Yes, my friends, I’m back with another pasta/macaroni salad recipe. This type of salad is a favorite of mine, and I realize that most folks have their own way to make one. While I’ve shared a mayonnaise-based macaroni salad recipe with you in the past, this recipe for one made with Miracle Whip is long overdue.

Macaroni Salad with Miracle Whip:

This recipe is inspired by my dad’s. His macaroni salad is a popular dish at his annual Independence Day party, so I think you’re going to enjoy this salad. What I love about the Miracle Whip is the zip and tang taste it gives the macaroni salad.

To get all of the ingredients for this recipe, I headed to my local Giant Eagle. While I was there, I also picked up other grilling and entertaining essentials: hamburger, buns, cute gingham plates, and HEINZ Ketchup.

With everything purchased, I was ready to whip up a delicious and easy meal to celebrate the start of summer.

How to Make Miracle Whip Macaroni Salad:

Now, as much as I love my dad’s macaroni salad, his version is a bit basic for my tastes. To kick his recipe up a couple of notches, I add red peppers, celery, dill relish, and a few seasonings.

Another change I made was with the pasta. I decided to ditch the macaroni and use this fun Ditalini pasta. I thought it would make the dish feel special. Plus, I like how those little rings hold on to lots of dressing.

After cooking and draining the Ditalini, I added hard-boiled eggs, celery, red pepper, and onion. For the dressing, I whisked together the Miracle Whip, yellow mustard, apple cider vinegar, sugar, dill pickle relish, garlic salt, celery seed, and salt and pepper to taste.

Once the dressing was prepared, I added it to the pasta mixture and stirred it to combine everything. I recommend allowing the macaroni salad to sit in the refrigerator for at least an hour before serving. This allows the salad to cool and the flavors to meld.

And what’s a perfect complement to macaroni salad? Hamburgers! So, I pulled out the grill and grilled up a few burgers to create a full meal of deliciousness. Top your burger the way you like it, but don’t forget a squirt of HEINZ Ketchup. It doesn’t get any better than that! I don’t know how it is in your neck of the woods but in this area, HEINZ Ketchup is a must on the table. One of the reasons why is that HEINZ Ketchup is made right here in Pittsburgh. It’s been a favorite of my family for years.

With the table set, burgers grilled, and macaroni salad cooled, I was ready to announce, “Dinner is served.” Before anyone digs in, may I also tell you how much I like the look of red gingham for summer entertaining? These paper plates and napkins are so cute!

Nothing says Fourth of July to me than a good Old Fashion Macaroni Salad or a Potato Salad. Just like my potato saladI learned how to make this macaroni salad from my grandmother.

Our macaroni salad is made with miracle whip for added flavor in the dressing. The salad is loaded with elbow noodles, celery, red and green bell pepper, diced ham, and shredded cheddar cheese.

To me, the best types of recipes are ones that are handed down from family member to family member. This salad reminds me a lot of my grandma and her love of cooking for her family that she had. By far she has been the biggest influence on my cooking.

Macaroni Salad Recipe With Miracle Whip Dressing

I always thought macaroni salad was difficult to make but the more I have grown in my cooking I have found that this recipe has to be one of the simplest to make.

I started by putting a large pot of water on to boil, and like grandma always said: "A watched pot never boils."

So while the water was heating up I started prepping my veggies. I diced celery, onion, and both green and red pepper. I did cheat a little and bought a ham that was already diced, it comes in a nice little package that you will need to drain the water off of.

Take a mild cheddar cheese brick and cut it in half, saving one half for another recipe. The half that I needed for this recipe I cubed into bite-size chunks. While I was prepping all the veggies my water did come to a full boil, adding my elbow noodles into the boiling water.

To help make the noodles not stick I added a little bit of olive oil. When the macaroni was fully cooked I drained the water off of the noodles. Placing the noodles into a large bowl.

Mixing The Macaroni Salad Up

In the large bowl that I had the macaroni noodles in I added all my cut-up veggies, ham, and cubed cheese. Sitting this aside I started to make my dressing.

In a smaller bowl, I added Miracle Whip, a squirt of yellow mustard, a little sugar to sweeten the miracle whip up a bit, and milk. Mixing this up really well to help dissolve the sugar.

Once the dressing is all mixed together I poured it into the bowl with the other ingredients. Folding the dressing into the ingredients until everything had a nice coating of this delicious dressing. 

Placing plastic wrap over my bowl I then placed my Macaroni Salad into the refrigerator to cool down. The longer this sits and cools the better it is but I also like eating it when it's a bit on the warm side.

This might sound a little strange, but one of my very favorite foods is macaroni salad.

Although it’s not necessarily something I make very often in the fall and winter, it’s a staple around here in the spring and summer.

If you’re having a barbecue and I’m invited, odds are I’m bringing the macaroni salad and chocolate chip cookies or a lemon cheesecake, that’s just the way things roll. And let’s be real, who is going to complain about any of those?

Years ago I fell in love with a sweet macaroni salad that I had in Amish Country and I scoured the web and tweaked a recipe until we thought it was perfect and I’m finally sharing it with you!

MY MACARONI SALAD DRESSING RECIPE

I’m going to just go ahead and get this out in the open:

My recipe for macaroni salad dressing uses Miracle Whip instead of mayonnaise.

Depending on where you grew up, you are probably either nodding at your screen right now or your jaw just dropped in shock.

Look, I definitely have recipes that use mayonnaise. My Amish Ham and Pea Salad and my French Onion Chip Dip both come to mind.

But I also grew up in the Midwest and around here, we aren’t afraid to grab a jar of Miracle Whip for certain recipes.

If you are unfamiliar, Miracle Whip uses a bit less oil than mayo and includes some sugar and spices that mayo does not. Because of this, Miracle Whip has a bit of a sweeter flavor than mayonnaise.

If you really don’t want to use Miracle Whip in this recipe, you can go ahead and use mayo instead. Just know that if you’ve ever eaten my Amish Macaroni Salad at a potluck or barbecue before, it won’t taste quite the same!

HOW TO MAKE MACARONI SALAD

Amish Macaroni Salad is a great side dish to take to a potluck or barbecue because you really do need to make it ahead of time for the best flavor. It just tastes better as it sits!

As you might guess, Amish Macaroni Salad starts with cooked and cooled elbow macaroni. While the pasta cools, go ahead and stir together your dressing.

A little Miracle Whip, dill pickle relish, mustard, vinegar and sugar make a creamy and tangy-sweet dressing that appeals to almost everyone’s tastes. I think the combo of flavors in the dressing are why everyone always goes crazy for this salad.

In addition to the pasta and the dressing, my macaroni salad recipe uses hard boiled eggs, chopped sweet onion, celery, and red bell pepper. It’s crunchy, cool, and creamy all at once.

Of course, you can get a little creative on your mix-ins if you like. You could leave out the eggs if you want or add green bell pepper instead of red. It’s really all about what you like!

I just happen to think the ingredients in my version of Amish Macaroni Salad are pretty traditional.

Macaroni Salad

Macaroni Salad is a staple at outdoor barbeques.  I crave it when I head to graduations, summer parties, or any outdoor potluck.  Does that stop me from making this recipe on a random Tuesday?  Nope.  I love this stuff.  This Amish Macaroni Salad recipe is so sweet and tangy.  My mouth is watering just talking about it.

The base for this dish is Miracle Whip, not mayo (sorry).  Mayonnaise is great for many things, and it is typically my go-to for most recipes.  However, we are looking for the sweet tang of miracle whip in this recipe.   They are not interchangeable here.

Macaroni Salad Recipe

If you have the time, make sure to let this Amish Macaroni Salad refrigerate for a while (overnight if you can).  The chilling process allows all of the flavors to marinate together so nicely.  I happen to think this is one of the meals that is better the next day.  There are a few other variations that come up quite a bit.  If you are like me, you look for variety in your food.  I like to switch things up and keep it interesting so I almost always have a bag of tricks up my sleeve for modifying my recipes.

Can I make Amish Macaroni Salad with Ham?

Yes, and you probably should!  Small chunks of sweet ham taste pretty good with this dish.  In fact, when we cook up a crock pot honey ham, we typically chop up the leftovers and use it in this macaroni salad.  You could probably mix in any number of meat variations and this would still be good.  I am thinking oven roasted pulled pork or even cooked tuna fish.

Can I Make This with a Different Type of Noodle?

Yes, but I caution you from using noodles that get too flimsy like spaghetti or linguini noodle.  That could make the dish taste a little mushy.  I would stick with a more structured, solid noodle like an elbow macaroni noodle, a bow-tie, or even a fusilli noodle.  Whatever you decide, cook to the package directions for al dente.  Typically it is about 10-12 minutes.

Shrimp Macaroni salad is one of our favorite salads! It has so much flavor and you can add or take ingredients out according to what your family likes. If they do not like green onions then you can go ahead and leave them out. I add them mostly for color and extra flavor. The original recipe did not call for them.

I made this salad for a get together. We had a friend who decided after 62 years to get baptized. We were so happy for him. He is now 70 years old and his health is giving him a lot of fits! In our church, when we get baptized they immerse you completely into the water. When he went to get into the font, some of the water had drained out and so it was pretty shallow water.

They added some water, but when they went to baptize him, his knees popped up. So they tried again, and his feet popped up. They decided to add more water, and then one nice young man rolled up his pant legs and went into the font to hold our friends legs under the water. We could tell our friend was getting tired; as I told you, his health is not the best.

And guess what, the third time was a charm! It worked. After the baptism, we all had a wonderful get together and the food was outstanding! That is why I took my Shrimp Macaroni salad, because I knew that people would love it, and they did!

What  Ingredients Do I Need For Shrimp Macaroni Salad? How Do I Make Shrimp Macaroni Salad?

What I love about get togethers is that there are so many choices and I didn’t have to make all of them!!! What are some of the things that you like to eat on Father’s Day? Do you like to grill out or do you give dad a break and cook something inside?

My husband and I decided that if we are going to grill again, it will be on a different grill. The one that we use, was free with the purchase of some carpet a few years ago, and it is not the best grill in the world.

Tips and Substitutions For Shrimp Macaroni Salad:

I will just be getting back on Fathers Day, as my father-in-law is getting older and he wanted to go to Alaska. At first all of the siblings were going and now it is down to 2 of the siblings going, instead of 4. I am looking forward to it as I have never been to Alaska.

I have heard that it is a little chilly, and since I prefer warm, I will just have to take a coat and pretend that it is nice and warm. This getting older is not what I ever imagined. Who knew that temperature would mess with you so much. One minute I am warm and the next I am freezing.

I am lucky that I have a favorite jacket and we hang out a lot. All day long, it goes off and on. However, it doesn’t look like one that I should take with me, it does have paint on one of the arms. If you go to Alaska, you don’t want people to think that you are a slob.;) I have tried to buy other jackets, but they are never as comfortable as this old thing.

How Long Can I Store Shrimp Macaroni Salad:

Well, I hope that you get a chance to make this shrimp macaroni salad, it was so cute when my grandson said “oh grandma, I just love shrimp, can I have another helping”? This week is my son’s birthday and so we had a little shrimp macaroni salad left over and I was so happy to enjoy this salad, with some steaks, and some yummy vegetables.
