What exactly is Oat Bran?!

It is made up from the outer shell of the oat grain. When you eat rolled oats, in contrast, you are eating the entire grain. While both nutritious, oat bran packs much more magnesium, phosphorus and potassium than whole oats.  It's also amazingly high in fiber, protein, and selenium. And it tastes delicious in this Oat Bran Banana Muffin recipe!

These Oat Bran Banana muffins made a perfect breakfast on-the-go for those with busy mornings.

And they come together in a matter of minutes, using only 7 ingredients. I have never baked with Oat Bran before these muffins, and I have to admit I am pleasantly surprised by how delicious these tasted, and also how filling they are!  If you only have Wheat Bran on hand, I think you could sub that, though they would no longer be gluten free.

If you don't want to add chocolate chips, these are still delicious without them, though obviously less sweet. Chopped walnuts also add a great texture option!

I want to thank Maria for inviting me to do a guest post over here on Two Peas and Their Pod. Maria has become a great friend and is one of the kindest bloggers I’ve ever met. As far as food goes, I feel like we’re perfect complements –  I stuff myself full of sugar, chocolate and peanut butter and she pulls me back from the edge with awesome recipes like edamame guacamole, zucchini cookies, and bright melon salads. And she definitely cemented a place in my heart with her Fluffernutter Cookies. I love the style of her blog, the simple and mouth-watering recipes she creates, and I especially love that her and her husband have such a great time in the kitchen together!

When Maria asked me to do a post over here I asked if she had any specific type of recipe in mind. She said I could choose whatever I wanted, and so I did some brainstorming. I ended up choosing a recipe that pays homage to Maria’s healthy lifestyle and to my baking roots: Banana-Nut Oat Bran Muffins.

These muffins were the very first thing that I ever helped to bake in the kitchen. Back when I was in elementary school my dad was told he had slightly high cholesterol and that he could improve it through diet. My mom received this recipe from my aunt, who had been making these muffins for my uncle, who had previously suffered a heart attack. I’m not sure where the recipe originally came from, but they soon became a weekly staple at our house. Every Sunday night my mom would make a batch, and let me help with the mixing. They are so easy that after awhile I had the recipe almost memorized myself! This was also the recipe that enabled me to learn how to separate eggs. Thanks to my mom for teaching me, it has certainly come in handy with all of the egg yolks I use when making homemade ice cream!

Like almost all muffins, these are very quick to get together and get baked; we’re talking mixed, baked and out of the oven in 30 minutes. It’s hard to beat that! You’ll notice that the batter is very thin once it’s mixed together, but that’s okay – the oat bran soaks up a lot of that in the baking process and keeps the muffins nice and moist.

The original recipe calls for corn syrup, which I have substituted with agave nectar and you could also use honey. These muffins lend themselves well to a lot of adaptations – I like to add some cinnamon, you can switch up the nuts, add some dried fruit, etc. It’s a great base recipe for letting your creative juices flow. My dad, who was a faithful devotee to Snickers and ice cream (I think we all know where I got my palate from!), loved these so much that even after his cholesterol returned to normal he still requested that my mom make them. I hope you enjoy them as much as he did!

Perhaps the only thing more comforting than making muffins on a crisp September morning is making an old favourite recipe, one that I’ve been using for about 27 years. How many dozens have I turned out in that time, I wonder?

This homey scenario was infused with a little excitement this time, because it was my first baking project in my new home. Although I’d spent hours cleaning and organizing the kitchen, becoming familiar with every nook and cup hook, I truly lay claim to a new territory only through the act of creating something in it. Creating in a new space is how I come to know it in that instinctual way that allows me to stumble into the room half asleep in the morning and put on the coffee or lift my hand to find what I need on a shelf without really looking or thinking too much about it.

So, the simple acts of fetching and measuring out flour, oat bran, homemade almond milk and other alchemical wonders from the cupboards and fridge, mashing bananas with a fork until their sweet fragrance wafts about the kitchen, and mixing dry and wet together into a satisfying, tempting batter took on new significance. Baking, you see, transforms a new living space into a home. A place of refuge, sustenance, comfort and pleasure.

And baking something I’ve made countless times before instead of developing a new recipe links the present to the past, providing a sense of continuity, evoking old memories of making these muffins on Saturday mornings for a gaggle of messy-haired, pyjama-clad children watching cartoons in the next room. I may be in a new home, but it’s still the same life, carrying on.

So, back to these muffins. They’re from Anne Lindsay’s 1988 book, The Lighthearted Cookbook. Although the low-fat, margarine-promoting philosophy of the book is now outdated, it contains many good, healthful recipes that have served me well over the years. I just modify ingredients to suit my tastes and today’s respect for healthy fats.

I’ve experimented with different quantities and types of sugar, to accommodate my changing tastes and today’s developing knowledge about the health impacts of too much sugar. From the original half-cup of granulated white sugar, I’m now quite satisfied with half that amount of granulated cane sugar. I also tried using one-third cup of coconut sugar but found the sweetness level just a little too subtle; really though, it’s a matter of taste.

I’ve also made these muffins with regular dairy milk (full-fat, two percent and skim all work), kefir and almond milk (as always, I prefer my homemade version to store bought, if I have it on hand).

Then there’s the matter of the dried fruit, or not. I’ve always liked raisins and found them a real treat in baked goods as a child but, incomprehensibly to me, all three of my kids turned their noses up at them and still dislike them (and dried fruit in general). Many a time I would scoop out half a batch of raisin-free cupcakes and then add some to the remaining batter for the grownups in the house.

The batch that’s pictured in this blog post actually contains dried cranberries. Raisins are an ever-present staple in my cupboards, so I didn’t even check to see if I had any on hand before shopping for some of the other ingredients. Imagine my surprise when I found I had none! I think there may have been some over-zealous clearing of pantry items when I was packing up at the old house. Anyway, the cranberries were a little too sweet-and-tangy fancy-pants for this recipe; I prefer the workaday earnestness of raisins here. I’ve since made two batches with raisins and they strike just the right note of nostalgic deliciousness.

I wonder, how many batches of these muffins will I produce in this new kitchen, and what memories will they conjure up even as this recipe and I once again create new memories together?

Lightly adapted from Anne Lindsay’s “Oat Bran Banana-Raisin Muffins” in The Lighthearted Cookbook. I purchased the oat bran at the Arva Flour Mill, Canada’s oldest continuously-operating flour mill. I found it’s a little coarser than the oat bran I used to buy boxed at the grocery store, and more satisfactory for this recipe.

Pre-heat the oven to 400℉ and line a 12-cup muffin tin with paper cups.

  • 1 egg
  • ½ cup almond milk (or dairy or nut milk of your choice)
  • ¼ cup canola oil
  • ¼ cup granulated golden cane sugar
  • 1 cup mashed bananas (2 large or 3 smallish; if I have a little too much I just add it)
  • 1 cup whole wheat flour
  • 1 cup oat bran
  • 1 tsp baking soda
  • 2 tsp baking powder
  • ½ cup raisins

Mix the wet ingredients (yes, sugar counts as a wet ingredient) in a large bowl; I stir them with a whisk to get everything well-incorporated, but I don’t actually whisk the mixture as I don’t want to incorporate air. Combine all the dry ingredients in a separate, smaller bowl. Add the raisins, and use your fingers to separate them before stirring them in.

Add the dry ingredients to the wet ingredients and stir with a large spoon or spatula, just until combined. A small lump or two won’t hurt.

Using a spoon or a medium-sized ice cream scoop, divide the batter evenly among the 12 muffin cups (fill them about two-thirds full).

Place the muffin tray on the centre rack of the pre-heated oven, and bake for 20 to 25 minutes, or until nicely browned on top and a tester comes out clean. (In my new electric oven, the muffins are ready in 20 minutes; in my previous gas oven, they would have required 25 minutes – it’s important to know your oven!)

Set the tray of baked muffins on a cooling rack for five minutes or so, then decant the individual muffins to the cooling rack to prevent sogginess from occurring. Eat them warm or cold, but be advised, they won’t last long!

made these blender muffins earlier this week and out of a dozen muffins our 4 year-old daughter ate six in a two-hour period and was still wanting more!  Her new favorite muffin?  Apparently so!  As she kept asking for more I hesitated and then reasoned, “you know, why not?  We rarely let our kids eat candy or junk food.  And these muffins have no refined flour or sugar and only a little honey per muffin…they’re healthy.”  And so I handed her another one.

Not only are these blender muffins nutritious and delicious, these are seriously the easiest muffins ever:  Dump all the ingredients into your blender, puree it, stir in some chocolate chips, pour it into the muffin tins and bake.

From start to finish, it takes less than 5 minutes of prep time and the result is a healthy and delicious muffin with a great texture!

Healthy Additions for Your Blender Muffins

For the bran you can use either oat bran or wheat bran.

Wheat bran has the highest fiber content, over 40%, and is rich in insoluble fiber, so it’s a great choice for preventing constipation and promoting a healthy digestive system.  Oat bran contains about 17% fiber and that’s mostly a soluble fiber called beta-glucan, which helps lower blood cholesterol and keeps your hearth healthy.  Oat bran also tastes better than wheat germ.

Both have some advantages and it just depends on what you’re looking for.

These muffins are already naturally gluten-free and if you’d like to keep them that way, use oat bran.  Bob’s Red Mill and other brands also make GF oat bran.

Whichever route you go, you’re going to LOVE how simple and quick these blender muffins are to make, how nutritious they are, and how great they taste!

How to Make Blender Muffins

Let’s get started!

Place all of the ingredients, except for the mix-ins, in a blender.

Process for about a minute or until smooth, scraping down the sides as necessary.

Stir in some chocolate chips or mix-in of your choice.

Grease or line a muffin tin and pour the batter in to just over 3/4 full.

Sprinkle a few extra chocolate chips on top just to make them prettier.

Strawberry Banana Oat Bran Muffins Ingredients Directions

Preheat oven to 375oF. Grease or line a muffin tin.

Mix all dry ingredients in a small bowl: oat bran, baking powder, sea salt, cinnamon. Set aside.

In a separate large bowl, whisk the eggs. Add the Greek yogurt, coconut oil, honey, and vanilla, and mix well.

I feel like most people think about bran muffins and immediately turn up their nose. They assume that bran muffins will be dry, dense and flavorless… almost like eating cardboard in muffin form. Well folks, I’m here to prove you wrong! Oat bran muffins can be healthy AND taste good and the recipe I’m sharing today proves it!

Before getting into the details of this oat bran muffin recipe, let’s discuss what oat bran is and why it’s so healthy.

What’s the Difference Between Oat Bran and Oatmeal?

Ready for a little science lesson? A grain has three parts: the germ, the endosperm and the bran. The germ is the innermost part, the endosperm wraps around that and the bran surrounds both. With the oat grain, the hull is removed and what’s left is the oat groat. With rolled oats (or oatmeal) you’re consuming the entire oat groat (including the bran), but if you purchase oat bran cereal you’re just getting the outermost part of the oat groat that has been ground into a fine powder. 

Health Benefits of Oat Bran

According to Healthline, oat bran has similar amounts of carbs and fat as rolled oats (or oatmeal), but more protein and fiber and significantly less calories. It’s also high in beta-glucan, which is a type of soluble fiber that’s linked to improving cholesterol levels and boosting heart health. Soluble fiber may also help control blood sugar levels and help with digestion.

What Can You Make With Oat Bran?

Oat bran is so nutritious and surprisingly versatile! In my opinion, oatmeal tastes much better than oat bran cereal if you’re planning to whip up a hot bowl of grains for breakfast. Oat bran can also be used to thicken soups or stews or added to yogurt bowls and baked goods (like these muffins). The oat bran adds extra fiber and protein. 

A Healthy Take on Oat Bran Muffins

Despite oat bran itself being super healthy, traditional oat bran muffins aren’t. They’re typically loaded with lots of sugar (a mix of brown sugar and white sugar) and vegetable oil. Naturally, I decided to put a healthy spin on these muffins by using better-for-you ingredients!

I personally think these muffins are so tasty and can’t wait to make another batch soon. They’re great to prep on the weekend for a portable and easy breakfast on the go. You can pair one with a hard boiled egg or yogurt for a complete breakfast with protein, carbs and healthy fat!

Welcoming a new week with a new muffin recipe. This time, I have the healthiest banana bran muffins for you guys.

Where do you stand on bran muffins? Do you like them? Personally, they were never my go-to muffin flavor, but I do appreciate their extra dose of fiber. And really, I’m up for any healthy baked good.

I’m calling these muffins the healthiest banana bran muffins for good reasons. First, they’re sweetened with fruit. Second, they’re made with whole wheat flour (believe it or not, but most bran muffins aren’t). Finally, they’re packed with fiber thanks to the added bran. That last one goes for every bran muffin of course.

Put all of these things together and you’ve got very nutritious muffins. They may not literally be the healthiest on earth, but they’re the certainly the most nutritious muffins I know, so just go with it.

I first decided to create a healthy low-sugar bran muffin after being asked by countless patients for a healthy bran muffin recipe. I searched and I searched and all I could find were bran muffins with a considerably high amount of added sugar. While there’s nothing wrong with enjoying muffins with sugar, I wanted to share a low-sugar version.

If you’re not a bran muffin lover, I’m here to tell you that these are no ordinary bran muffins.

I won’t lie, these are no dessert muffins. Personally, I love them best for a snack served with nut butter, butter/margarine or even jam. They may not be sweet, dessert-worthy muffins, but they make the perfect base for your favorite bread toppings. Think of it as a high-fiber, banana flavored bread.

If you love this recipe, you may love my breakfast banana bread and carrot cake loaf!

Update: I want to say again that these muffins aren’t overly sweet. They’re more like a lightly sweet breakfast bread, which is perfect for a snack with nut butter, jam or other toppings. So before you tell me that these are not sweet, please know that this is not the intention of this recipe. Please keep this in mind when you review this recipe. That being said, most of you said you LOVED this recipe! I love them too and I’m so happy to see you guys make this recipe. Enjoy!

Be sure to freeze any leftovers! {Brittany's Pantry}In the short time I have been writing this blog, the majority of recipes included have been baked goods.  While this won’t always be the norm (not everyone likes to bake and I like to cook just as much) I have been whipping up a lot of muffins and breads lately based on ingredients I have in my house.

For example, I had three sorry looking bananas that were way past their prime for snacking, but perfect for baking.  I made a batch of banana bran muffins and I MUST share the recipe with you.  They are so good, it boggles the mind a bit.  They don’t taste like your run-of-the-mill traditional bran muffin, so those of you who are wrinkling your nose at this-HALT!  These are sweet and moist and do not taste like what they are; an extremely easy, fast, and healthy option of breakfast or snacking.  This recipe comes from my good friend Michelle, and I think she got it from a Bed and Breakfast cookbook.  Ultimately, who cares?!   They are a favorite muffin in our house and I hope they become one you can count on too!

Banana Bran Muffins
Yield: 1 dozen

In a large bowl, mix together with a wooden spoon or spatula:
1 egg
3/4 c brown sugar
3 bananas, mashed
1/3 c canola oil
1 tsp vanilla
Add:
3/4 c all purpose flour
3/4 c white whole wheat flour or whole wheat flour
1/2 c bran
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp salt

Mix all dry ingredients into the wet ingredients carefully, JUST UNTIL COMBINED.  Bake in greased or papered muffin cups at 350 degrees for 18-20 minutes or until browned on top and toothpick inserted into the center comes out clean.  Baked muffins freeze beautifully.

Instructions

Preheat the oven to 400°F. Butter a 12-cup standard muffin pan or line the pan with baking cups. Set aside. Combine the flour, oat bran, whole wheat flour, baking powder, and salt in a large mixing bowl. Whisk to blend. In a separate bowl, whisk the banana, oil, egg, brown sugar, and milk until evenly blended. Make a well in the dry ingredients and add the liquids. Stir well, until just a few streaks of dry ingredients remain, then stir in the blueberries until evenly mixed. Divide the batter equally among the cups. Sprinkle a little sugar on top of each, if you like. Bake for 10 minutes, then reduce the heat to 375°F and bake for 12 minutes more.

Cool the muffins in the pan on a rack for 5 minutes. Remove the muffins from the pan and continue to cool. Serve warm or at room temperature.
