We’re going back to basics today with one of my most essential everyday recipes, vinaigrette! You know how much I love salads, and I’m surprised I didn’t think to share my basic vinaigrette recipe with you until now.

Vinegar and olive oil-based vinaigrette is a light, zippy, heart-healthy salad dressing. It’s great on greens, vegetables and fruits. You can change up the flavor by using different vinegars. Vinaigrette is easy to adjust to taste, and I’ve included notes how to do so in the recipe.

Once you start making homemade vinaigrette, you won’t go back. Whisk together some basic ingredients, and you’ll end up with dressing that tastes infinitely better than store-bought dressings. No preservatives here!

Homemade vinaigrette keeps for 1 to 2 weeks in the refrigerator, so it’s worth the 5 minutes it takes to mix it up. Then you can keep it on hand for all of your salad needs. Let’s get to it!

Basic Vinaigrette Ratio & Ingredients

The traditional French vinaigrette formula calls for 1 tablespoon vinegar for every 3 tablespoons olive oil. Modern vinaigrettes often call for a bit more vinegar than that, but it’s always up to you. Kale salads can tolerate more zingy dressings, while you’ll want to use less vinegar for mild greens like spring greens.

Here’s what you’ll need to make vinaigrette:

Vinaigrette Varieties

While you can use any tasty vinegar you’d like to make vinaigrette, here’s how I choose between my three go-to vinegars.

Balsamic Vinaigrette

Balsamic vinegar makes a bold, slightly sweet dressing that is wonderful on green salads with fruit, such as apples, strawberries or peaches. Examples include my strawberry arugula salad and favorite green salad with apples.

Red Wine Vinaigrette

Red wine vinegar packs a punch and works well with other bold flavors and bright veggies, like tomatoes, bell peppers, olives, feta and more (think Greek salads or Italian salads).

White Wine Vinaigrette

White wine vinegar a more mellow vinegar and it’s especially nice with more delicate flavors like spring greens, cucumber, zucchini and sweet corn. It’s lovely on just about every green salad out there. I’ve used it recently in my orange orzo salad and corn salsa.

Additional Options

Champagne vinegar is even more mild than white wine vinegar. Apple cider vinegar is sweet-tangy and tastes lightly of apples. Sherry vinegar is similar to red wine vinegar but slightly less intense.

Vinaigrette ( VIN-ig-RET, French: [vinɛɡʁɛt] ()) is made by mixing an oil with something acidic such as vinegar or lemon juice. The mixture can be enhanced with salt, herbs and/or spices. Vinaigrette is the diminutive form of the French word vinaigre ("vinegar"). It was commonly known as "French dressing" in the 19th century.[2]

Preparation[edit]

In general, vinaigrette consists of 3 parts of oil to 1 part of vinegar whisked into an emulsion. Salt and pepper are often added. Herbs and shallots, too, are often added, especially when it is used for cooked vegetables or grains. Sometimes mustard is used as an emulsifier[3] and to add flavour.

Varieties[edit]

Vinaigrette may be made with a variety of oils and vinegars. Olive oil and neutral vegetable oils such as soybean oil, canola oil, corn oil, sunflower oil, safflower oil, peanut oil, or grape seed oil are all common.

Different vinegars, such as raspberry, create different flavors, and lemon juice or alcohol, such as sherry, may be used instead of vinegar. Balsamic vinaigrette is made by adding a small amount of balsamic vinegar to a simple vinaigrette of olive oil and wine vinegar.

Brazil: A mix between olive oil, alcohol vinegar, tomatoes, onions and sometimes bell peppers is called vinagrete. It is served on Brazilian churrasco, commonly on Sundays.

China and Japan: A similar salad dressing is made with sesame oil/sesame paste and rice vinegar. In north China, sometimes mustard is added to enhance the flavor and texture of the sauce.

Northern France: It may be made with walnut oil and cider vinegar and used for Belgian endive salad.

Southeast Asia: Rice bran oil and white vinegar are used as a foundation with fresh herbs, chili peppers, nuts, and lime juice.[citation needed]

United States: Vinaigrettes may include a wide range of additions such as lemon, truffles, raspberries, sugar, garlic, and cherries. Cheese, Parmesan or blue cheese being the most common, may also be added. Commercially bottled versions may include emulsifiers such as lecithin.

Uses[edit]

In classical French cuisine, a vinaigrette is used as a salad dressing and, as a cold sauce, accompanies cold artichokes, asparagus, and leek.

Russian vinaigrette or vinegret[edit]

Vinaigrette gave its name to a salad in Russian cuisine called vinegret.

Aaaaand I’m finally back in NYC from a very intense week in Salt Lake City. I flew to that beautiful (and dry! Oy!) city for the Everything Food Conference, where not only I learned a lot but made lots of new amazing food blogger friends! 

However, fatigue got the best of me and I got sick the day I was flying back home and am still recovering from that. ???

I guess that’s what happens when you decide to make friends with party animals who want to go out drinking after a long and busy day, even though they’ve been awake since 6am. Shadi and Andrea, I’m looking at you! ?

Good thing I’m almost 100%, right on time for Memorial Day weekend festivities! Which brings me to the subject: Memorial Day food. 

Memorial Day is considered by many the unofficial start of summer and it’s one of the three most popular days for grilling out. So I figured some of you might be looking for different recipes to try this year, which inspired me to share this Brazilian Vinaigrette Salsa.

If you’re looking for a spicy salsa, this recipe is not for you! 

The “carioca” (meaning: from Rio de Janeiro) version of Pico de Gallo is very mild and has green and red bell peppers instead of jalapenos. The paulista (from Sao Paulo) version is even milder, without any peppers at all!

And while the Mexicans use lime juice to bind it all together, we use olive oil and vinegar, hence why we call it “vinagrete”.

Brazilian Vinaigrette Salsa makes a great accompaniment for grilled meat, chicken or fish and is a must at any barbecue or steakhouse in Brazil. It is also traditionally served with feijoada, or black bean stew, which is our national dish!

I can go through a whole bowl by myself, just with some pao frances (our small french rolls) even before lunch or dinner is served. Oh yes, it is very addictive, so try to stay away from the table until food is served, or there won’t be any vinagrete to go with your meal!

If you’re looking for something new to try this summer, I highly recommend our vinaigrette salsa. It is not only deliciously fresh but super simple to make!
