Back in college, I went to the Bahamas with my girlfriends for spring break. Everywhere you go, they serve conch fritters. As much as I loved them in the beginning, I couldn’t look at another conch fritter by the 3rd day. You don’t see conch fritters much in NY (I probably never have), so I was ready for conch fritters again. I looked up several recipes but I didn’t have the standard ingredients so we improved a bit and ended up with non-traditional but very good conch fritters. How bad can any deep fried batter be, right?

Dipping Sauce

Before we start, here’s what conch looks like before being cleaned (yup, they’re ugly suckers):

1. Make the dipping sauce first by mixing all the ingredients together. Set aside.
2. Cut the conch in half and place them on a cutting board. Place a piece of plastic wrap over them and pound them. Put them in a food processor and process for a few seconds, until it looks roughly chopped.

3. In a medium bowl, mix together conch, scallion, onion, pepper, and tomato paste. Season with salt and pepper. Mix well.
4. Sprinkle the flour, cornmeal, and baking powder over it and mix well. Add water a little at a time while mixing, until all the water is used.

5. Heat oil to about 375 degrees F. Drop tablespoonfuls of batter into the oil. Fry until golden brown and floating on the top.
6. Remove from oil and drain on paper towels. Serve immediately with dipping sauce.

If you’ve ever vacationed in the Florida Keys, Key West, the Bahamas or other Caribbean islands, you’ve probably tried conch fritters a time or two. This light, crispy beer batter fritter is loaded with fresh conch meat, spicy peppers and served with any variety of dipping sauces. These authentic Bahamian fried conch fritters are easy to make at home, too, so you can save the cost of a plane ticket.

Fried conch fritters are a standard on most seafood restaurant menus throughout the Florida Keys and Key West and visitors should expect to sample them at least once or twice during their stay.  This iconic appetizer screams “vacation” like no other… and once you try them, there’s just no going back.

What kind of seafood is conch?

Conchs (pronounced: konk) are gastropods known as sea mollusks or snails. They’re found in the ocean throughout the Bahamas, Caribbean and West Indies.

You’ve probably seen these spectacular shells (if not on the beach, than in a souvenir shop), but take a closer look at the photo above and you can see the live conch inside.

Conchs can grow from 6 to 12 inches long, weigh as much as 5 pounds and live for up to 30 years. These herbivores

Conchs are invertebrates, which means they don’t have any skeleton or bones and therefore, the entire animal is edible.

Where can I buy conch?

Because conchs have been over-fished in U.S. waters (primarily for their prized shells), it’s illegal to sell fresh conch meat. However, a reputable fishmonger can sell packages of frozen conch meat (usually in one pound packages) that come from the Bahamas, Dominican Republic, Honduras, Jamaica and Turks and Caicos where there is no ban on harvesting.

I source my conch, locally from Pop’s Seafood Market and/or Key Largo Fisheries. Both shops have overnight shipping, so if you can’t find conch at your seafood market, you can certainly order it online.

My authentic recipe for Bahamian conch fritters is the best. The classic beer batter fritter is spiced w/ hot peppers & loaded w/ conch meat.

Is conch meat healthy?

Conch is relatively low in calories (about 130 per serving) with 11 grams of fat and 65 grams of cholesterol per serving. It’s also fairly high in protein with about 26 grams per serving.

On it’s own conch, isn’t too bad, but let’s be real here… We’re making fried conch fritters, which is obviously not a diet food.

What do conch fritters taste like?

Living in South Florida, I’ve had my share of conch fritters. The best ones are crispy on the outside, soft inside and contain noticeable chunks of sweet conch meat. They should have a noticeable spice, but not be overpowering.

I’ve had fritters that were too bready, or didn’t have much conch meat — or worse, the conch wasn’t tenderized well, making them chewy and unappetizing.

This recipe comes courtesy of my friend, chef and angler, Joe Cascio and his lovely wife, Erica.  I love their version because it starts with a pound of fresh conch, that’s well tenderized so that every bite is perfect.

Their recipe uses lots of veggies (that you can taste in the fritter) as well as hot peppers for spice. Their beer batter is light and fluffy, not heavy. In other words, it’s perfect.

On its own, conch can be almost crunchy in texture, unless you tenderize it well. I use the jagged side of my meat mallet to pound out the conch fillets until they’re about 1/4″ thick.

How to tenderize conch meat Best hot peppers for fritters

Let’s talk about spicy… I don’t mind a little heat in my food, but I never want it to be so hot that all you taste is fire. The spice is meant to enhance, not overpower the flavor of the conch fritters.

So, I recommend half of a scotch bonnet or habanero pepper (seeds and all) in this fritter recipe.  You could go with more if hell-fire is your thing, or eliminate them altogether if it isn’t.

If you can’t find scotch bonnets or habanero, substitute serrano or jalapeno. However, if you happen to live in the Caribbean, and have access to piment antillais, those spicy, flavorful hot peppers would be my top pick.

How to make conch fritters

For this type of frying, peanut oil works best. Peanut oil has a high smoke point, creating a surface seal that locks the food’s natural moisture allowing the steam to cook the food from the inside out. The result is a delicate, golden crispy outside and a tender, tasty inside.

Tips on frying Bahamian conch fritters: Pro Tip:

Before frying the entire batch of conch fritters, make one or two “test” fritters, so you can adjust the salt or heat to taste — before you fry the whole batch.

The first couple of fried conch fritters usually aren’t the best ones as they tend to soak up more oil, but what you really want to do is taste them and adjust the seasoning to suit your tastes. If you like it spicy, add more hot pepper,

What to serve with seafood fritters?

These fritters are exceptionally tender and light with a snappy zing from the scotch bonnet and while they’re delicious on their own, they benefit even more from a tangy key lime aioli.

The aioli is simply a good quality mayonnaise, dijon mustard, key lime zest and juice (or you can use regular limes), a little salt and hot sauce to taste.  Mix it up and prepare to swoon.

You can also use a simple cocktail sauce for dipping, or just a squeeze of lime.

These conch fritters will win you friends, trust me.  No one can resist the allure or aroma of hot from the fryer fritters with a tangy dipping sauce!  You’re in for a treat!

Known as a delicacy in various parts of the world, Bahamian conch fritters are small bites of local queen conch meat fried in a savory batter with a combination of peppery seasonings (hot goat pepper, hot sauce, and sea salt) and commonly used vegetables in the Bahamian diet, which grow abundantly among our islands like onion, sweet green pepper, and tomato. For those who have never tried conch before, you might be curious to know what conch tastes like? This high-protein shellfish can be sweet and mild in flavour, if prepared right, but you might find it similar in taste and texture to calamari with no fishy-taste. Conch fritters is a great introductory way to eat conch- after all, who can resist a deep-fried fritter?

Indigenous to The Bahamas, queen conch fritters are a popular preparation for conch meat for a number of reasons. Since the conch is a type of snail, the meat comes hidden inside a large, thick shell that can be time-consuming or difficult to penetrate. This can mean, especially for the home cook, that it takes a lot of effort to retrieve a fairly small amount of meat. Conch fritters suspend pieces of conch meat in a batter, along with chopped vegetables, so a little bit of meat goes a long way. Chopping up the meat for conch fritters also solves another inherent problem, which is that conch meat is usually quite tough and benefits from being cooked in small pieces.

Conch fritter batter can be frozen and used latter. To reuse, remove from freezer and let stand at room temperature for 1 hour or until defrosted. Pour into large bowl and add 2 tsp of baking powder, mix until baking powder is blended in. If the consistency is off, adjust with flour or water as needed. Please note that you may need to add seasoning to correct flavour also.

Serving Suggestions:

Plate conch fritters alongside 2 oz of chilled calypso sauce for dipping. Use toothpicks for handling of the hot fritter and dunk your fritter into the sauce for cooling, complimentary flavours. Enjoy!
