Simplicity can be a great goal. Achieving it has its own complexities. Weeding through intricate aspects to find the very basics is difficult. What to remove and what to keep? It is a dilemma faced with many as they seek balance in a complicated and busy life. Contemplating the effects of removing familiar and seemingly important pieces is stressful all by itself. Figuring out what is really important takes energy. You might as well sit, relax, and enjoy some sour cream drop biscuits in the process.

Biscuits are a basic southern quick bread. The variations are vast with many methods, types, flavors, and textures. They can almost be considered an art form in the food world. There are secrets to making them certain ways such as light or dense, flaky or fluffy, and plain or flavored. Flour plays a big part in their texture. Bleached all-purpose flour is the secret to light and fluffy biscuits. Not over working the dough is another secret. Mix until just moistened then bake right away.

Homemade biscuits are not difficult to make. I learned how from my mother-in-law. Peel, pop, and bake was all I knew growing up. You know those ones in the refrigerated section? That was how my parents made biscuits. I never popped a can of biscuits again after learning how to make them from scratch. The recipe from my mom-in-law is for a shaped biscuit and one day I’ll get the measurements exacted and post that recipe. Until then, sour cream drop biscuits are easier. Measure, whisk, stir, drop, and bake are all it takes to make them.

Since these biscuits are made with sour cream, butter, and salt, those rough edges are incredible.

I want to distinguish these drop biscuits from flaky biscuits. Sour Cream Drop Biscuits are not flaky nor do they have many layers. These biscuits look and taste more like a scone. The butter isn’t cut into flour, it’s melted and stirred in with the sour cream.

Many sour cream drop biscuits turn out tough, dry, with a spongy interior. I found adding a little cornstarch to the all purpose flour made them tender. Adding melted unsalted butter instead of cold made the dough moist, creating steam when baked. Steam puffs up making these biscuits soft and fluffy.

I actually made the mistake of serving my flaky buttermilk biscuits as a base for strawberry shortcake. Just like there is a proper use for each utensil, there’s a proper biscuit for strawberry shortcake. My flaky biscuits have tons of layers with a good crunchy shell. Not the right type for strawberry shortcake. It was difficult for me to watch my father-in-law pushing down on the biscuit with a spoon to try to pry a piece off. When the spoon finally went through, you heard the clang of the spoon hitting the plate and a strawberry flung out of the bowl from all the force. Pretty funny to watch actually. My poor father-in-law had to work just for a bite. It was a wrestling match and he was losing.

Tools you'll need to make sour cream drop biscuits:

Baking sheet

Parchment paper

⅓ cup scoop

Cooling rack

You don't ever have to touch this dough when prepping. I use a fork to mix the dry ingredients with the wet just until it starts to come together. You can do all the mixing in the bowl and there’s no need to even dirty the counter. Use a scoop to transfer onto a lined baking sheet.

Using a ⅓ cup scoop gives you 6 large biscuits. Scoop the dough and drop it onto a parchment lined baking sheet. You can use a ¼ cup scoop if you would like 9 smaller biscuits. Baking times will be more or less depending on what size scoop you use. If larger bake about 22 minutes but check after 20. If using a smaller scoop, bake for 15 minutes but check a few minutes before. It would be so much easier if ovens were consistent.

Bake for 12-15 minutes (ovens vary a bit), until golden brown on top. Cool briefly and serve warm. I like to serve to serve these with honey butter made with Aleppo pepper. Just mix half a stick of softened butter with 1 Tbsp honey and 1/2 tsp Aleppo.

Using the spatula scoop blobs onto the sheet pan, leaving about 2" between biscuits and from the sides of the pan.

Mix all remaining ingredients together and add them. Mix until just incorporated but don't over mix. The idea is to minimize gluten activation so you end up with a more tender rather than chewy biscuit.

Sift together the dry ingredients in a large bowl. If you really want to save time and make biscuits often I recommend having self-rising flour on hand. In this case just measure out a cup :)

Preheat your oven to 400°F, or 375°F if you have a convection oven, and position a rack in the middle. Grease a half sheet pan with butter or cooking spray.

* If you can find it, a lower protein soft winter wheat flour makes a more tender biscuit. If you make biscuits all the time (you might after trying this recipe), you can even buy self rising flour that has the baking powder and salt mixed in already. A classic Southern one is White Lily.

** If you don't have baking powder you can make it by mixing 2 parts cream of tartar and 1 part baking soda. I recommend making only what you will use immediately as it will deteriorate over time

Variations & Ideas:

• Substitute the Blue Grass, scallion, and cheddar with:

• Brown butter miso biscuits: brown the butter (place it in a glass bowl with a plate on top and microwave for 2 minutes, check, then continue cooking in 30 second intervals until it's nutty smelling and browned, you can do this on the stovetop too but I find the microwave easier). Add to the flour and then add to the sour cream/water: 2 tsp Lula N41, 2 tsp white miso.

• You can bake the biscuits more tightly together in a small cast iron pan. Grease the pan and space the 6 biscuits about 1/2 inch apart from one another. I like to brush the top with a bit of melted butter to aid browning. They will rise a bit more.

• For a flakier biscuit shred the butter using a box grater instead of melting it. You'll get a bit more of a layered texture like you do in puff pastry.

My friend Emily is the one who told me about these Sour Cream Drop Biscuits as we stood in the church foyer solving all the world’s problems and talking about recipes. (The two go hand in hand.) She told me these included only four ingredients and that sour cream was one. “Let me guess then,” I said. “Sour cream, flour, baking powder, and salt?” Yep! With some butter drizzled in for flavor.

Well, yeah. Of course. Butter. Butter drizzled in for flavor, and a large pat of butter melted onto both halves of the biscuit immediately following their removal from the oven.

She promised to send me the recipe, and I was planning to wait patiently. But the next morning, all I could think of was how much I wanted a Sour Cream Biscuit. Surely I could figure out the correct proportions of the ingredients in these biscuits. So I got out the goods and experimented. How hard could it be?

Not hard. (Would I be sharing these with you if they were?)

The trick is that you’re going to need to get your hands messy. The ingredients get tossed in a bowl all together, then you can begin to stir. After a short while, the stirring spoon will likely be thrown into the sink and your hands become your greatest kitchen tool. Mix and squish, friends. Mix and squish.

Since your hands are already messy, use them to pull out bits of dough (whatever size you want your biscuits). Roll the dough in your hands and press the ball down gently onto a baking sheet. This is so much easier than rolling and cutting and cleaning up the mess afterward. I mean, you will have to wash your hands.

5-Ingredient Sour Cream Drop BiscuitsYum

Please don’t ask if you can sub buttermilk for the sour cream. There are plenty of Buttermilk Biscuit recipes out there. But these are Sour Cream Biscuits, so subbing another dairy or non-dairy item would make them a Not Sour Cream Biscuit.

Tall and Fluffy Biscuit Tip:

Put your biscuits onto the baking sheet side by side – rubbing shoulders, getting cozy. This way they have no choice but to bake up, not out. See, biscuits need their friends to come along side them to help them grow. Blueberry Sour Cream Drop Biscuits

I confess that I’m more than a little intimidated by the prospect of baking biscuits. They seem a bit time-consuming for such an anti-morning person like myself. All that dough-shaping and biscuit-cutting and such is just a lot to ask so early in the day.

Behold the beauty of drop biscuits. There’s mixing. All in one bowl, I might add. There’s scooping. There’s baking. That’s all that’s required to get you on your way to homemade biscuits.

The inspiration for these came from a couple of things. First, I had a beautiful container of blueberries sitting in my refrigerator just begging to be baked up into something delicious. Secondly, I recently remembered sour cream biscuits that a friend used to make. I put those two ideas together and after just a little bit of time and effort, we were eating incredible blueberry biscuits.

If you have a large cookie scoop or ice cream scoop, it will be your best friend for dropping the dough onto the baking pans. I have this 3-tablespoon scoop that works perfectly for getting the dough cleanly onto the pans and ready to bake.

Besides their simplicity, the other real beauty of these is how adaptable they are. Use different berries if you want. Or, leave them out all together and just serve them with your favorite preserves. If you want savory biscuits, cut the sugar by half and add some spices and maybe some cheese instead of fruit. I love to add garlic powder, freshly ground pepper, and parmesan cheese for a perfect soup companion.

I learned a super important lesson the other day and that is to pay closer attention to emails.

Apparently a couple weeks ago I received an email letting me know that my site’s server was being retired and I needed to migrate my site over to a new server by May 23rd.That date came and by the end of that day I had no access to my site. Oops, completely missed that email! Once we figured out what had happened, I called my extremely wise brother in a panic and he helped me get things switched over. There are still a few glitches on my site, so please bear with me.

Now let’s talk about something a little more exciting and delicious, these  amazing Sour Cream Biscuits. They require 3 simple ingredients (ok, 5 if you don’t have self-rising flour) and are the easiest things to make. If you hate making biscuits because of the rolling and cutting, there is none here.  Just scoop and plop into your muffin tin. Easy peasy.

My mom and dad raved about them the other night and told me I had to make them and that I’d want to eat the entire batch. They were so right. My mom got the recipe a few weeks ago from the newspaper.

Let me tell you a little bit about these biscuits.  They are extremely tender, buttery, soft and basically melt in your mouth. There really is no reason to spread more butter on them since there is a whole stick in them, but the more butter, the better is what I say.  

Go big or go home, right?! Then drizzle some honey on them (or jam) and you may want to marry them♡.

The only thing I might consider doing differently is making 6 biscuits next time instead of 8 so they will be a little bigger. We happen to be biscuits lovers at our house and because these tiny little things are so stinking good, we agreed bigger would be even better! For those non-biscuit lovers out there, these will totally win you over!

These are definitely going to be appearing weekly at our house.

It’s safe to say that biscuits are a southern staple and a definite favorite here on the Ranch.  I make dozens of buttermilk biscuits a week for guests! Meanwhile, I have been experimenting with keto biscuit recipes for about a year and finally came up with a recipe that I am super happy with! Its been tested time and again and its finally ready for its big reveal!

Drop or Rolled Biscuits?

Growing up there were mainly two types of biscuits coming out of our kitchen, drop biscuits and rolled.  There are more variations, but these were the two main staple in our house!  The rolled biscuits carefully mixed, gently patted out, cut with a cutter and baked.  Out of the oven, they were tall and fluffy and typically slathered with melted butter. 

The drop biscuits weren’t as fussy, the dough is a little wetter, mixed in one bowl, plopped on a sheet pan and baked.  This resulted in a biscuit with crispy, crusty exterior that bakes up a little flatter and with a coarser texture than rolled, perfect for gravy, dipping in sauce or even strawberry shortcake! This keto biscuit is similar to a drop biscuit!

This Keto Biscuit recipe has an amazing crisp top and bottom and them middle is perfect fluffy and flavorful.  Made in one bowl this no fuss biscuit doesn’t even require any cutting of butter into the flour…everything in the bowl and into the oven.

Making Dairy Free Keto Biscuits

This keto biscuit recipe can easily be made dairy free! My original version of these drop biscuits contains butter and sour cream.  The sour cream acts like buttermilk would in a traditional recipe, and helps create a light texture!  These biscuits can be made dairy free by using lard or a keto friendly shortening in place of the butter and omitting the sour cream and using a touch more unsweetened almond milk in the dough.   Both versions are super quick, easy and equally delicious! Ghee can also be used for a lactose free option!

These keto biscuits can easily be made into any size that suits you! I use a scoop to evenly scoop the dough out onto the sheet. You can use one, two or three scoops, depending on how bog you want your biscuits. I think two scoops is perfect but if your looking for a jumbo biscuit for a breakfast sandwich, three scoops is your number!
