How to Make Sweet Chili Chicken?

This recipe calls for a few simple steps. First, cut the chicken into pieces.

Cooking notes Homemade sauce

In this recipe I used the homemade Thai sweet chili sauce. It is spicier than the bottled sauce and it gives the dish an extra kick. I highly recommend you make the sauce at home if you want a healthier, less sugary dish. And of course, the bottled sauce will work just as well if you don’t want to make your own.

Crispy chicken without deep frying

The reason you’ll want to use this recipe is that it creates super crispy chicken without deep frying.

Simply use the formula: oil + salt + egg + cornstarch

Not only does it season the chicken and make it more flavorful, but it also yields an extra crispy exterior, even after you coat it with sauce. I’ve tried the method on chicken breasts and chicken thighs, and they both produced juicy results.

No wok required!

If you don’t own a gas stove (like me), the best way to cook this dish is to use a large nonstick pan. Not only does it create crispy chicken with less oil, but the finished dish will taste as great as if you had cooked it in a wok. I wrote a lengthy post (wok vs. stir fry pan) to explain the reason. Long story short – your home stove usually cannot generate enough heat for wok cooking. So a large flat nonstick pan is your next best choice.

Cook some veggies in the same pan

I usually chop up some veggies and steam them before I cook the chicken. To make the  cooking and cleanup faster, I often use my fast-steaming method: heat up 1/4 cup water in the frying pan until boiling, spread the veggies and sprinkle with salt and pepper, and cook them for 1 to 1 1/2 minutes. You can use broccoli, cauliflower, green beans, and/or carrots. I serve the veggies on the side and pour stir fry sauce over it. It tastes so good and balances the meal!

When I serve the dish, I also cut up some lime wedges. I like to squeeze a bit of lime juice on the chicken to make it tangier. Oh my, I can finish two big bowls by myself!

Those little bites of chicken in sticky Thai sauce are a popular appetizer in restaurants. But there’s hardly any meat and they’re a little dry. These Sweet Chili Thai Chicken Thighs have that sweet, hot and zesty flavour but also have juicy tender meat.

This one is for my friend Vicki. She likes to order the Thai chicken bites when we go out for wings with the neighbourhood group. She doesn’t care for wings because they’re mostly skin and bones. I get it.  I prefer bone in skin on chicken thighs. There’s so much more meat and flavour than wings or bites and there’s no deep frying or breading if you make Sweet Chili Thai Chicken Thighs.

The sauce is based on the ingredients on the bottle of store bought sauce. I did some experimenting and I’m happy with the result. I wasn’t going for the exact flavour because I find it’s a bit too sweet and hot.

If you like extra spicy dishes you can add more chili flakes and sriracha. And, a funny thing. The store bought ingredient list had pickled garlic. Amazingly I had some in the fridge so I tossed one in. But regular garlic is just fine.

The best time to make Sweet Chili Thai Chicken Thighs is when you need to clean your stove top. You’ll have some grease splatter so wait until it’s time for a good cleaning. In my house that means about once a year. Kidding.

Use a heavy skillet that can go in the oven. Heat it up to medium high, add a little bit of oil, season the thighs well with salt and pepper and add to the hot pan skin side down.

Skinless chicken or skin on?

I almost always use bone in skin on chicken. The skin helps keep the meat from drying out. But it does have a fair bit of fat and isn’t fun to eat unless it’s crispy so you need to sear the pieces skin side down over a fairly high heat. That’s where the splatter comes in. You don’t need much oil in the pan to get started so add just a bit. Once they get a really nice deep golden colour, about 10-12 minutes depending on the size of the thighs, turn the pieces over. Tilt the pan and carefully spoon out most of the fat. Leave just a bit to help brown the other side of the chicken and to add to the sauce. Don’t try to turn the pieces too soon, otherwise the skin will stick to the pan.

Once the pieces are almost cooked, after about 10 more minutes, pour the sauce over top and roast in the oven for about 15 minutes. Using the roast setting has the heat coming from the top which helps keep the skin crispy. And the higher temperature is also important.

Take the pan out a few times and baste with the sauce that’s on the bottom of the pan to make sure the tops are nice and coated, but leave skin side up. The sauce will have thickened slightly. Roast until the internal temperature is at least 170 degrees. “They” say chicken should be cooked to 180 degrees but the meat does continue to cook once it’s removed from the oven AND you can end up with dry meat if you over cook it. Always let meat rest after it’s been cooked to ensure the juices return to the inside of the meat.

Garnish with minced green onions.

Optional Add-In’s and Variations Where is Sambal Oelek and Where to Buy it?

Sambal Oelek is an Asian chili sauce made of chili peppers and vinegar. It can be found in the Asian section in most all grocery stores. I have never had a problem finding it. 

You may also see a chili garlic sauce on the shelf close by. It’s very similar, but it has garlic in addition to chiles and vinegar. If you use it, you may want to cut back on the amount of garlic this recipe calls for. 

We were first introduced to this sauce when I combined it with mayonnaise and sugar as a sauce for our spicy chicken wraps. We thought it was extremely hot back then, but now not so much.

How to make Sweet Chili Sauce Tips for Making this Sauce Storage Suggestions

Store in the fridge inside an air-tight jar for about two weeks. When you take it out of the refrigerator, it may be congealed. Dump it into a saucepan on the stovetop or put it into a microwave-safe bowl and heat slightly to bring it back around.

As soon as I ordered my new wok, I knew I had to add some great wok-cooking cookbooks to my repertoire.

I came across Jaden Hair’s The Steamy Kitchen Cookbook, and after glancing through some of the recipes, ordered it immediately.  I was not disappointed when it arrived.  There are so many dishes I want to cook!  But I had to make a choice for my first one, and here it is.

The colors of this dish really drew me in.  The red and yellow peppers, the green of the basil — you can practically taste it just by looking at it.

And it really was delicious.  Both a little spicy and sweet, the chicken hit all the right places on your tongue.

Absolutely one of the greatest things about this dish is it took no time to make.  That’s why I have begun a new-found love affair with my wok — it’s hot and cooks super fast.  No excuse not to make dinner on a weeknight with one of these.

Thai-style Chicken in Sweet Chili Sauce From The Steamy Kitchen Cookbook by Jaden Hair

  • Cornstarch Slurry: 2 tsp. soy sauce, plus 1/2 tsp. cornstarch
  • 1 lb boneless chicken, sliced thin, pinky-sized pieces
  • 1 tbsp. high-heat cooking oil 3 shallots, sliced thinly
  • 2 fresh kaffir lime leaves, sliced into thin slivers (optional)
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 2 tsp. fish sauce
  • 2 tbsp. soy sauce
  • 1/4 cup sweet chili sauce
  • 1/4 cup fresh Thai basil

In a large bowl, make the cornstarch slurry by stirring together 2 tsp of soy sauce and cornstarch until the cornstarch has dissolved.  Add chicken and toss to coat.  Marinate for 10 minutes at room temperature.

Set a wok or large frying pan over high heat.  When a bead of water sizzles and evaporates upon contact, add the oil and swirl to coat.  Add the chicken in one layer and cook for 2 minutes, flipping halfway.  Remove the chicken from the wok, keeping as much oil in the pan as possible.  The interior of the chicken will still be raw.

Lower the heat to medium and add the shallots, lime leaves and garlic.  Stir-fry for 30 seconds.  Add the red and yellow peppers and stir-fry for 1 minute, until the peppers are softened, but still have a nice crunch to them.  Pour in the fish sauce, soy sauce and sweet chili sauce and stir well.  Add the chicken pieces back into the pan and let the entire thing simmer for 2 minutes.  The chicken should have finished cooking and the sauce should be glossy and thickened.  Turn off the heat and stir in the fresh basil leaves.

If you can’t find lime leaves, just leave them out.  However, if you can find them, they do add a complex flavor that you can’t get with anything else.

Make sure when you’re cooking with a wok that you have everything prepped, chopped and ready before you start cooking, otherwise it can get stressful and things can burn.  Everything cooks so quickly that you have to be ready to add ingredients right when you need to.

This Sticky glazed sweet Thai chili roasted chicken is a great way to liven up your dinner plans.

This week has been crazy busy. Yesterday I spent a good part of 5 hours trying to make a traditional mole only to have it poured down the drain. Note to self…red palm oil is disgusting! It made the whole sauce taste like oil and nothing else. I already knew I didn’t like the taste of it but the recipe I was adapting called for a cup of peanut oil. I figured olive wouldn’t work quite right in a Mexican sauce so palm it was. So after combining literally about 20 different mole recipes into my own I think I’ve got the perfect recipe that takes nowhere near 4 hours and definitely not a cup of oil. Success!

So needless to say we needed a quick fuss free dinner. Thai Chili Roasted Chicken for the win! I had leftover sauce from last week when I made this for the blog and we definitely didn’t mind having it again. I love the sweet tangy spicy flavor of the sauce and when it gets charred a bit it’s even better. Of course isn’t everything better with a little char?

The recipe for the sauce makes enough to glaze 2 chicken legs. If you’re cooking for more simply double or triple the recipe.

Grilling technique figures here as well. Charcoal is better but gas will work too. A mix of direct and indirect heat. Start your chicken over indirect heat. You want the temperature high. Like 450-500F.

When it’s almost done put a few pieces over the direct heat. Let it char a bit. Get some grill marks. Watch it closely though. There’s sugar in the marinade. Sugar burns easily.

When they are just right move them back to the indirect zone and repeat with a few more pieces. Keep going until all the chicken is just the way you want it.
