Make the Sponge Cake

Preheat your oven to 356 degrees F and bring eggs to room temperature for easier beating. Then, separate the egg whites and egg yolks into two small bowls.

Fit a fine mesh strainer over another bowl and pour in the flour. You can also pour into a flour sifter if you have one.

Sift the flour into the bowl by gently hitting your hand against the strainer.

Pour the egg yolks into the bowl of a stand mixer fitted with a whisk attachment. If you don’t have a stand mixer, you can use a large bowl and a hand mixer.

Add vanilla.

Add a half cup of sugar.

Set your electric mixer to high speed.

Beat egg yolks on high speed. You’ll see the yolks start to lighten in color.

Continue blending until uniform, pale yellow and doubled in volume.

The yolk mixture should be smooth, but not runny.

Pour the yolk mixture into a separate bowl.

Wash and dry the stand mixing bowl and whisk attachment, add the egg whites to the bowl and beat on high speed. Whipped egg whites are the key ingredient that make your cake light and spongy.

Slowly add half of the remaining sugar as you beat the egg whites.

Continue beating until soft peaks form.

Pour in the remaining sugar.

Beat on high until stiff peaks form.

Your egg white mixture should be light and fluffy and stick to the whisk attachment or beaters when you scoop it from the bowl.

Now you’re ready to finish the cake batter. You should have three bowls: one with the flour, one with the egg white mixture, and the other with the egg yolk mixture.

Using the egg yolk mixture as your main mixing bowl, you’ll add flour and then egg white mixture little by little, alternating as you fold into the batter. First, add two tablespoons of flour to the egg yolk mixture.

Fold flour into the yolk mixture.

Add a scoop of the egg white mixture to your main mixing bowl.

Gently fold into the flour mixture.

Add more flour.

Fold into the cake batter.

Add more egg white mixture.

Gently fold in the egg white.

Continue adding flour and egg white—alternating and folding in after each—until you’ve added everything to the main bowl. The mixture will become lighter in color as you add the ingredients.

The final cake batter should be smooth, thick and fluffy.

Grease and flour an 8 ½ or 9 inch pan. We use a 2.5″-high pan in this recipe. Use a pastry brush to spread the butter in the round cake pan.

Place a cookie sheet under your cake pan. Then, pour the tres leches cake mix into the prepared pan.

Use the spatula to scrape the sides of the bowl to get every last bit of that sweet goodness into your baking pan.

Smooth the top of your cake evenly with the spatula.

Your tres leches cake batter is now ready for the oven!

Place your cake on the center rack of the oven and bake at 356 degrees F for 40-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven, let sit five minutes, and then turn the cake out onto a wire rack to cool.

Line the cooled cake pan with plastic wrap. You’re going to place the cake back in the pan and then cover, so be sure you leave enough wrap on the sides to do so.

Carefully place your cake bottom up into the lined baking pan.

Make the Milk Mixture

Gather your condensed milk, evaporated milk and light cream (or table cream) in separate bowls, as well as a large bowl, measuring cup and wire whisk.

Once the cake has rested, make the whipped topping. Start by gathering your ingredients: heavy whipping cream made from whole milk, clear vanilla extract, sugar and vanilla pudding mix.

Fit your stand mixer with the whisk attachment. Then add the whipping cream to the mixing bowl.

Pour in the sugar.

Add the vanilla extract. The frosting uses a clear vanilla extract to keep it from changing color.

Finally, pour in the vanilla pudding mix. Unlike meringue which holds its shape, whipped cream can quickly deflate. The pudding creates a stabilized whipped cream so you won’t have to worry about it melting all over your cake in the refrigerator.

Turn your electric mixer to medium speed.

Whip the cream until soft peaks form. Take care not to over beat. If you do so, the cream could separate.

The cream should be light and fluffy.

Decorating Tres Leches Cake with Strawberries

Remove your tres leches cake from the refrigerator and prepare a serving dish or cake pedestal.

Turn out your cake into the center of the dish.

Carefully separate the pan from the cake.

Slowly unwrap the plastic wrap by folding the wrap over itself.

Remove the plastic wrap completely from the cake.

Begin frosting the cake with the whipped topping using a frosting spatula. Start with the sides of the cake.

Continue frosting around the cake.

Carefully frost the top of the cake, being careful not to let the spatula touch the cake directly. You don’t want the cake crumbs to show up on your beautifully frosted cake.

Be sure to cover every last bit of your cake with the whipped cream.

Now the fun part. Decorating! Gather your garnishes. You can use berries, maraschino cherries or any kind of fruit.

If you’re using strawberries, slice them in half and make a ring around the center of the cake, pressing the tops of the berries gently into the cake, cut side up. Fill in the ring with more strawberries, then sprinkle with raspberries and blueberries.

Layered Tres Leches Cake is everything you love about the classic tres leches cake but it’s stunning as a layered cake. This is one of my favorite cakes. A.ma.zing. It’s super moist, not too sweet and incredibly satisfying. We usually make it as a single layer sheet cake but I’ve had so many questions about turning this into a layered tres leches cake that I couldn’t resist.

It worked out beautifully and would make an excellent special occasion cake. I took this cake to my sisters house and brought the cake platter home clean :). Kids seem to really love this cake too. I hope you enjoy it!

Ingredients for Layered Tres Leches Cake:

1 cup all-purpose flour *measured correctly
1 and 1/2 tsp baking powder
1/4 tsp salt
5 whole large eggs, separated
1 cup sugar, divided into 3/4 and 1/4 cups
1 tsp vanilla extract
1/3 cup 2% or whole milk

Syrup:

8 oz (about 2/3 of a 12 oz can) evaporated milk
9 oz (about 2/3 of a 14 oz can) sweetened condensed milk
1/4 cup heavy whipping cream

Frosting & Decor:

2 1/2 cups heavy whipping cream
2 1/2 tbsp granulated sugar
1 lb fresh strawberries

How to Make Tres Leches Cake Layers:

Preheat Oven to 350˚F. Butter and flour two 9″ round cake pans

1. Set up 3 mixing bowls: 1 medium and 2 large bowls. In the medium bowl, whisk together 1 cup flour, 1 1/2 tsp baking powder and 1/4 tsp salt. Set aside.

2. Separate eggs into the other two large bowls. Egg yolks into one and egg whites into the other. Beat egg yolks with 3/4 cup sugar on high speed until yolks are pale yellow (approx 2 min). Stir in 1/3 cup milk and 1 tsp vanilla extract.

3. Pour flour mixture over your egg yolk mixture and beat on low speed with the mixer until just combined.

4. With a clean, dry whisk, beat egg whites on high speed until soft peaks form (1 minute). With the mixer on, pour in remaining 1/4 cup sugar and beat on high speed until egg whites are stiff but not dry (1 minute).

5. Gently fold egg whites into the yolk/flour mixture until just combined. Divide evenly between two cake pans and bake at 350˚F for 30 minutes or until a toothpick comes out clean. Turn cake onto a wire rack and allow to cool to room temp.

6. When cakes have cooled, trim the edges with a serrated knife to even out the edges.

Prep the 3-milk syrup:

1. In a large measuring cup with a pouring lip, stir together the evaporated milk, sweetened condensed milk and 1/4 cup heavy whipping cream.

Assembling the Layered Tres Leches Cake:

1. Place one of the layers, flat side down, on a cake platter. Using a fork, poke the top all around, going all the way to the edges and poke through the depth of the cake. Use a spoon to pour on half of the 3-milk syrup. Let cake stand and absorb the syrup while you beat the frosting (see instructions below).

2 Generously frost the top of your first layer, then arrange sliced strawberries over the top of your frosting.

3. Your next cake layer will be placed with the flat side up; so before putting it over the strawberries, use a fork to poke the flat surface all around, going to the edges. Now place your poked cake top over the strawberries.

4. Spoon the remaining half of the 3-milk syrup evenly over your top layer. Let cake stand 10-15 minutes for the syrup to soak in for easier frosting.

5. Frost the top and sides of the cake and smooth out frosting with a cake spatula. I decorated the top with halved strawberries, placed at an angle around the top border of the cake. It was simple and just perfect.

How to Make the Frosting

1. For best results with whipping cream, freeze your mixing bowl and egg beaters or whisk attachment for 15 minutes. Make sure your whipping cream is very cold.
2. Beat 2 1/2 cups heavy whipping cream and 2 1/2 Tbsp sugar on high speed until thick and spreadable (about 1 1/2 to 2 minutes). Don’t overbeat or it will turn buttery. Refrigerate Tres Leches cake until ready to use.

Cake Ingredients

Important: The ingredients list with the exact measurements can be found below, in the recipe card. Please take in mind that while I posted the measurements also in US cups, if you want better results, I strongly suggest to use a kitchen scale instead.

FLOUR – All purpose flour is the best flour for cakes. If you’d like to use cake flour just remember to omit the baking powder listed below.

SUGAR – As you probably noticed, there’s a lot of sugar involved, because, well…is a cake. Sugar helps to “airy” this cake, so no substitutes here.

MILK – Using whole milk here, 80 ml (about ⅓ cup), make sure it at room temperature when using it.

OIL – I like to use oil in this recipe instead of the butter (or sometimes nothing) other recipes suggest. A neutral flavoured oil works wonder, like canola or sunflower oil.

EGGS – Eggs are beaten separately to add fluffiness to the cake, make sure when you’re incorporating the egg whites to not overmix or the cake won’t be as fluffy as it’s suppose to be.

BAKING POWDER – 2 teaspoons is all you need. If you rather use cake flour, omit the baking powder or use only 1/4 tsp.

LIME – Lime adds that extra mexican flavour and -in my opinion- helps a lot to hide the egg flavour (which I personally hate in all sponge cakes). If you don’t have limes, use lemons instead, just add more zest to the mix.

For the milk mixture

You can use a mixture of 3 types or milk. The most traditional is whole milk, evaporated milk and condensed milk. But sometimes there’s also other milks involved such as coconut (for extra flavour) or even cream.

I personally don’t like condensed milk so much, specially since this cake has a lot of sugar already so most of the time I swap condensed milk for cream or just skip it at all and add more evaporated milk. The decision is up to you.

Tres Leches Cake Recipe (step by step)

Preheat oven to 350°F/175°C and butter a 9×13″ (22×33 cm) baking pan.

Sift the flour and baking powder in a small bowl. Separate egg yolks and whites in two different mixing bowls. Set aside.

Add the sugar to the bowl with egg yolks and beat with electric beaters at high until you achieve a very fluffy and yellow pale mixture.

Add lime zest and vanilla extract, beat to incorporate. Add flour and beat on low speed until lightly combined.

Pour in milk, oil and lime juice. Slowly beat at low speed until there are no lumps in the batter. Set aside.

Clean the beaters, then add salt to the whites eggs bowl and beat for 2 minutes at high speed or until peaks form.

Add egg whites to the bowl with the batter and gently fold in with an spatula just until everything is perfectly combined.

Pour the cake mixture into the prepared pan and with the spatula spread to even out the surface. Bake for 40-45 minutes or until a toothpick comes out clean.

Place the cake on a cooling rack and let it cool completely.

Make the tres leches mixture and soak the cake.

In a large measuring cup or bowl pour the evaporated milk, condensed milk and milk. Mix throughly to combine.

Pierce the surface of the cake with a fork. Then pour the milk mixture all over, making sure to pour it also near the edges. Cover with cling film and chill preferably overnight or at least 6 hours.

Make the topping

Pour the heavy cream into a mixing bowl and beat on high speed for about 2 minutes or until peaks forms. Spread the whipped cream over the cake.

Decorate

Sprinkle the tres leches cake with a little bit of cinnamon and decorate with strawberries. You can also use canned peaches or pineapple for decorating or any other berries you prefer.

GOT MILK? Got milk? Got milk? You'll need three kinds to make the classic Latin American tres leches cake.

For those of you whose Spanish is limited to Taco Bell menus and Ricky Martin ditties, tres leches refers to the three milks -- usually whole, condensed and evaporated -- that soak this egg-and-butter-rich sponge cake to a gooey, custardy consistency, after which it's covered with tangy meringue or sweetened whipped cream.

Tres leches, simple and decadent, is traditionally a special-occasion cake. And there's no better time to plan or whip up a tres leches cake than today. Cinco de Mayo is a Mexican holiday, which, contrary to frat-boy belief, celebrates the Mexican army's victory over French invaders at the Battle of Puebla on May 5, 1862 -- not the introduction of Budweiser into Latin America.

Tres leches cake is so popular throughout Latin America that virtually every country south of the Rio Grande and north of the Antarctic Circle claims it as its own creation.

You'll find tres leches cake at Mexican restaurants, Neuvo Latino restaurants, Brazilian barbecue houses, Nicaraguan bakeries and even an Italian-American bakery in the heart of San Francisco's Latino-dominated Mission District. Virtually every place you find Latino populations -- from the Southwest to Chicago to New York -- you'll find tres leches cake. Why, in the Bay Area, you can even buy tres leches cake at Costco and Safeway.

Milky mystery

Like the mystery of the Incas, no one can say for sure where or when tres leches cake was created. One popular theory traces the cake's origin to a recipe on the back of canned milk sold in Central America. Another credits an exiled Cuban homemaker with creating the cake in Miami. My favorite version of the tres leches creation myth credits little old ladies of southern Mexican Indian tribes, who soaked their cakes with a syrupy goat-milk-and-raw-sugar brew called cajeta.

Tres leches is a perfect warm-weather cake that pairs beautifully with tropical fruit fillings and garnishes such as papaya and mango. It's also best served cold, as chilling gives the milk-soaked layers integrity.

Tres leches is not a fancy cake. It is split into two or three layers, with the three-milk mixture poured over each layer. Once the soaked layers have firmed up in the refrigerator, the layers are spread with fruit puree or jam and assembled before being covered with lime-infused meringue or whipped cream that's been sweetened with sugar or tempered with sour cream.

It's also a versatile cake. It can be baked in round or rectangular pans. It can be served by the slice or in squares, on a dish or in a margarita glass with fruit garnish and a little extra three-milk mixture. Tom Schnetz, chef-owner of Restaurante Dona Tomas on Telegraph Avenue in Oakland, learned to make tres leches cake from his mother, based on a recipe handed down through family in the northwestern Mexican state of Sonora.

Schnetz first makes a 10-inch round genoise sponge. He splits the cake into two layers and soaks each layer in a mixture of evaporated milk, half and half and cajeta, which he makes with goat milk and raw Mexican sugar called piloncillo. Schnetz fills his tres leches cake with macerated strawberries and covers the cake with a thin layer of whipped cream sweetened with sugar and spiked with Mexican vanilla. Sliced strawberries ring the top of the cake.

Seasonal specialties

"Growing up, we used to have it for birthdays," Schnetz says. "My birthday is in September, so I'd have it with blackberries. Sometimes my mom would whip berries into the cream."

It's the cake's adaptability to so many variations that makes it such a popular cake across such a wide region with so many different styles of cooking and regional ingredients. As long as you use three milks -- cow milk, goat milk and usually either or both condensed and evaporated milk -- it's still a tres leches cake. For a lighter, or lactose-free version, you can even use coconut, soy or almond milk.

"People hear 'three milks,' and they tend to think 'cholesterol,'" says Ed Bonoso, the pastry chef at Zarela, a Mexican restaurant in New York City, who uses heavy cream, sweetened condensed milk and evaporated milk, plus a splash of amaretto, kahlua or rompope, a Mexican eggnog that's heavy on the rum. Bonoso makes his sponge cake in full sheets, using about 11/2 quarts liquid to soak the cake. He serves biscuit-size portions with a dollop of whipped cream or fruit sauce.

"It's a lovely cake that's just wonderful by itself because it's so moist," Bonoso says.

1. Split completely cooled cake in two layers.

2. With a fork or sharp knife, poke several holes in cake layer. Pour about one-third of the milk mixture over cake layer. The cake will let you know when it's had enough -- it will refuse to soak up any more. Refrigerate until firm.

3. Spread soaked layer with your filling of choice. Place next layer on top and press down. Poke with holes. Pour more of the milk mixture on cake layer (you may not need all the milk mixture. Any remaining milk mixture can be poured over individual servings.) Refrigerate until firm.

5. Decorate top and sides of cake with whipped cream or meringue with an icing spatula or pastry bag. Chill cake until ready to serve. To brown the meringue, flame with a blow torch or place in a super-hot oven just until points caramelize.

Makes 1 10-inch cake

21/2 cups all-purpose flour

11/2 teaspoons baking powder

1/4 teaspoon salt

1 cup milk, room temperature

Finely grated zest of 1 lime

1 teaspoon vanilla extract

3/4 cup butter, at room temperature

11/2 cups sugar

9 eggs, separated, at room temperature

1/3 teaspoon cream of tartar

1. Preheat oven to 325 degrees. Grease a 10-inch springform pan. Sift together flour, baking powder and salt and set aside.

2. Combine milk, lime zest and vanilla and set aside.

3. Cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beat for 3 minutes with mixer at high speed. With spatula, alternately fold in dry and wet ingredients, in four separate increments.

4. In a separate mixer bowl, whip egg whites at medium-high speed. When foamy, add cream of tartar. Increase speed and whip until stiff but not dry.

5. Gently fold in one-quarter of the whipped egg whites into batter. Fold in remainder, being careful not to deflate the air in the mixtures.

6. Deposit batter into pan.

7. Bake approximately 50 minutes, or until the top is golden and a toothpick inserted into the center of the cake comes out clean. Cool cake completely.

Per slice (based on 16): 270 calories, 6 g protein, 35 g carbohydrates, 12 g fat, 145 mg cholesterol, 125 mg sodium, trace fiber. Calories from fat: 41 percent.

1 12-ounce can evaporated milk

1 14-ounce can sweetened condensed milk

1 cup heavy cream or milk or Cajeta (see recipe)

1. In a heavy-bottomed sauce pan, combine water, sugar and lime juice. Bring to a boil over medium-high heat.

2. When syrup begins to boil, begin whipping egg whites at medium-high speed. When foamy, add cream of tartar and salt; continue whipping at high speed until soft peaks form.

3. When syrup registers 238 degrees on a candy thermometer (soft ball stage), reduce mixer speed and pour syrup into whipped egg whites in a slow, steady stream, aiming for the sides of the mixer bowl and away from the whip.

4. Turn mixer up to medium-high speed and whip until the meringue is stiff, about 6 minutes.

This is different from the thick caramel mixture commonly sold in jars as dulce de leche. This cajeta should be golden brown and pourable, with the consistency of a thin chocolate sauce that will soak into the cake. Goat milk has a distinctive musky flavor and can be found at Trader Joe's and other markets. Piloncillo is a raw Mexican sugar available in cone form in most supermarkets.

11/2 cups goat milk

1/2 cup sugar, piloncillo if possible

11/2 teaspoons honey

1/2 teaspoon baking soda

1 tablespoon water

1. Combine goat milk, sugar and honey in a heavy-bottomed sauce pan. Bring to a simmer, stirring.

2. Dissolve baking soda in 1 tablespoon water. Remove the sauce pan from the heat and add baking soda mixture, stirring to keep mixture from bubbling.

3. Return pan to heat and reduce flame so the mixture simmers steadily. Stir regularly as the mixture reduces by half, approximately 30 minutes.

Tres Leches was my first poke cake and still my go to after all these years. This cake is sure to please a crowd with its sweet, moist and creamy texture created by drizzling three different types of milk onto the cake after it’s been baked. This is where the pastel de tres leches got its name, the “cake of three milks!”

A traditional tres leches cake has to be one of my all time favorite desserts. I have loved it ever since I was little. Every time my family and I would go out to dinner, I usually asked for a traditional tres leches cake for dessert. Sometimes I had to share, sometimes I didn't.

When I moved to the U.S., people at first looked confused when I talked about this cake. For many of my friends "baking" a cake involved a box! This is an abomination if you come from a culture that values food made from scratch. Things have definitely changed for the better as more and more people are learning to cook and bake from scratch again.  

Next, you want to poke some holes in it with a skewer when the cake has cooled. Don't poke it while it is hot or poke holes too close together. By the way, my husband pointed out that recently there is a rising popularity in what are known as "poke cakes" where a cake is poked full of holes, and then drenched in some glorious liquid. Well, it all started with tres leches cake - the original poke cake!

When my kids were growing up and wanted to take something special into school, I was quickly recruited to bake one of these. What I love the most about this dessert, is that you can adapt it to any occasion. I think for the upcoming holidays, it would be a lot of fun to give it a festive look.  Fresh fruit, like strawberries or mango, are my favorite tres leches cake decorations. A sprinkle of cinnamon can complement the cake nicely as well. This made from scratch recipe can be divided and made into tres leches cupcakes as well!

After you've poked all the holes in the cooled cake, it's time to pour the sweet milky elixir all over your cake.  The milk sinks right into the light, airy cake.  The absence of oil and butter creates the perfect “spongey” cake that doesn’t fall apart with the addition of all the sweet milk soaking in.  (You won’t miss the additional calories of the oil and butter in this cake either!)

When making a traditional, made from scratch tres leches cake it's really important that you use good quality milks, all three of them. Having said this I will be using Carnation Evaporated Milk, as one of the milks in the tres leches mixture. The other two milk types are: heavy cream, and La Lechera sweetened condensed milk. I bought all of these products at my local Walmart which is only five minutes from my house.

Nestle products are great! They are very affordable, and high quality too. I would encourage everyone to purchase any of their delicious products for your recipe needs.  Years ago, the milk industry wanted to promote their condensed milk, and Nestle added a pastel de tres leches recipe onto their condensed milk label in the early to mid-1900’s. In part, this helped drive popularity of the tres leches cake across Latin America.

Origins of tres Leches

As far as the origins of this delicious cake are concerned, no one is really sure. However, some food historians think that a version of this cake had its origins in Medieval Europe. Cakes soaked in a liquid, like rum cakes and trifles, were popular during these times. Cultures crossed paths throughout the years, and some say the tres leches origin is Nicaragua, and some say Mexico, Guatemala, or Puerto Rico. You can find pastel de tres leches and tres leches cupcakes throughout the U.S. in most Hispanic bakeries. I’ve even been seeing them at my local food market as they continue to gain popularity.

When the liquid has soaked in, it is time to frost the cake with nothing more than whipping cream. Again, feel free to decorate your tres leches before serving with fresh fruit, or maybe even a maraschino cherry!

It is important to keep this dessert refrigerated before serving, and quickly stored after as there is quite a bit of dairy in it.  I recommend no more than 3-4 days covered and refrigerated.  If you are making this cake ahead of time for an occasion, it freezes quite well.  Let thaw in the refrigerator before serving. 

Traditional tres leches cake is popular throughout Latin America. It is also a favorite in the Caribbean. My Puerto Rican friend, loves it.

In the whole scheme of things, this cake is not really that old. Condensed milk came into existence in the 1850s, and evaporated milk in the 1870s. This cake recipe probably came about as a way to moisten a sponge base, just my guess.  Actually this cake kind of reminds me of a similar dessert: Jamaican Toto.
