Well, now you can make your own White Castle hamburgers right in your own kitchen. I’ll even show you how to make the hamburger patties nice, thin, and square. These homemade mini burgers taste like takeout from the restaurant.

What are the ingredients in a White Castle burger?

The ingredients are pretty straightforward and simple.

Best Buns for Sliders

Use dinner rolls for them. They are a perfect size and look just like the real thing. Some people like sweet rolls. But White Castle doesn’t use sweet rolls. If you want to stay authentic, use regular dinner rolls.

How to Make White Castle Burgers at Home

One of the most difficult things about making homemade burgers is making the beef patties stay thin. White Castle hamburgers are known for being really thin.

To do this, I actually use a food processor to mix my ground beef up with some salt and water. Watering down the beef helps them stay flat when you fry them.

Then, I roll out the beef mixture to 1/4-inch thick and cut it into 3-inch square patties. You need them to be this size or else they won’t look right.

Another thing that keeps the patties thin is poking holes into them. This gives the meat some steam holes so they don’t swell up.

Finally, fry your beef patties in a pan with water in the bottom.

Believe me, if you follow these steps, you will have the most amazing little patties.

How do you dice the onions so small?

I prefer to use a food processor to chop my onions this small. I know there are lots of hacks for chopping onions and not crying, but it’s easier to let the food processor do the work for me.

You can also buy frozen chopped onions, saving you all the work entirely.

Once the onions are diced, they are cooked with beef bouillon for authentic White Castle flavor.

How do you make White Castle burgers in the oven?

The most authentic way to make them is by frying the patties. But if you want, you can bake them in the oven too.

Thyme for Cocktails has a fantastic recipe for them. Basically, it involves baking the hamburger meat on a cookie sheet and then cutting them up into squares after.

White Castle Hamburgers only require a few simple ingredients: 

Ground Chuck: Obviously a good burger needs some good meat. 100% beef is the way to go.

Plain Bread Crumbs: Bread crumbs help give the meat patties some depth and thickness.

Egg: One egg will bring some moisture into the patty and help it all stick together while staying thin.

Dry Onion Soup Mix: The O.G. White Castle slider calls for onions, and using a dry soup mix is the perfect way to get teeny tiny onions but a ton of flavor.

Water: Again, you need just a little extra moisture, especially to combine the soup mix into the meat. Plus, water helps the meat to stay flat when you cook it.

Black Pepper: You always need a little spice in your meat.

Dinner Rolls: Dinner rolls are the perfect size for sliders. They’re thick and fluffy and simply make an ideal bun.

What Are the Best Buns for Sliders?

I use white dinner rolls for sliders. I love their soft texture, and they’re thick enough to hold in your burger patty.

You can also find actual slider buns at most grocery stores if you prefer. Mini-buns will taste more like a regular burger, so this might be the most authentic option.

Braised Beef Pasta Menu Description: “Slow-simmered meat sauce with tender braised beef and Italian sausage, tossed with ruffled pappardelle pasta and a touch of alfredo sauce—just like Nonna’s recipe.”

It’s a mistake to assume that a recipe posted to a restaurant chain’s website is the real recipe for the food served there. I’ve found this to be the case with many Olive Garden recipes, and this one is no exception. A widely circulated recipe that claims to duplicate the chain’s classic Bolognese actually originated on Olive Garden’s own website, and if you make that recipe you’ll be disappointed when the final product doesn’t even come close to the real deal. I won’t get into all the specifics of the things wrong with that recipe (too much wine, save some of that for drinking!), but at first glance it’s easy to see that a few important ingredients found in traditional Bolognese sauces are conspicuously missing, including milk, basil, lemon, and nutmeg.

I incorporated all those missing ingredients into this new hack recipe, tweaked a few other things, and then tested several methods of braising the beef so that it comes out perfectly tender: covered, uncovered, and a combo. The technique I settled on was cooking the sauce covered for 2 hours, then uncovered for 1 additional hour so that the sauce reduces and the beef transforms into a fork-flakeable flavor bomb. Yes, it comes from Olive Garden, but this Bolognese is better than any I’ve had at restaurants that charge twice as much, like Rao’s where the meat is ground, not braised, and they hit you up for $30.  

As a side note, Olive Garden’s menu says the dish comes with ruffled pappardelle pasta, but it’s actually mafaldine, a narrower noodle with curly edges (shown in the top right corner of the photo). Pappardelle, which is the traditional pasta to serve with Bolognese, is a very wide noodle with straight edges, and it’s more familiar than mafaldine, so perhaps that’s why the menu fudges this fact. In the end, it doesn’t really matter which pasta you choose. Just know that a wide noodle works best. Even fettuccine is good here.

For the little bit of alfredo sauce spooned into the middle of the dish I went with a premade bottled sauce to save time. You can also make this from scratch if you like (I’ve got a great hack for Olive Garden’s Alfredo Sauce), but it’s such a small amount that premade sauce in either a chilled tub from the deli section or in a bottle off the shelf works great here.

If you're hosting a Thanksgiving feast on Thursday, by now your bird should be thawed, you've planned plenty of sides and you're already pre-baking some desserts.

But if you're still in search of one final dish that will really take your meal to the next level, consider White Castle's burger-stuffed turkey recipe.

To celebrate the biggest food holiday of the year, the chain famous for it's little burgers is re-releasing its stuffing recipe — and we've got to admit, it's a pretty fun take on the traditional dish.

Though novel, White Castle's original burger stuffing recipe actually dates all the way back to 1991 when, as the story goes, a White Castle team member used a sack of Sliders to beef up (so to speak!) her grandmother’s stuffing recipe.

“As a family-owned business, we’re happy to have the Original Slider and the Turkey Stuffing recipe a Thanksgiving staple for so many families across the country, Jamie Richardson, vice president of White Castle, said in a statement.

If you like burgers, this recipe might just be a big home run since you can use it to stuff your bird or bake it off in a casserole dish.



While the recipe is pretty out there, it’s not that weird. Those soft, doughy slider buns are a great stand in for any type of bread and a lot of people add sausage or bacon to their stuffing ... so why not beef?

Since some variation of the recipe has been around for over 25 years now, plenty on social media have shared their (mixed) results and reactions.

Raise your hand if you’ve eaten either White Castle or Krystal sliders at 2 AM? Those little square burgers are almost a right of passage for late teens or early 20 somethings.

When you hear that calling and your mouth is watering but can’t get to either restaurant, we’ve developed a White Castle slider recipe that is very similar, not exact. Our homemade version is thicker than the originals, for both taste as well as manageability.

White Castle or Krystal?  Really depends on geography, a North vs South thing.  White Castle is in the North, mainly the Midwest and Krystal is in the south, or southeast to be exact.  Both restaurants serve inexpensive, small, very thin square hamburgers or sliders.

Are you getting the theme as to why I asked if you’ve ever eaten them at 2 AM. Teens and twenty somethings are looking for cheap, filling food that can be had after midnight. Don’t get me wrong, I’m in my 50s and I’ve had Krystal burgers, but it was at 11 PM, not 2 AM!  Age difference thing.

I had White Castle when I went to school at Miami of Ohio and now that I live in Atlanta, it’s Krystals.  I refer to the recipe as White Castle because those are the strongest memories for me, but both are very similar in looks and taste.

White Castle Burger Recipe For A Crowd

When developing this slider recipe I wanted to make it easy, fast and something that can be served to a crowd. I’m actually really proud of the tips and tricks that has brought this slider recipe to a few steps and very little clean up.

Perfect for a weeknight meal because they are ready in under 30 minutes. Throw a tray of fries in at the same time, toss a salad and serve dinner. Done!

There’s no making the patties and cooking them individually on the grill or stove top.  Just make one big slider in a baking tray and throw in the oven.

For a party you can make trays of the White Castle Slider Recipe ahead of time.  Keep in the refrigerator or freeze.  You can cook in the oven straight from the freezer!  How handy is that?

How To Make A White Castle Slider Recipe

Mince a small to medium onion, I like sweet like a Vidalia.  You want it minced fairly fine. 

On a baking tray mix three pounds ground beef with diced small onion and kosher salt and pepper. No need to over mix, just get the onion distributed evenly.  Then press down with your hands to make as level as possible, pushing the meat to the edge of the baking tray.

You’ll see in the picture below that I used parchment paper to keep the burgers from sticking to the tray. Now that I’ve made the White Castle slider recipe a few times, I’ve discovered that the bottom piece of parchment paper is not necessary.

Cover the meat with a piece of parchment paper and use another baking tray to gently press down on the mixture, this ensures an even layer all the way across making the meat cook evenly.

Remove the extra tray and parchment paper.  Bake for 20 minutes in a preheated 425 degree oven or until done to your liking.

If you want the sliders to have a char then turn up the heat to broil, place the tray on the top shelf and broil until you like the color. Personally, the sliders are between the bun and you really don’t see or taste the char.  Broilers for me are a dangerous thing because I tend to get distracted and then burn whatever is in the broiler. Plus White Castle steams, not chars.

While the White Castle slider recipe is cooking, split and place the buns place open face on the second tray.  Put a slice of American cheese on each bun.

Remove sliders from the oven and cut with a spatula, place on buns.  Hint: hold a bun over the tray to determine where to cut the sliders, you want them to fit the bun. Typically you’ll get 15 sliders.

Finish the sliders by placing the top bun on the burger, cover tray with foil and return to the oven for a minute or so to steam the buns and melt the cheese.

What Is In A White Castle Slider Recipe?

When I looked at their ingredients it was only ground beef, salt, pepper and rehydrated onion for the frozen version and steamed over onions for the restaurant version.

You need good ground beef, personally I always use grass fed beef from Long Meadow Farms, a sweet onion like Vidalia, good slider buns.  Optional is American cheese, mustard and pickle chips. Mustard is actually a Krystal thing, but I like pickles so they are in the recipe!

Well, OK, you can add any favorite toppings you like.  The mustard and pickle chips are more traditional for Krystal.

Mix 3 pounds ground beef. Yes, I said three pounds.  For those that think that’s too much, these White Castle sliders keep and are great the next day for lunch or a snack.  They also can be frozen for another night when you don’t want to cook. For my family of five (4 men, 1 woman) we devour almost the entire tray with just a few burgers left for a late night snack.

Still don’t want three pounds of sliders sitting around? You can cut the recipe by a third.  Use a smaller baking tray or just free form the patty. You may not end up with a perfectly square burger, but no one’s looking.

Why Do White Castle Burgers Have Holes In Them?

White Castle steams their burgers on a griddle. According toThrilllist, who interviewed a White Castle executive, the holes were a suggestion from an employee many years ago.

The thought, and now proven theory, is that the burgers would cook faster, and that turned out to be true.  The holes also allow the onion flavor to infuse the burger as well as the buns.

At the restaurant they scatter the onions on the griddle, top with the burgers with holes in them to steam.  Then top with the bun, that’s why burger and bun have the onion flavor.

I’m here to tell you that as a humble home cook, it’s impossible to work with that thin of a burger, even if you try the freezer trick. That’s why I make a thicker slider, not traditional but much tastier!

Yes. It makes the ratio of burger to bun better.  Otherwise you feel like you are mainly eating bread.

How To Cook An Authentic White Castle Burger

If you are going for authenticity, then alter my recipe a bit. Use only 1 ½ pounds of ground beef and half the salt and pepper.

Scatter the minced onion over the bottom of the tray, place meat over that and poke holes in the burgers so that there will be about 5 holes per slider, one in each corner and one in the middle.

You can also mix the onions into the slider mix which makes things much easier,  but you wanted authenticity so I’m telling you how White Castle makes their burgers, and according to Thrilllist they are steamed over cut onions.

The holes help steam the burgers. Bake for 10-15 minutes.

It’s also a little harder to deal with such thin burgers. If that’s what you want then go for it.

Now you know why I devised a different way to cook the sliders and make them twice as thick as a White Castle, just think of it as a “double”.

Tips & Make Ahead Tricks For Making Our White Castle Slider Recipe

Before mixing the raw meat, put some kosher salt and ground black pepper onto a paper plate. You want to do this before handling the raw meat so that you don’t contaminate the salt or pepper mill. I use a salt pig so my hands go directly into the salt, thus mentioning this step.

Don’t forget the “extra tray” trick. By placing parchment paper over the raw beef and pushing down with the extra baking tray you get perfectly even burgers.  The parchment paper isn’t necessary but it keeps clean up and sticking to a minimum.

These White Castle and Krystal sliders are great for a weeknight or for a crowd.  Party goers love sliders that are easy and less messy to eat than a big burger. And for the host these are easy to make ahead.

You can mix and press the slider recipe into the baking trays up to two days ahead of time if you cover and refrigerate.  You can also freeze them, see in section below.

Use your discretion when adding the onion, a large one in my opinion would be too much, it might make the sliders fall apart. You want about a cup of minced onion.

How To Freeze Our White Castle Slider Recipe

Line the baking tray with freezer paper or aluminum foil, leaving “wings” at each end as handles so they are easy to remove from the tray.

Go ahead and mix and press the meat mixture into the baking trays. Pop in the freezer for at least an hour or until frozen through. Remove from freezer. Use the paper or foil handles and remove the slider brick from the tray. 

If you make smaller trays then they will probably go straight into a larger freezer bag.  If you used the half sheet pan then you’ll have to wrap in plastic wrap and then another layer of foil.  This method is best used within a month or you might get freezer burn on the burgers.

You can put the frozen sliders on a baking tray straight from freezer to oven, add 5 minutes or so to the cooking time.

What To Serve With Sliders

Classic would be French Fries.  You can buy frozen and pop them in the oven along with the sliders when they are cooking.  Many fries call for 450 and I call for 425 degrees for the sliders.  The fries will be fine at 425, you just might need to leave them in the oven for an extra 5 minutes to crisp them up.

Or you can make our Boardwalk Fries that adds some Old Bay for a seaside twist. Or bake frozen french fries and when they come out of the oven immediately sprinkle with kosher salt, seasoned salt or Old Bay.

How about lightening it up with some fresh fruit?  Or try one of our salad recipes like Caesar Salad, Olive Garden Salad or Caprese Salad.

Which brings me to my burger today.

I absolutely love White Castle. I grew up eating them with my daddy, who also loved them.

His passion for the little sliders, created my passion for the little sliders. I miss eating WC with him.

I’ve been known to go pick up a crave case randomly and keep them in the fridge for days warming up a few here and there.

I’m telling you, it’s a thing. I can’t get enough of them. I’ve been wanting to try this recipe for a long time.

When I was sick recently, I didn’t feel much like going out anywhere.

I had a craving for some White Castle, so I decided I’d like to make ’em. 

I’ve had this recipe written down on a recipe card forever.

It came out of one of those community cookbooks which I adore.

I did make a few tweaks and changes because I didn’t think the original would taste as similar.

Thankfully, I had all the ingredients to make them, so I gave them a shot. And wow. Just wow! I am SO happy I did.

Talk about as close to the real thing as you could get.

I was so impressed with the flavors.

I made up a “sack” (which really just means I put a whole bunch in a gallon baggie) for my son.

He texted me a bit later and seemed really impressed with how I captured the flavor of the real ones.

He did mention my patties were a tiny bit thicker, and they were. On purpose.

Since I was only making a dozen, there are 4 of us here.

3 little sliders per person is not really enough to feed everyone.

So I made the burgers just the teeniest bit thicker than I normally do.

Either way, you’ll love them. I totally promise you that.

Depending on where you live, White Castle might be a regular favorite or part of the lore and legend only known about because of the Harold & Kumar movies. And yet, despite the fact that it only has fewer than 400 locations in only 13 states, this fast-food restaurant stands out in the sea of burger joints because of its tiny, almost bite-sized sliders. If you're one of the unlucky many that don't have a White Castle near you, you can still find their products in the frozen aisle of most grocery stores. But, if you're like us, frozen hamburgers don't always sound too appealing. So we decide to crack to the code and make the perfect copycat White Castle sliders. After a few test batches, we came up with a method that makes sliders that almost look like the real deal. Better yet, they taste almost identical, too, and this recipe doesn't require a pantry full of ingredients or a ton of time to execute. Maybe they do taste exactly like them…or… maybe they taste even better! 😉 Judge for yourself, but my Copycat White Castle Sliders taste more like what they used to taste like back when I was a teenager in the ’70’s and early ’80’s when we’d hit them up on a Friday or Saturday night heading north up Calumet Avenue and into Hammond, Indiana, after a, oops!!, “wee bit of partying” for a sack or two! 😉

Oh yea. GOOD times!!!!!

Hey, we all had a little too much fun during our later teenage years and, let’s be honest, into our 20’s, too! Those were the days to just cut loose, have fun, grab the brass ring, and enjoy everything life has to offer!

I had a blast and don’t regret a single day!

I think that’s the true “secret of life”. The journey. What you’ve done and experienced.

So when our little town here on the east coast opened one, I was beyond thrilled!! They were still pretty good, don’t get me wrong, but not nearly as good as they were years ago. (Is anything ever?)

Plus, get this, they put….wait for it…..

waaaaiiiiit for it…….

……KETCHUP on them!!!!

WHAAAAAT? *gasp*!!!!  Yep. KETCHUP.

That’s a NO-NO back where they originated and all across the midwest. It just plain ruins them. So, I had to special order mine with NO KETCHUP. (It must be an “east coast thing”??)

My hubby likes them that way, but he had never had them before, as he grew up in the Pacific Northwest, so he never had the whole “White Castle experience”.

So, I have to “special order” them to make sure that they make them the “original way”. Sometimes they get it right. Coin toss.

Don’t get me wrong, I love ketchup on any other burger. But it just doesn’t jive with the White Castle flavor. Diehard White Castle fans know exactly what I’m talking about!!

Anyways, I get tired of a 50/50 chance that they get our order right and we have to go back. So, I decided I’d just try to make my own. Just like the ones we used to get. Made right. 😉

Meat pressed, scored, and holes bored! Then cover and freeze! *When cooked, you won’t have holes anymore as the meat shrinks during cooking.

And the verdict is….we might not have to go to White Castle anymore. Except for convenience’s sake when I need a break, because we just don’t eat out anymore. Almost never.

Especially “fast-food”. Ugh.

So if you want to make a great slider, please do give my Copycat White Castle Sliders (That Actually Taste Like White Castle) a try! I think you’ll really enjoy these! (Just don’t let this midwestern girl catch you putting ketchup on them.) 😉 😀


  • 12 small soft dinner rolls, my package measured 9" x 7"
  • 1 lb. extra lean ground beef
  • 1 (10 1/2 oz.) can beef consomme, [i]divided[/i] (I used Campbell's)
  • 1/2 cup dried minced onions
  • 1/8 tsp. garlic salt
  • 1/8 tsp. regular ground pepper
  • 1/16 tsp. onion powder
  • a little regular table salt and pepper, about an 1/8 tsp. each
  • 6 American cheese slices, sliced into fourths, *optional to make cheese burgers
  • 12 dill pickle slices, or double for 2 on each if very thin or you'd just like more (I liked two!)


  • Line a baking sheet with plastic wrap. Mix ground beef and 1/3 cup of the beef consomme together until mixture is easily spreadable. Gently press and spread meat mixture onto lined baking sheet until you form an 11" x 9" inch rectangle in a thin and even layer. (Or 1", all the way around, larger than your package of rolls to allow for shrinkage of beef when cooked).
  • Using a pizza wheel, score, cutting through into 12 equal squares. (3 rows of 4). Make 5 holes in each square patty using a toothpick and your index finger resembling the 5-dot pattern of standard playing dice. Cover with another sheet of plastic wrap and pop into freezer for at least 2 hours or overnight for later. (Until firm).
  • When frozen, remove and carefully snap apart frozen patties along score lines, separating each.
  • Preheat oven to 450o F.
  • Pour remaining beef consomme onto a baking sheet, tilt to coat entire bottom and sprinkle evenly with dried minced onions. Let sit for 5 minutes to let the onions absorb some of the broth and rehydrate. Lightly and evenly, sprinkle entire mixture with garlic salt, pepper, and onion powder.
  • With a spatula, squeegee the mixture into a smaller rectangle to place the patties on, leaving about a 1" space all around the outside. Place frozen beef patties on top of seasoned onion mixture, leaving a little space in-between each one. Lightly sprinkle top evenly with a little regular salt and pepper, about an 1/8 tsp. of each. (*A little bit more doesn't hurt!)
  • Pop into fully-preheated oven and bake for 10 minutes to allow burgers to steam-cook, and until browned.
  • While patties are baking, cut rolls in half making buns.
  • Remove patties from oven and place 2 cheese squares onto each patty overlapping slightly, (if making cheese burger sliders). Top each with 1 - 2 dill pickle slices. Top each with a bun top, cover tightly with foil, and pop back into oven for 3 minutes.
  • Place bottom buns onto serving platter. Remove patties from oven. Use a solid (no drain holes) spatula to pick up each slider with the onions and some juice from the pan, and place onto bottom buns. Use the same foil and tightly cover well for 1 minute to let rest and steam. Remove foil and serve immediately. Enjoy!!
  • To Reheat: Place on microwave-safe plate, cover sliders with a damp sheet of paper towel, and zap at 50% for about 1 minute and 20 seconds for 2 sliders, or until heated through.
  • Notes

    *To sprinkle seasonings evenly, always dump your measured amount into your palm, and with your other hand, pick up the spice with your index finger and thumb and sprinkle over evenly well above, rubbing your finger and thumb together. Don't try and just sprinkle from the measuring spoon.
