Instead of the typical fluffy, doughy cinnamon rolls (fabulous in their own right), the puff pastry creates a buttery, flakey roll that is, well, soooo good. When I was catering, I did a lot of brunches and breakfasts for ladies… usually holiday breakfasts, or baby and wedding showers.  I learned so much about how women eat – especially around other women.  I would be so disappointed that they would skip over the giant cinnamon rolls I had slaved over.  Sure they would oh and ah at them, but no one would be willing to fill their plate with the huge pastry.  However, when I started making these smaller Pecan Sticky Rolls, they were a hit – the ladies would even ask for seconds!  Maybe it was the more petite size, or perhaps the lack of frosting?  Maybe the caramel pecan glaze (made from a simple schmear) was too much to resist?!

When I was in college working at a bakery, I discovered ‘schmear.’  Schmear at this bakery didn’t mean cream cheese on a bagel… but, a smooth mixture of butter and brown sugar that was ‘schmeared’ on the bottom of the muffin pan before the cinnamon rolls were put in.  After baking, we inverted the rolls onto a tray to reveal that the schmear had created a caramel glaze that cascaded over the rolls.  That sounds easy (and delish), right?  It gets better.  Instead of slaving over homemade bread dough to make the cinnamon rolls like they did at the bakery, now I use frozen Pepperidge Farm Puff Pastry.  Instead of the typical fluffy, doughy cinnamon rolls (fabulous in their own right), the puff pastry creates a buttery, flakey roll that is, well, soooo good.  I also love that they are smaller than the normal over-sized bakery cinnamon rolls – they are a perfect indulgence to serve at brunch or with a cup of coffee.  You can prepare these ahead of time (great to have around for the holidays…) by following the directions below, then putting them into the freezer instead of the oven.  When you are ready to bake them, just let them sit out for 10-20 minutes before they go into the hot oven. Pecan Rolls with Puff Pastry

2 sheets of Pepperidge Farm Puff Pastry* (1 package)

2 tablespoons of butter

1/4 cup of sugar

1/2 cup of brown sugar

2 tablespoons of cinnamon

12 tablespoons of butter, softened

1/2 cup of brown sugar

1/2 teaspoon of salt

1 cup of pecans

Preheat oven to 400 degrees.

*Let frozen puff pastry sit out to thaw for 20 minutes before using.

Unfold the puff pastry sheets out on a lightly floured surface.  Spread 1 tablespoon of softened butter out onto each sheet.  Next, spread half of the 1/4 cup of sugar and the 1/2 cup of brown sugar onto each sheet.  Sprinkle 1 tablespoon of cinnamon onto each sheet.  Roll the sheets into long rolls, then cut them each in to 6 even pieces.

Create the schmear by creaming together 12 tablespoons of butter, salt and 1/2 cup of brown sugar.  Scoop a tablespoon of the mixture into the bottom of each cup of a large muffin pan.  Put 4-5 pecans on top of the schmear mixture, pressing it down.  Put a slice of the cinnamon roll, spiral side up, in each muffin cup.

Place the muffin tin on a baking sheet – just in case they will bubble over in the oven.  Bake for 25-27 minutes, until puffed and golden.  Let them cool in the muffin pan for 2 minutes – only!  Place another sheet pan on top, and invert them, removing the muffin pan.

Unfold the puff pastry sheet.

Spread the butter evenly.

Follow with sugar.

Then brown sugar…

And cinnamon.

Roll it up tightly.

Slice each sheet into 6 pieces.  You can even do 8 if you want to stretch it.

Put a scoop of schmear in each cup.

Then smash it down with the pecans.  I like the look of pecan halves, but you can use pieces, too.

Place the rolls on top of the pecans (I only made 6, using just one sheet).  Want to make these ahead of time?  This is the point you can wrap them up and stick them in the freezer!

Puffed and baked.  I used an extra large jumbo muffin tray, but you can use a normal size.  Yours will be more overflowing if you use a standard muffin tray… both work great.

Place a pan (upside down) on top of the other tray, then flip.

Remove the top tray, and the muffin tin…

Look how ooey, and goey!  These are so easy to make, they’re great for any old Saturday morning, or a special brunch.

Quick and Easy with Frozen Puff Pastry

Time and again, store-bought puff pastry has been a savior in a time crunch. It always produces excellent results and it's so versatile, working with savory and sweet recipes alike. If you've had my brie and cranberry tart, my cinnamon palmiers, or my peach turnovers then you know how much I love puff pastry! I love trying new ways to use puff pastry, and this pecan pastry is my new fave!

Ingredients

Then, for the quick vanilla icing, you'll just need powdered sugar, milk, and vanilla extract (check out my post on how to make vanilla extract at home with just 2 ingredients).

Equipment

Puff pastry pecan pies are a delicious hand pies with all the traditional flavors of pecan pie wrapped up in a neat triangle of flakey puff pastry. These mini pies are portable and tasty, which makes them perfect for that large holiday get together.

Pecan pie is a family favorite, so any excuse to make more desserts stuffed with the filling is welcomed in our home.

This version of the classic recipe gives you a flaky turnover style dessert loaded with the filling.

And, for an added bonus, when you make the pecan pie filling for this recipe, you’ll have some leftovers, which means you can use it for a big batch of pecan pie bread pudding or a delicious pecan pie cake roll.

Or, you could just eat it by the spoonful….we won’t tell.

Ingredients You’ll Need

You’ll need ingredients to make the pies and filling. For ease, we’ve separated them out for you.

For the pecan pie filling, make sure you have additional:

Making Pecan Pie Filling 

Pecan pie filling is super easy to make. This makes about 36 ounces of pie filling and you’ll only need about half of that. You can store the rest in the refrigerator for 4-5 days and use it in other recipes likepecan pie bread pudding or our pecan pie cake roll.

Step 1 – Preheat the oven to 350°F.

Step 2 – Mix the ingredients and bake. In a large bowl, mix all the ingredients together and then pour the mixture into a greased 8×8 inch casserole dish or 9 inch pie dish. 

Place the dish in the oven and bake for 45 minutes. As it bakes, carefully stir with a spoon every 10 minutes.

Step 3 – Remove from oven. Once the filling is done, remove it from the oven and allow it to cool for 10 minutes before using.

Note: I’ve had lots of people ask if they have to bake it and my answer is yes. This method gets the best results. I’ve tried it on the stove top and it takes just as long and you have to stand there stirring it. If you do it this way you can get other things done while it bakes!

The Dough Makes a Difference

The brand of puff pastry can make a big difference in the results of this recipe. 

We love the flavor and texture of Wewalka puff pastry, which you can find in the refrigerated section near the canned biscuits. Compared to frozen, these give us the most puff, flakiest, and crispiest layers. 

You may not be able to find Wewalka in your store. If you can’t, you can use canned Pillsbury crescent rolls instead. They just won’t have the same light, flakey texture. 

Of course, you can also use any other refrigerated puff pastry or use Pepperidge Farms frozen puff pastries. Just make sure to let it thaw in the refrigerator for a few hours or out on the counter for about 15 to 20 minutes. You want to make sure the dough is easy to work with and pliable.

How to Make it Ahead of Time 

Pecan pie puff pastries are best served right after they are baked when the puff pastry is crisp and delicious. You can also serve them once they are cooled to room temperature. 

If you are looking for a tasty breakfast, they also go great with a cup of coffee in the morning.

You need to store any leftovers in the refrigerator because of the eggs in the filling. You can store them for up to 4 days.

Please don’t tell a soul… I usually don’t keep secrets like this. But I’m planning to serve these delicious sweet treats over the holidays, and I really wouldn’t mind if my guests thought I’d slaved for hours over them.

Oh, it’s not that my family and friends aren’t worth it. I love them very much. In fact, they are the greatest blessings in my life. It’s just that, to be honest, I’m almost always quite pinched for time. I work outside the home along with running my blog, The Cafe Sucre Farine. I also enjoy hanging out with family, which means traveling to London several times a year, where my daughter and her family reside. I love travel adventures with my husband, walking and spending time with friends, biking, hiking, reading, swimming and… well, I guess you probably see what I mean. I’m as busy as you are!

So that brings me back to these amazing cinnamon rolls. Imagine something so delicious that it tastes just like it rolled out of one of those fancy gourmet pastry shops… yet it’s something you can put together with only 15 minutes hands-on time!

The easy prep can be done the night before. Then you can let your oven do the rest of the work the next day. The final step is you (or me) presenting guests with the most delectably, delicious cinnamon rolls, and then hearing squeals of delight!

If all this sounds good to you, pick up a package of puff pastry and some chopped pecans next time you’re at the market. You probably already have everything else you need hanging out in your pantry or fridge.

Oh, and when the rave reviews start rolling in, remember, it’s our little secret!

Easy Cinnamon-Pecan Rolls with Maple Drizzle
Ingredients Cinnamon-Pecan Rolls:
  • 1 package

    puff pastry, 2 sheets

  • brown sugar

  • pecans, coarsely broken or chopped

  • cinnamon

  • egg yolk, beaten and mixed with 1 tsp water

Maple Drizzle:
  • powdered sugar

  • maple syrup

  • vanilla extract

Directions For the rolls:
  1. Thaw puff pastry as directed on package. Remove one sheet and place on a lightly floured work surface. Keep the other sheet refrigerated till ready to use.

  2. Preheat oven to 400˚F. Line 2 sheet pans with parchment paper or grease lightly.

  3. Combine brown sugar, pecans and cinnamon. Set aside ¼ cup in a separate bowl.

  4. Roll out puff pastry sheet to a 12-inch square. Spread with 1 Tbsp of the softened butter, then sprinkle with ½ of the brown sugar mixture.

  5. Roll pastry sheet up tightly and cut into 6 equal slices. Pat each slice with the palm of your hand to flatten to a 3-inch circle and sprinkle with a teaspoon of the reserved brown sugar-pecan mixture. Press lightly with your fingers to adhere brown sugar mixture to the surface. Place on prepared sheet pan and cover with plastic wrap. Refrigerate for at least 15 minutes or overnight.

  6. Repeat with second sheet of puff pastry.

  7. When ready to bake, combine egg yolk with 1 tsp water and mix till combined. Remove pans from refrigerator and brush each dough circle with the egg yolk mixture. Be sure to brush the sides as well as the top.

  8. Place pans in oven and immediately reduce the temperature to 375˚F. Bake for 15-18 minutes or until golden brown.

  9. Allow rolls to cool for 10 minutes, then drizzle with the maple drizzle.

For the maple drizzle:
  1. While rolls are baking, make the drizzle. Combine all ingredients and mix well with a fork or whisk. If too thin to drizzle nicely, add a bit more powdered sugar; if too thick, add a few drops of milk.

Cook's Note

Tips for working with puff pastry.
1. Thaw puff pastry overnight in the refrigerator or at room temperature for 20-30 minutes. Never try to thaw it in the microwave. If you need to thaw them a bit faster, separate the sheets and wrap each one with plastic wrap.
2. When unfolding pastry sheets after thawing, a bit of tearing may occur. Just use a touch of water on your finger to press the dough back together.
3. Puff pastry does not like to be warm. Always keep it refrigerated until just before use. If your recipe calls for 2 sheets of puff pastry, keep one refrigerated while working with the other.
4. Work with puff pastry on a lightly floured surface. If you need to roll the dough, roll from the center out to the specified size.
5. Too much flour will toughen the dough, as will working too much with it.
6. After shaping the dough, as specified in your recipe, place on a baking pan and refrigerate for 15-20 minutes. Puff pastry will rise better if the dough is cold when it hits the hot oven.

The dough can be made from scratch, but even I want a shortcut from time to time! The only issue I found using puff pastry dough, is that you need to wind the braid no taller than about 2″, or the center won’t bake very well. (The thicker the center, the longer it will take to bake.)

PECAN BRAID

Serves about 6

Ingredients:

* 1 Package frozen puff pastry (or prepared sweet roll dough)

* 3 Tbsp softened salted butter (room temp)
* 1/2 c light brown sugar
* 1 c chopped pecans
* 1 tsp ground cinnamon
* 1 egg white

* 1 c powdered sugar
* 1/4 tsp vanilla extract
* 2 Tbsp milk (or enough for a pourable icing)

Allow the frozen pastry dough to thaw.

Roll out on a lightly floured surface to about 1/8″ thick, into a long rectangle about 20″ long and about 10″ wide.

Spread softened butter over dough, leaving about 1″ borders all around.

Combine the brown sugar, cinnamon, and pecans in a bowl, and sprinkle over the buttered dough. Press into the butter using the palm of your hand.

Roll the dough along the LONG side, into a log. Seal the long edges with a little dab of water, and place log seam side down. Place log on a parchment lined sheet pan, and chill for about 30 min.

Preheat oven to 350 degrees.

Place the chilled log onto a large cutting board. Using a sharp knife, slice the log in half lengthwise, starting about 1″ from the top of 1 end. This will expose the layers.

Carefully begin twisting/braiding the 2 sides around each other, then twist the braided roll into a circle. Remember not to make the entire pastry too thick – or it may not bake through to the center. This is a rustic pastry, so don’t worry it it’s not “perfect”.

Place completed pastry ring on a parchment lined baking sheet.

Brush top with a beaten egg white. Bake for about 25 – 30 min. The bread should be browned, and spring back when pressed in the center with your finger. Cool.

Combine icing ingredients, and drizzle over cooled pastry. Slice, and serve.

My family has always used store-bought mini pie shells that are available in select grocery stores. I didn’t want to use an ingredient that was that specific because it may or may not be available to all of you.

So I started testing the recipe with sugar cookie dough. Um. Let’s just say, it wasn’t a good idea. So sweet that it actually made my sweet tooth hurt. On to the next! I spotted large puff pastry sheets at the store and thought, huh! And the first batch look like profiteroles. The puffiness of the puff pastry had completely consumed all of the pecan pie filling. FAIL. Next! So my last attempt at puff pastry was to pierce holes on the surface of the pastry so that it puffed up a bit, but not so much that it looked like a balloon. And it worked! Perfect, buttery puff pastry with a sweet, crunchy, gooey pecan pie filling in the center. I of course ran for the whipped cream container, because what is pie without whipped cream?

As these mini pecan pie bites bake, you’ll see that some of the pecan pie filling will spill over the sides, that’s okay. It makes a nice crunchy brown crust around the outside which is not only delicious in taste but the texture really makes these phenomenal.

Be sure to spray your mini muffin pan liberally with cooking spray. The cooking spray not only helps brown the puff pastry (because we can’t brush it with an egg wash!) it also helps these pecan pie bites pop right out.

Method

Heat the butter in a frying pan and gently saute the grated apple together with the sugar and lemon juice until soft (about 10 minutes). Remove and place into a sieve and apply pressure to the mixture with the back of a spoon to remove any excess liquid. Set aside and allow to cool.

Roll the puff pastry out on a lightly floured surface to a thickness of about ½ cm. Evenly spread half of the cooled apple mixture across the entire base of the pastry. Sprinkle generously with ground cinnamon, 1 Tbsp castor sugar and 100 g of the chopped pecan nuts.
Roll tightly into a log and slice into 4 equal rounds. Repeat these steps with the remaining ingredients.

Place the rolls onto a lightly greased baking tray with a little space in between them and bake in the oven for about 25-30 minutes or until risen, golden brown and cooked through.

Lemon Glaze
Mix the icing sugar and lemon juice together – the consistency should be a thin drizzle.

Once the cinnamon rolls are baked, remove from oven and place onto a baking tray to cool slightly. Drizzle with lemon glaze and serve warm or cold.

I love New Year’s. Not so much the holiday itself (which is mostly spent putting Christmas decorations away), but the idea of it. A fresh start, new opportunities…all that good stuff! I think it’s worth celebrating. And this year, I’m going to use it as an opportunity to show off my fancy (but super easy) Pecan Pie Pastries, which have some history behind them.

Pecan Pie PastriesYou all *know* I’m not good in the kitchen. I had never in my life baked with Pepperidge Farm Puff Pastry before. I love all the creative ways you can use them…and honestly, I had no idea they were so easy to use (you literally just put them in the oven and they puff up).

My favorite things to eat were definitely the Asparagus & Prosciutto wrapped in Pepperidge Farm Puff Pastry sheets. So good, it was ridiculous. But we got a little hands-on when we made the Pepperidge Farm Puff Pastry with Rolo centers, and once I realized how simple they were to make, I had an idea.

Puff Pastry with RolosA couple weeks ago, my mother-in-law had sent me a recipe for her famous Pecan Pie. A retired Home Economics teacher and fourth-generation Texan, she’s a wealth of amazing recipes and good stories to go with them. This particular pecan pie recipe happens to be incredible and has Texas roots, too.

And what’s better than pecan pie and Texas? I’m pretty sure nothing.

In the 60’s, my mother-in-law was in college and working towards her major in Home Ec. Always on the lookout for rich dessert recipes, she was intrigued by this pecan pie because it was rumored to come straight from the kitchen of Governor Connally’s wife, Nellie Connally. Governor Connally was wounded by the assassin that shot JFK, and my husband’s family has a lot of history tied in with that event (which is another blog post entirely…I still need to get to this recipe, so I’ll have to share that later).

In the words of my mother-in-law (we call her Grammie), this pecan pie is one of the best Texas has to offer.

I had just read her story about the pie before attending the Pepperidge Farm Puff Pastry party, and I decided that, “OMG. These pastries need to be filled with that pecan pie filling!”

So I took it a step farther and made them into party favors, which actually turned out to be super cute and appropriate for work parties, neighbor and teacher gifts, and any other time you want to give a homemade goodie to someone.

Pecan Pie Puff PastryIf you’ve never used Pepperidge Farm Puff Pastry, have no fear. They’re user-friendly! I used a pastry brush to wipe some egg over them and put them in the oven for 20 minutes. I took them out and pushed the centers down, like you see here. Here’s how you’ll make the Pecan Pie Pastry:
