Silky smooth Nutella Cheesecake. You won’t be able to stop eating slice after slice!

Seeing as you all share the same love for cheesecake, I knew I had to plan to share even more cheesecakes on the blog. I’m really proud of my No-Bake Ferrero Rocher Cheesecake. It was my first recipe to go to print and featured in one of my favourite magazines.

But this time I wanted to add even more Nutella goodness to the mix. I based this latest cheesecake creation on my Terry’s Chocolate Orange Cheesecake, of which I have been blown away by the positive response that recipe has gotten since I posted it.

For this Nutella version, I just swapped the melted chocolate orange for Nutella. This Nutella cheesecake is thick, creamy and has a beautiful mousse texture. I’ve never been a fan of baked cheesecakes, as they can be very heavy. No-bake cheesecakes certainly aren’t lighter in calories, but they are definitely lighter and fluffier in texture.

The hardest part of this recipe is waiting for the cheesecake to set. The cheesecake is delicious served on its on own, but I like to sprinkle the top with chopped toasted hazelnuts for extra decadence. You could decorate it with Ferrero Rocher, but to be honest, the cheesecake is pretty rich already without the need for any extra chocolate. 🙂

This recipe makes a massive cheesecake, so if you want you could half the recipe and make a smaller cheesecake, or even make cute little individual cheesecakes. I find this recipe perfect for entertaining because it can be made ahead of time, it serves lots of people and certainly has the wow factor!

I always have Nutella in my kitchen store cupboard. I’m literally addicted to it! I’m sure I’m not the only person who eats it by the spoonful straight from the jar? 😉

(Serves 10-12)

Ingredients:

Biscuit Base:

300g digestives or hobnobs – I used chocolate hobnobs

140g unsalted butter

Cheesecake Filling:

500g full-fat cream cheese, softened at room temperature

300g Nutella or other chocolate hazelnut spread

300ml double cream (heavy cream), chilled

45g icing sugar

We’ve had a few days of cool weather and it felt like autumn! But it’s supposed to get hot again, so I’m sharing another no bake recipe today because we need sweets and we don’t need the oven on. Today’s recipe came about by accident.

When I made the Ooey Gooey S’mores Bars, I made too much of the Nutella base layer and wasn’t sure what to do with it. Since that crust is very similar to the recipes for no bake peanut butter cup bars, I thought, why not make No Bake Nutella Bars instead. But, before we get started on the recipe, I want to talk about bats!

To make the No Bake Nutella Bars, mix together graham cracker crumbs, melted butter, powdered sugar and Nutella.

Press the dough into a foil lined, greased eight inch square pan.

Melt semi-sweet chocolate chips in the microwave and stir in Nutella. Spread the chocolate frosting over the bottom layer.

Cover the bars and cool them in the refrigerator. Cut into bars before serving. This No Bake Nutella Bars recipe is so easy to make. The texture of these bars is similar to peanut butter cups and everyone loved them!

It’s just… chocolate + hazelnuts = irresistible goodness. So guess what we’re making today? No Bake Nutella Bars! With just 4 simple ingredients. Today’s recipe is easy to make, even easier to eat (you know what it’s all about), and simply delicious.

Ready to celebrate the flavors of Nutella nomminess today? Let’s make nutella chocolate bars!

How to Make Nutella Bars Line the Pan

First things first, line an 8-inch square baking pan with parchment paper or wax paper. Then, go make some space in the freezer for this pan.

Make the Hazelnut Butter Layer

Onto the hazelnut butter layer! In a medium-sized mixing bowl, combine hazelnut butter (here’s where I buy mine), maple syrup and coconut flour. Use a rubber spatula to stir and fold all ingredients together until well mixed and thickened.

Congrats, you’ve made a hazelnut butter dough ball! 😉 Go ahead and drop this ball into the center of the prepared baking pan. Press and smooth it into an even layer to create your hazelnut butter layer.

Make the Nutella Topping

Now, onto the nutella chocolate topping. Melt the chocolate chips and remaining hazelnut butter together. Stir until smooth—you’ve just made your Nutella chocolate topping! 

Make the Nutella Bars

Pour your glorious melty nutella chocolate topping over the hazelnut butter layer you just made. Smooth the chocolate into a smooth, thick layer.

Freeze, Slice & Enjoy

Freeze the pan of nutella bars for about 55 minutes, or until it’s firm. Slice and enjoy the best no bake nutella bars!

How to Store Your Nutella Bars Day 1

I love this nutella bars recipe because it’s shelf-stable! This means that you can keep these bars at room temperature. However, for Day 1 only, you’ll need to keep them in the refrigerator so the chocolate hazelnut topping can set.

Day 2 and Onward

From day 2 and onward, you can keep these no bake bars at room temperature or in the refrigerator for 1-2 weeks.

To Freeze

Store your nutella bars in a freezer-friendly container in the freezer. Keep for 1-2 months. Just make sure to thaw your bars for about 10-20 minutes before enjoying.

DIRECTIONS

Nutella mousse:

1. Place Nutella in microwave safe bowl. Microwave for a few seconds until soften. Let cool.

2. beat the heavy cream until it forms stiff peaks. Gently fold in the melted Nutella until no streaks remain.

3. Transfer the mousse to a piping bag. If the mousse too runny, refrigerate for 1 hour in the piping bag. Pipe into serving dishes and refrigerate for at least 4 hours.

4. Top with chocolate and nuts.

No Bake Nutella Cheesecake:

1. In a food processor, process biscuits until crumbs are formed. Add melted butter and process again until combined. press into bottom of 8-inch (20-21 cm) springform pan. Refrigerate while making the filling.

2. In a large mixing bowl beat cream cheese and powdered sugar. Beat until smooth and creamy. Add Nutella, cocoa powder and vanilla extract. beat again until smooth and creamy.

3. Pour the cheesecake mixture into the springform pan. Refrigerate for at least 6 hours or overnight. You can also freeze the cake.

4. Prepare the ganache: place the Nutella in a large bowl and set aside. in a small saucepan bring heavy cream to a simmer, remove from heat and pour over the Nutella. Let stand 1-2 minutes and stir until ganache is smooth.

5. Let cool slightly and pour over the cheesecake. You can pour straight into the springform pan or open it and then pour the ganache.

6. Freeze for two hours before serving.

Nutella Truffles:

1. Chop the chocolate into small chunks and place in a large bowl. Set aside.

2. Place heavy cream and butter in a small saucepan. Heat over low-medium heat, melt the butter and bring to a simmer.

3. Pour the cream over the chocolate, let sit for 2 minutes, then stir until smooth. Add the Nutella and stir again until incorporated and smooth. Cover with plastic wrap and refrigerate for 2 hours, until firm and scoop-able.

4. Use a tablespoon or ice cream scoop to scoop and portion chocolate, roll with greased hands to form a ball. Roll in cocoa powder, chocolate sprinkles or any other topping.

5. Keep in the fridge until ready to serve.

• If the chocolate doesn’t melt after adding the hot cream, try to microwave for 15-20 seconds, until it melts.

Nutella Stuffed Chocolate Chip Cookies:

1. Line a parchment paper on a baking tray or on a large plate and drop about 1-2 teaspoons of Nutella. Freeze for 1 hour. Meanwhile make the cookie dough.

2. place the butter in a small saucepan and heat over medium-low heat until completely melted and browned, stirring frequently. About 5 minutes. Be careful, don’t burn the butter. Transfer the butter into a large bowl and let cool to room temperature.

3. In a small bowl stir flour, baking soda and salt. Set aside.

4. To the bowl with brown butter and both sugars and beat until light and fluffy. Add eggs, one at the time and vanilla, beat just until combined, about 15-20 seconds. Gradually add flour mixture, stir just until combined. Fold in the chocolate chips.

5. Chill the dough in the refrigerator for 30 minutes.

6. Preheat oven to 360F (180C).

7. Scoop out about 1-2 tablespoons of cookie dough and flatten it, place 1 piece of frozen Nutella in the center, roll into a ball.

8. Place rolled balls on a parchment paper with about 2 inches apart.

9. Bake for 10 minutes or until lightly browned on the sides. Cool on baking sheets for a 10 minutes before transferring to wire racks to cool completely.

Nutella No Bake Bars – turn a classic no bake cookies into a quick and easy bar with lots of creamy Nutella.  

You may recognize these Nutella no bake bars.  They have been on the blog for 4 years now.  I am just giving them a little face lift.  They are relatively popular despite the photos that were with them.  I am hoping now, you will want to make them even more!  They are even easier than regular no bake cookies, and they are perfect to have in your freezer for when a craving strikes!

It is no secret that I like Nutella.  I made my own, turned it into cupcakes, made ice cream…I love the stuff!  I have been thinking about making no bake cookies with Nutella for awhile.  But then I ran out of the homemade stuff.  Now that school is starting though, I need to have cookies in the freezer for my son to take in his lunch.  Well, I don’t have to, but I like to put a little treat in his lunch for him.  No bake cookies are one of his favorite, the freeze well, and come together in about 10 minutes.  So they are a win all around in my book.  And if there could be anything easier than a no bake cookie, it would be a no bake bar.

To make these Nutella no bake bars I just took my recipe for No Bake Cookies, and substituted some Nutella. I was lazy, and in a hurry, so I just poured the batter into a pan to make bars.  You could make them like normal cookies as well.  The bars were just so easy!  I took them on a picnic we had with friends the other day and they were a huge hit.  From age 2 up to the adults they were loved! This is not a cupcake for the faint of heart. Between the deep, rich, decadent chocolate cupcake, the Nutella filling, AND the Nutella frosting, it packs quite a punch.

This cupcake is so moist, you won’t need the Nutella filling, but it definitely doesn’t hurt!

When it comes to making frosting, you’ll want a flavorful, smooth recipe that will pipe and holds its shape to boot. I know it’s a lot to ask.

Sure, you won’t get quite the same texture, but the baked kind will be moist, sweet, and just as cute. 

Not only does this recipe use Nutella in the donut batter, but it’s also covered in a sweet Nutella glaze that will set and crack just like they do at Dunkin.

20. No-Bake Nutella Cheesecake

My issue with no-bake cheesecakes is that they don’t hold their shape as well as the denser, baked cheesecakes.

I was so pleased to see this one slice like a dream.

I didn’t have Oreos when I tried the recipe, so I used a toasted hazelnut crust, which enhanced the nutty Nutella so well.

You can cut back on the nuts by using shortbread, too.

Also, the Nutella ganache is insanely good! Seriously, I’m going to use that on everything from now on!

21. Grilled Banana Nutella Sandwich

Confession: I’m eating one of these as I type. Ok, not as I type, but it’s on a plate by the keyboard.

I like seeded bread for my sandwiches, but a sliced brioche would be amazing with this.

It might be tough, but don’t go bananas (see what I did there?) with the Nutella. It will melt and seep out before the bread toasts. 

Top tip: slice your bananas lengthwise. It will keep the smaller slices from falling out.

22. Nutella Croissants

So, these aren’t exactly croissants. They’re made using crescent rolls, which have no lamination but will still leave you with a pillowy warm Nutella dessert. 

I found that these came out much better when I made them into Nutella empanadas.

When I rolled the crescent rolls up, it was too much dough for me. 

No matter how you roll it up, the buttery crescent rolls are a fantastic pairing with the nutty filling.

Your inner teen will love you for this. If I knew back then that these were so easy to make, I would’ve had them on hand constantly!

All you’ll need is some pie dough and Nutella. I made half a with the white chocolate coating and half with that Nutella glaze from the baked donuts. Both were incredible!

I have talked about my Nutella obsession many times before.  Nutella has a very soft spot in my heart…soft and gooey.

And unfortunately for me…I have found an ideal recipe for my Nutella.  Also, unfortunately for me, this recipe is a no bake and it only takes minutes to prepare.  Say goodbye to those perfect abs I have so been pining for.

I first saw a version of this recipe in one of those Instagram one minute videos.  But naturally, I was skeptical.  It all seemed to be too simple.  And frankly, I did not think the science of it would work.

But ummmm, guys…I was wrong.   I was so horribly wrong.

It worked beautifully.

Magically.

And most importantly deliciously.

How simple was this?  5 ingredients simple.

The chocolate crust was buttery and crunchy and simply made from a mix of Oreos and butter.  And the filling was made from dark chocolate, Nutella and heavy whipping cream, aka Nutella ganache.

Ganache is the heavenly combination of chocolate and heavy cream that makes everything from chocolate glazes on cakes, truffles and decadent fillings, like this one.  Heavy cream is warmed up to a simmer and then poured over chocolate.  Voila…that is the secret behind the ganache technique.  No magic here.  Just a super simple technique.

Ganache is extremely versatile and has different uses based on the only 2 ingredients in it: Chocolate and heavy whipping cream.

I played around with the technique and recipe in this particular recipe a few times.  And it turned out, that the Nutella created an even more creamy texture for the ganache filling.    I included the Nutella as part of my chocolate ratio and then doubled the cream.  The results.  Perfection.

Back to my magical no bake Nutella tart story.  The end result of this tart proved to be nothing less than gourmet perfection.  This was a recipe that anyone would swear was made by a French pastry chef.

I finished up the tart by nestling a few raspberries in the filling.

I really branched out during lockdown, looking into new and fun recipes to try. One of my favorites has to be the dessert pizza.

We love to make pizza in my house, and it just made sense to add a sweet treat at the end of the meal.

This recipe is especially great because it uses the same dough we use for the pizzas.

But if you’re looking for something even sweeter, you can use a cookie dough base instead.

I know that the stuffed cookies from above caught your eye like they did mine, but this recipe is bigger and better.

Made and served right out of a skillet, it has a wickedly creamy Nutella filling.

The hardest part is getting the top layer of cookie dough over the Nutella without making a mess.

You can make this even crazier by throwing some mini-marshmallows in with the Nutella layer.

Oh, and I lied… the hardest part will be letting it cool for a few minutes before diving in!

19. Baked Nutella Donuts

Donuts are an adorable dessert that are just as good baked as they are fried.

Sure, you won’t get quite the same texture, but the baked kind will be moist, sweet, and just as cute.

Not only does this recipe use Nutella in the donut batter, but it’s also covered in a sweet Nutella glaze that will set and crack just like they do at Dunkin.

20. No-Bake Nutella Cheesecake

My issue with no-bake cheesecakes is that they don’t hold their shape as well as the denser, baked cheesecakes.

I was so pleased to see this one slice like a dream.

I didn’t have Oreos when I tried the recipe, so I used a toasted hazelnut crust, which enhanced the nutty Nutella so well.

You can cut back on the nuts by using shortbread, too.

Also, the Nutella ganache is insanely good! Seriously, I’m going to use that on everything from now on!

21. Grilled Banana Nutella Sandwich

Confession: I’m eating one of these as I type. Ok, not as I type, but it’s on a plate by the keyboard.

I like seeded bread for my sandwiches, but a sliced brioche would be amazing with this.

It might be tough, but don’t go bananas (see what I did there?) with the Nutella. It will melt and seep out before the bread toasts.

Top tip: slice your bananas lengthwise. It will keep the smaller slices from falling out.

22. Nutella Croissants

So, these aren’t exactly croissants. They’re made using crescent rolls, which have no lamination but will still leave you with a pillowy warm Nutella dessert.

I found that these came out much better when I made them into Nutella empanadas.

When I rolled the crescent rolls up, it was too much dough for me.

No matter how you roll it up, the buttery crescent rolls are a fantastic pairing with the nutty filling.

23. Nutella Pop-Tarts

Your inner teen will love you for this. If I knew back then that these were so easy to make, I would’ve had them on hand constantly!

All you’ll need is some pie dough and Nutella. I made half a with the white chocolate coating and half with that Nutella glaze from the baked donuts. Both were incredible!

24. Nutella Crunch Ice Cream Cake

Did you grow up with Carvel on your birthday? I can still remember the excitement of going to pick it out!

Never in my young mind did I think it would be so easy to make ice cream cake at home!

You just have to remember that the Nutella Rice Krispies are for the ice cream cake and not just to snack on!

Be sure to make extra because you won’t be able to resist.

25. Nutella Milkshakes

Three ingredients and a few minutes are all it takes to get a sweet, thick, creamy Nutella milkshake on the table.

You’ll need vanilla ice cream and Nutella, naturally, and then slowly pour the milk in until it reaches the right consistency.

I like my milkshakes pretty thick, but if you prefer them thinner, just add some extra milk.

26. Nutella Hot Chocolate

Ok, so if Nutella lattes are astounding, then what is Nutella hot chocolate? It’s completely sinful!

There’s no other word for it. Just when you thought a mug of warm hot chocolate couldn’t get any better, they went and melted in Nutella!

And this isn’t a packet of cocoa, either. It’s the real deal, made on the stovetop and everything.

If you’re a fan of French hot chocolate (which is much thicker and more like a ganache), add some chocolate chips to the mix.

27. Baklava Recipe with Nutella

If you’ve ever had baklava before, you know it’s super sweet and sticky and full of lovely chopped pistachios.

Maybe you’re wondering how Nutella fits into the mix?

The baklava’s sticky sweetness is perfectly balanced out with the creamy addition of the chocolate and hazelnut spread.

You might want to warm it up so it spreads easier.

28. Strawberry Nutella French Toast Roll-Ups

If you’re looking for something quick, sweet, cute, and fruity, you’re in the right place.

These roll-ups are a snap to make, and they have lots of sliced strawberries to complement the Nutella.

Using sliced white bread is such a fantastic shortcut, but I’ve also made these with crepes and American-style pancakes, and there is never a crumb left.

29. Homemade Nutella

I almost didn’t include this recipe because it was a tough one for me.

I already eat too much Nutella when I have it in the house, and knowing how to make it at home has meant I’m never without it.

But I think you have more self-control than I do and can handle the power!

Just be sure you have a decent blender, and keep it going until the mix is totally smooth.

30. Nutella Shortbread Bars

Nutella and crumbly, buttery shortbread? I’ll take a dozen!

This recipe is nice and easy, using a simple shortbread that gets pressed into a baking dish.

I covered mine with foil for the first bake because I like my shortbread pale.

I found it better to pipe the Nutella over the base before crumbling the topping over. It doesn’t matter if you miss a patch. It will melt and spread out as it bakes.

Nutella Cheesecake

I’m a little fussy about my cheesecakes. In the past I’ve publicly declared that baking is the one and only way to achieve a light-and-still-rich-but-not-overly-so cheesecake that ticks all the right boxes.

But there are times when baking is not the route to the best result. Say, Mango Cheesecake. Baking alters the flavour of mango and it’s just not the same.

And, it turns out, Nutella is the same. The baked version wasn’t bad. It’s just that the no-bake version was so much better, dialling up the Nutella flavour to the max!

Bonus: It’s a whip/pour/fridge job, and waiting at the end of this (short and easy!) path is THIS:

Holy moly, if that doesn’t make your knees weak and get your heart pumping, you must not have a pulse to begin with. 😂

Ingredients in Nutella Cheesecake

Here’s what you need to make Nutella Cheesecake. Shockingly but reassuringly few ingredients!

  • Nutella – An entire 500g/1lb jar ends up in this Cheesecake. It’s a Nutella cake, people. Happy days!

  • Cream cheese, block form – Philadelphia brand is my preferred, and they aren’t paying me to say that!! I’ve strayed from the brand before and regretted it.

    It must be the brick type, as opposed to the cream cheese sold in tubs which is softer. The latter is formulated to be easily spreadable, which we don’t want. If you can only get the spreadable tub stuff, you’ll need to use a bit more gelatine to set it properly (see recipe notes – this note is particularly for UK readers, as I believe brick form cream cheese may still not available there);

  • Gelatine powder – Gelatine is what sets the cheesecake in its fluffy mousse-like form. It’s widely available in the baking section of grocery stores. The setting strength is (to my knowledge) standardised globally, unlike gelatine sheets (don’t get me started on those!!)

    The brand I use is McKenzie’s, the most common brand here in Australia:

How to make Nutella Cheesecake Part 1: Prepare the pan (with a TIP!)

Here’s a nifty tip for making cheesecakes: flip the base of a springform pan UPSIDE DOWN. This way, you don’t have the lip of the base to contend with when removing the finished cheesecake = no base-cracking stresses. Though actually, once set cheesecakes are much sturdier than you think!

Part 2: Oreo biscuit base

Ordinarily, I also have biscuit sides for my cheesecakes for no other reason than I love biscuit bases! But for this Nutella Cheesecake, I think it’s nice to be able to see the different cake layers so I only use it for the base.

Part 3: Nutella Cheesecake filling

It’s a dead simple mix-and-pour job! OK, OK, so I’m understating it a bit … but it really is straightforward, I promise!

Part 4: Toppings
  1. Nutella ganache – Heat cream, Nutella and chocolate chips in the microwave, and stir until molten and smooth. Let it cool slightly before pouring over the chilled cheesecake. Don’t sprinkle the hazelnuts on yet, wait until the the top is chilled and set, otherwise the hazelnuts will just sink!

  2. Chill 3 hours to set – The cheesecake needs to chill for at least 3 hours to fully set all the way through. Once set we can sprinkle the hazelnuts onto the ganache layer.

    Note: The ganache topping is softer than you might expect. It doesn’t set firmly and you cannot slice through it 100% neatly; it will smear slightly and droop on the edges a bit. This is intentional. Why? Well, firstly I think it should be molten-like so it resembles Nutella. It also tastes better this way. Thirdly, if the ganache is any firmer, it tends to slide off the Nutella filling like the way cheese slides off a badly made pizza. So I stand by the oozy Nutella Ganache – it looks, tastes and eats better!

  3. Release the cake! Remove the cheesecake from the springform pan and carefully peel away the paper sides, noting what I mentioned above about the ganache being quite soft;

  4. Remove from base – Remember that pain you went through to clip the base in upside down? (You did follow that step, right?) It’s about to pay dividends! Just grab the paper overhang now for grip and slide your cheesecake off the cake pan base. Because there’s no lip, it slides straight off onto your serving platter of choice;

    Then, just simply pull the paper out from under the cheesecake.

    If at any point the paper feels stuck to the pan when doing this, it’s just the butter used to grease the pan that has solidified. Run a knife under the cheesecake and it will release easily.

Decorating the Nutella Cheesecake

It’s a pretty cake just as it is, but we can bling it up further with a few finishing flourishes! First, whip up some cream and pipe blobs around the rim.

Then warm up a little bit of Nutella so it’s pourable and drizzle it across the cream. You can do this either using a small bowl and a teaspoon, or a little ziplock bag – just snip the corner.

No need to get too caught up in perfection on this step. A casual drizzle is the phrase I use! If you want to get technical, I did a drizzles in a criss-cross pattern across the cream. While you could do it across the Nutella Ganache too, you can’t really see it so there’s not a lot of point!

Ah, I almost forgot. You want proof of light and airy insides? Here you go … see all those little air pockets? Those pockets mean a luscious, rich and yet light mouthfeel. Really, it’s like a Chocolate Mousse!

Because it’s no-bake, this Nutella Cheesecake needs to be kept in the fridge otherwise it will melt. It can be kept out in mild temperatures for quite a while, but on really warm days (say 28°C/82°F+) try to minimise the time it’s out of the fridge.

Also, unlike most cakes, where I go on and on about making sure you serve it at room temperature for the best eating experience, this Nutella Cheese is supposed to be served chilled. Believe me when I tell you I don’t say that very often, so enjoy the convenience of direct-from-fridge-to-mouth consumption! – Nagi x
