This hamburger rice casserole is similar. It starts with onions and ground beef, add in some beef broth, rice, seasonings, then top with cheddar cheese. It makes a great, easy dinner option.

How to make hamburger rice casserole:

This ground beef and rice casserole is incredibly simple. Start by heating a large skillet over medium heat.

Add a tablespoon of cooking oil (your choice), some diced onions, and a pound of lean ground beef. Break up the ground beef as it cooks, so it’s in small pieces.

I like to use a meat spatula, because it easily gets along the circular edges of the pan. After the ground beef is completely cooked and no longer pink, drain the excess grease, and return the meat to the pan.

Add the broth, long grain white rice, tomato paste, onion powder, garlic powder, chili, cumin, oregano, salt, and pepper. Stir to combine, and ensure the rice is submerged in broth.

Bring the liquid to a boil, reduce to simmer, and cover. Continue to cook at a simmer for 20 to 25 minutes or until the rice is tender.

Once the rice is cooked to the desired consistency, remove the hamburger rice casserole from heat, and top with shredded cheddar cheese. Add the lid back to the pan for about 5 minutes or until the cheese is completely melted.

Serve the cheesy hamburger rice casserole hot with a side salad or steamed vegetables.

This casserole will keep in the refrigerator for 3 – 5 days. For longer storage, you can freeze this dish for up to a month. To freeze this casserole, chill it completely in the refrigerator, then place it in an air-tight, freezer-safe container.

Ground Beef and Rice Casserole Ingredients

There are several ingredients to this casserole, but they’re all easily found at your local grocery store. You probably have several of them in your kitchen already, as well. These are all simple, straightforward Tex-Mex ingredients.

How to Make Ground Beef and Rice Casserole

Making this casserole is so incredibly easy. It’s all done in one pan, and the cooking is all very basic. It’s an easy dish that even beginners can make with no problems.

Step 1: Brown the Meat

In a large skillet, add the ground beef, onions, and all seasonings, cooking over medium-high heat until the meat is no longer pink and the onions are tender. Drain excess grease, if needed, and return to the skillet.

Step 2: Add All Remaining Ingredients Except the Rice

Add the corn, black beans, black olives, and diced green chilies to the meat mixture and stir. Then, pour the enchilada sauce, Rotel, and beef broth into the skillet. Stir to combine and bring to a boil over medium heat.

Step 3: Add Rice

Add the rice and reduce the heat to low. Cover and cook for 20 – 25 minutes or until the rice is tender, stirring frequently. Top with shredded cheese, stir, salt and pepper, to taste, and enjoy!

It’s a regular weeknight. You’re craving comfort food. It doesn’t need to be fancy, but you really want something that’s stick-to-your-ribs good. Something that reminds you of your childhood. It would also be nice if there was no complaining about dinner and the kids actually loved it.

Such a meal does exist!

I’ve been making this simple, tummy-pleasing Hamburger Rice Casserole for about 20 years now. Sometimes I make 2 casseroles at once and freeze one for later. It reheats great as leftovers, too!

Hamburger Rice Casserole

The list of ingredients are simple. You probably have most of these already! Ground beef, onion, olive oil, cream of mushroom soup, chicken noodle soup, rice, salt, pepper, and crushed potato chips.

Saute chopped onion with olive oil in a deep pan skillet for 2-3 minutes over medium heat.

Add ground beef and cook until meat is browned. Remove pan from heat and drain.

Here’s where it gets a little strange. The cream of mushroom soup seems like a logical choice, but chicken noodle soup? Really? Yes, really! Add cream of mushroom soup, chicken noodle soup, salt and pepper into the pan.

Stir until combined. Those noodles add an unexpected texture and another level of flavor to this dish.

Next, add the cooked rice.

Stir the rice into the ground beef and soup mixture.

Pour rice mixture into a 2 quart casserole dish that has been coated with nonstick spray.
Bake uncovered at 350 degrees for 20 minutes.

NOTE: This recipe can be prepared ahead of time or frozen. Place rice mixture into an aluminum pan and cover with aluminum foil. Store in the refrigerator to cook later, or you can freeze it.

Carefully remove from oven and top with crushed potato chips.
Bake uncovered another 5 minutes.

This hamburger and rice casserole is so versatile, makes great comfort food for your family and is so easy to throw together on a busy work night.  This recipe could easily be cut in half for just a couple of people and should freeze well.  You can make it your own by adding your favorite spices.  You could add corn or chili peppers along with another meat you like.  It could easily be made into a Mexican dish or just change up the cheese to your favorite.  Serve with our recipe for pimento cheese cornbread or whatever bread you prefer.  This is such an easy dish to prepare in little time that I make it often when I need something in a hurry.

Hamburger and rice casserole will become a favorite comfort food recipe.

1 pound hamburger

1/2 cup chopped regular or green onion

1/2 cup chopped green sweet pepper

1 cup chopped celery

1 (10.5 ounce) can cream of celery soup, undiluted

1 (14.5 ounce) can beef broth

1 1/4 cups minute rice, uncooked

1 envelope dry onion soup mix

1/4 teaspoon black pepper

1 to 1 1/2 cups shredded cheddar cheese

Brown hamburger, green pepper, celery and onion in a skillet on top of the stove, drain if needed.  Stir in cream of celery soup, beef broth, rice, onion soup mix and black pepper.  Pour into a casserole dish and sprinkle on shredded cheese.  Cook in a preheated 350 degree oven, uncovered, for 30 to 35 minutes.  Makes about 8 servings. Can add chopped green onions on top for a garnish.  Enjoy!

Rice tip:  When you have leftover plain rice from a meal, if stored correctly it will keep 4 to 6 days refrigerated.  Do not leave out of refrigerator for more than 2 hours.

My kids love any kind of ground beef recipes, which means I’m always on the hunt in my vintage cookbooks.  So when I stumbled upon this ground beef casserole (AKA Chili Rice Hot Dish), I marked the page in my Minnesota Centennial Cook Book.

This ground beef and rice casserole reminds me of another of my kid’s favorite dishes, Savory Sausage and Rice Casserole.  Let’s face it. Kids (my kids in particular) can be picky, but if it has rice and some type of ground meat, they love it.

When I make this hamburger rice casserole, all three of my kiddos eat more than one helping.  My 3-year old says “more meat and beans, more meat and beans, more meat and beans please.“  Whoop, whoop!
