermarket so you can pick and choose the best sized ones. You don’t want one that is too large, or it will take ages to cook, or one that is too small, as it won’t fill you up (although you can of course have more than one if need be!)

I tend to use medium sized ones – I weighed one yesterday for the purpose of writing up this recipe and it came in at around 350g, so maybe slightly larger than medium. Either way, 250g – 350g is an ideal weight range I would say, don’t get to hung up on the weight of them.

If you don’t have any baked potatoes, other good varieties for jackets include Maris Piper, King Edward and Vivaldi.

Prepare Your Potato

Give the jacket potato a good wash and scrub in some cold water. I love eating the skin of jacket potatoes so I like to make sure it is as clean as possible. Next, pat it dry with some kitchen roll, and then, with a fork, pierce it several times.

The reason for piercing the skin of a potato is to allow some of the heat and steam that builds up inside to escape. If you don’t pierce the skin before cooking the potato in the microwave, it might go pop. Which isn’t great for a clean microwave!

Cooking Your Potato In The Microwave

Place the potato (or potatoes) on a microwaveable plate and put it in the microwave. Some microwaves will have a setting for jacket potatoes so all you need to do is press the button.

If your microwave doesn’t, you will need to cook them on high power – how long for will depend on the size of your potato – but for a medium sized one it will be around 8-10 minutes. Set it off for 4 minutes, and then when it beeps, open the door and turn the potato over. Set the microwave off for another 4 minutes. 

To check if the potato is cooked through, pierce it with a sharp knife, it should be soft all the way through.

If it isn’t, put it back in the microwave for another 2 minutes and check again. Repeat until it is cooked through.

Crisping Up A Jacket Potato

Cooking a jacket potato in a microwave won’t result in a crispy skin. If this is something you want, you’ll need to transfer the potato to a preheated oven (220C/200C/Gas Mark 7) and cook for 10 to 15 minutes.

To crisp them up even more, before putting them in the oven, brush some oil over the skins and optionally sprinkle some salt over the surface.

Serving The Jacket Potato

When the jacket potato is cooked to your liking, slice it open with a sharp knife. Serve with your choice of jacket potato toppings.

In the past I’ve used plastic gadgets that have a spike to hold a potato in place in the microwave – and I’ve tried pricking the potatoes and wrapping them in kitchen paper.  While these methods did cook the potato, it was still “lacking something” – and the reason these potatoes weren’t all that good was because the cooking process was losing too much moisture!

What I needed to do was retain the moisture of the jacket potato, enabling the centre to be fluffy.  So I tried out my microwave steamer.  This is the way I make all my mashed potato – I steam the potatoes and mash them, but if you use the technique with a jacket potato it produces soft and fluffy jacket spuds!

Best Way to Microwave a Jacket Potato:

Once the potato is cooked and fluffy, top with your favourite toppings.  Grated cheddar cheese and baked beans is a staple choice in my house, two ingredients I am always guaranteed to have in the house!  Before I add the jacket potato toppings, though, I always add a knob of butter to each potato half!

What If You Don’t Have a Microwave Steamer?

You could try this method in a regular steamer if you’ve got one handy.  Or, simply think about a way of retaining the moisture of the potato while it cooks and use a microwave safe container and cover the dish with clingfilm (with a small vent hole to let excess steam out).

The “secret” is in keeping that moisture and the potato together as much as you can!  Steaming the potato in its jacket ensures the inside of the potato remains soft and fluffy.

How to Cook a Baked Potato in an Air Fryer

Baked potatoes are such a comfort food for me. Warming, hearty and so delicious! But the one thing I don’t like is how darn long an oven baked potato takes to cook. Baking potatoes the old way can take 45 minutes or longer!

Well not any more! The method I am going to show you in this recipe is the quickest way to get a perfect baked potato, with a gorgeously crispy skin, and a fork tender fluffy insides that is just begging to be slathered in butter and devoured.

Air frying is my favorite way to cook potatoes, the action of cooking with hot air gets the outsides so amazingly crispy without needing to bake for close to an hour in a conventional oven.

Air fried baked potatoes can still take a long time to cook through if you just use the air fryer. So I found the best approach is to start the cooking process in the microwave, followed by a blast in the air fryer to crisp it up.

Some of my other favorite air fryer potato recipes are air fryer roasted potatoes, air fryer baby potatoes, and air fryer smashed potatoes.

Ingredients Potatoes

The ideal variety of potatoes for baking are those with a high starch content. This gives them the soft fluffy texture that is so perfect in a baked potato.

Any of the following will be great:

Probably the best type of potatoes to choose for baking is a russet potato. Not only are they a wonderfully fluffy potato when cooked, but they also have thick skins which will crisp up nicely in the air fryer.

Oil or butter

Air frying does a good job of crisping up food on its own, but with baked potatoes, if you want that skin really crispy then it is best to add a little oil or butter to help it along.

I give them a quick spray with olive oil when they are in the air fryer basket, to really help the skins crisp up, but that is optional if you are trying to cut fat.

Directions

Step 1: Prep. Scrub potatoes clean. Prick the potato skin all over with a fork or a sharp knife.

Step 2: Microwave potato on High for 5 minutes. When it is finished, the potato should feel soft on the outside. If you have a really large potato and it still hard you will need to adjust the cooking time – turn the potato over and microwave for another 3-4 minutes until it starts to feel soft. For smaller potatoes you could start with 3-4 minutes.

Step 3: Remove potato from microwave (use oven mitts – it will be hot!), and place potato in air fryer basket. Spritz or brush lightly with olive oil or butter.

Step 4: Bake potato in the air fryer at 360°F (180°C) for 15 minutes, or until golden brown on the outside, and tender in the center. Again, if you have extra large potatoes cook time may need to be adjusted. If required, air fry for additional 5 minute intervals until it is done.

Step 5: Cut potato open, add butter, pile high with delicious toppings and enjoy!

Storing and reheating

In the unlikely event that you have any leftover baked potato (this would literally never happen in my house), store it in an air tight container in the refrigerator and use within 3 days.

You can reheat the baked potato in the air fryer, air fry for 3-4 minutes until warmed through. Alternatively, you can reheat them in the microwave, 1-2 minutes on high.

Poppy O’Toole, a Michelin-trained chef turned ‘Potato Queen’ has taken to TikTok to tell us how we should be cooking our potatoes if we want to get the perfect crispy skin. 

Poppy uploaded her video to TikTok account ‘poppycooks’ with the caption ‘A chef’s secrets to the perfect baked potato’. 

She said: “Everyone wants to know how I get the skin so crispy and I wish there was something chefy to it, but there really isn’t.

“All you need to do is poke a fork in, that’s going to let the moisturiser out that lets you get nice, crispy skin.

“Then you’re going to slather it up in vegetable oil, that’s also going to help get that crispiness in there. 

“Add a load of flaky salt, you want to push the boat out for a baked potato.

WE END THE YEAR WITH A SIMPLE POTATO, and that feels somehow appropriate. Because while you’ll find plenty of recipes here designed to impress, just as often, the focus is getting good food on the table quickly, simply. Such as this baked potato.

We love potatoes in all forms here—mashed, pan roasted wedges, potato salads, in soups and stews… But delicious as it is, the elegantly simple baked potato seldom sees action in our kitchen. It’s usually relegated to being a nice find on an old school restaurant menu (the last one I remember was on our road trip this fall, at the Mill Street Grill in Staunton, Virginia).

The problem is time. Baked potatoes take too long to be weeknight friendly for us. By the time you heat the oven and get them going, you’re well on the plus side of an hour or more. Some recipes call for as much as 90 minutes.

For a while, we embraced the plastic-wrapped microwave “baking” potatoes you’ll find in some supermarkets. The plastic wrap is apparently breathable, allowing some of the steam to escape. They’re nice and fast, and almost baked. But not quite. The flesh isn’t as fluffy, and the skin has zero crispness.
