Last week I made Kedgeree, a delicious British rice and smoked fish dish, suggested by a fellow blogger in the comments section, while today I brought to life the idea given to me by Alejandra, who is from El Salvador. Now before your imagination draws an image of a grilled tortilla generously filled with cheese and other goodness, which is how we can describe Mexican quesadilla, let me stop you by telling that this Salvadoran quesadilla is nothing like it. In fact, these dishes are even not in the same category: the one coming from El Salvador is a dessert!

You heard me right. Quesadilla Salvadorena is a sweet cheese filled bread / pound cake. The type of cheese usually used to make it is queso duro - a Parmesan-like Salvadoran cheese. I don't know if you'll be able to find it, I certainly didn't, but don't worry, though. The good old Parmesan cheese, which is perfectly accessible everywhere, is a great substitute. The majority of recipes online use it.

The end result is a rich, not too sweet, delightful cake. Perfect with a cup of tea or coffee. If you will ever visit El Salvador, you should be able to find Quesadilla Salvadorena in every local bakery (panaderia). If you won't have such a chance, just devote 15 minutes of your time and bring Salvadoran flavors into your own kitchen.

Ingredientes Preparacion

NOTA: Antes que nada debemos pre calentar nuestro horno a 175o C o 350o F.

En un bol batimos la azucar junto con las yemas de huevo y la leche, poco a poco vamos agregando el queso rayado. Cuando hemos agregado todo el queso, colocamos nuestra harina (tamizada) junto con el polvo de hornear y la mantequilla (o margarina) derretida.

A parte batimos las claras de huevo a punto de turron, luego esto lo vamos echando a la mezcla y vamos revolviendo con cuchara o paleta de cocina.

Engrasamos con mantequilla un molde para hornear y vertemos nuestra mezcla sobre el, sobre la mezcla dejamos caer semillas de ajonjoli.

Como nuestro horno se encuentra pre-calentado, solo insertamos nuestra mezcla y dejamos horneando aproximadamente 40 a 50 minutos. Para asegurarnos que ya esta cocido nuestra quesadilla podemos insertar un palillo de diente en el centro y si este sale limpio es porque ya esta.

Sacamos nuestro molde y dejamos enfriar, luego corta en trozos las cantidades que tu quieras y disfruta con cafe.

Despues de probar cinco de las mejores Roscas de Reyes de la Ciudad de Mexico (elaboradas por las pastelerias La Suiza, Maque, El Globo, Panmex y Superama Special Edition) mi fin de semana de Reyes se vio coronado con un delicioso y nostalgico regalo de mi tierra: la tipica Quesadilla salvadorena, un pan dulce elaborado con queso duro, leche, yemas, aireado con claras y rebozado con semillas de ajonjoli, antojo salvadoreno que se disfruta a toda hora, especialmente en el desayuno y la merienda.

Por su preparacion se encuentra en la categoria de panque o coffecake. Tradicionalmente se hornea en la clasica charola de bizcocho y se vende en piezas rectangulares. De textura esponjosa y sabor saladito y mantecoso, a la primera mordida me transporte a mi ninez, recordando los fines de semana que mis padres nos llevaban a cenar pupusas y rematabamos con una rebanada de quesadilla y un atole.

La humedad que le confieren las yemas, la esponjosidad de las claras batidas y el toque crujiente del ajonjoli dan como resultado un pan facil de comer y, por lo mismo, adictivo (¡horror!). En la vasta panaderia del centro de Mexico no existe algo igual, lo mas parecido seria el pie de queso, aunque este lleva como base una pasta tipo sablee.

Al disfrutarla con un fresco y cargado cafecito estuve en la gloria de la gastronomia salvadorena. ¡Gracias tio Paco y Adelita!

Aqui, la receta de Dona Vilma G. de Escobar en su “Comida Tipica”, No. 8, pag. 144 (adaptada para Mexico) por si se animan a probar algo de la panaderia criolla centroamericana.

Quesadillas

2 tazas de harina cernida.

2 tazas de azucar.

4 huevos.

250 gramos de margarina (ojo, debe ser margarina, no mantequilla) derretida y fria.

1 taza de leche.

2 tazas de queso rallado tipo Cotija o cualquier otro queso duro salado.

2 cucharaditas de polvos de hornear.

2 cucharaditas de ajonjoli.

Mezclar azucar, yemas y 1/3 de la leche hasta blanquear. Incorporar poco a poco el queso rallado y el resto de la leche. Incorporar harina y polvos de hornear. Agregar margarina.

Batir claras a punto de nieve e incorporar a la mezcla con movimientos envolventes y suaves. Pasar a charola cuadrada, adornar con ajonjoli y hornear por 30 minutos a 180 C.

What is a quesadilla salvadorena?

An etymological study of the word quesadilla shows that the word comes from the words queso, meaning cheese in Spanish, and the diminutive suffix illa, which appeared in the 15th century, but more precisely from the quesada pasiega, a type of cheese pudding typical of the Cantabrian region of northern Spain that can be served hot or cold and has the consistency of a slightly sweet tasting pudding.

Etymologically, in the Spanish language, words ending in illa or illo are diminutives. Quesada is thus a savory dish or dessert that contains cheese (queso) as a basic ingredient.

The word quesadilla is thus composed of queso plus the feminine diminutive illa, according to a widespread use in the 15th century, which makes it a word of Spanish origin and not a Nahuatlism, or a term related to the Nahuatl language.

Halfway between a very soft loaf of bread and a pound cake, the quesadilla salvadorena is traditionally prepared with rice flour and some dairy products, and is baked in the oven in a rectangular or square dish.

In general, quesadillas salvadorenas are always made from rice flour, although they can also be made from maize flour (masa) or wheat flour (trigo).

How to make quesadilla salvadorena

The recipe and method of preparation for this cheesecake varies from house to house. In addition to the cheese, which is present in every proper Salvadoran refrigerator, two ingredients that Salvadorans make sure they have on hand to prepare a quesadilla are rice flour and ajonjoli (sesame seeds).

In El Salvador, quesadillas are made with the traditional Salvadoran cheese called queso duro blando (hard cheese), which is white in color. It is a cheese that exists in all regions of El Salvador, with a very slightly salty and pleasant flavor.

Queso duro blando is a dry, aged and crumbly cheese. It is excellent as a garnish for tostadas, enchiladas, pupusas, Mexican quesadillas, but also elote loco and salads.

Since this typically Salvadoran cheese is impossible to find outside of El Salvador, many Salvadorans living abroad and especially in the United States recommend replacing it with cotija or parmesan cheese.

The recipe and the method to make this cheese pound cake vary from house to house. Two of the ingredients that Salvadorans make sure they have on hand to make quesadillas are rice flour and ajonjoli (sesame seeds).

What cheese is used in Salvadoran quesadillas?

How to make Salvadoran cheese pound cake

Traditionally, quesadilla batter is made the day before. Then the batter is left to rest overnight at room temperature.

Nowadays, many Salvadorans bake it the same day, without the resting time, and they think the flavor is just as good.

Try it both ways and decide which one you prefer.

To make the cake, start by blending the different types of cheese with the milk and cream. Set it aside.

Separate the egg whites from the yolks. Beat the egg whites until soft peak and add the sugar a little bit at the time; then add the yolks and keep beating until well mixed.

The flour and melted butter are added to the egg mixture, making  a very creamy batter.

Last, add the cheese mixture and blend with an electric mixer. The consistency of this batter is a little bit thicker than a pancake batter.

Before baking, sprinkle the batter with sesame seeds.

Although quesadillas are usually baked in rectangular pans, muffin tins or round pans can be used.

The sweetness of quesadillas varies a lot, some people like it very sweet and some not so much. For our recipe, I used 1/2 cup of sugar. This amount made the quesadilla just sweet enough to contrast the salty cheeses in the recipe.

It’s a great combination of sweet, cheesy, light but somehow dense cake.

Salvadoran quesadillas are one of the best known and most popular desserts and breakfast cakes in El Salvador. Foreigners love it and often take it back home with them to share with friends and family.

If you’ve never had pan de queso, you’re in for a treat! These fluffy, cheesy rolls, similar to the cheese rolls you would get at a Brazilian restaurant, are simply to die for. 

I never knew what these clouds of goodness were called until a friend of mine, who grew up in Colombia, introduced me to the name. I’ve since discovered that there are several versions of pan de queso, also called pan de yuca, from various South American and Latin American countries, with a few different methods. After several rounds of testing, this is my favorite recipe for pan de queso.

Why You’ll Love This Pan de Queso Recipe

I chose this pan de queso recipe as my favorite because it’s incredibly easy to make (no boiling of the starch here!) and required just a food processor and a baking sheet. It’s also made with easily available ingredients, and it produces beautifully puffy, round cheese rolls every time!

What is Tapioca Flour?

One of the main ingredients in this pan de yuca recipe (and also why it’s called pan de yuca) is tapioca flour, which comes from the cassava, or yuca plant (not to be confused with the yucca plant). Tapioca flour can also be called tapioca starch or manioc starch. 

I use Bob’s Red Mill Tapioca Flour for my pan de yuca because it’s easily available in most major grocery stores or health food stores. You can also get it online on Amazon or through Bob’s Red Mill. The fine-textured tapioca flour is naturally gluten-free and perfect for this recipe.
