If you have been a long-time reader of my website, then you will know that I love a good stew. They seem to fulfill some sort of need for warmth and comfort, while also being nutritionally balanced. Why Are Stews Good?

Anyone who has to cook often, or for a lot of people, probably appreciates a good quick one-pot dish. Stews are usually quick to prep, and require very little attention while cooking, meaning they fit the bill. You can add a protein source, a carbohydrate base, and assorted vegetables, for a nutritionally balanced dish.

They make vegetables more palatable for kids or adults with picky tastes since they are soaked in a delicious broth. Also, they are usually made with economical ingredients such as beans and potatoes, and also store very well, meaning that you can have them for multiple meals. On the other hand, they can also function as a quick light lunch option.

Is Stew Healthy?

I think it goes without saying, but your stew’s healthiness will depend on the ingredients present. However, like I said, I find that it is very easy to make stew super healthy.

For instance, in this stew, I use Jamaican yellow yams instead of potatoes, which I love for variety and its vitamins and minerals. As a vegan, I use coconut milk instead of dairy milk; since coconut milk comes with its own or list of nutritional benefits, this ingredient adds creaminess, richness, and nutritional value.

What Is Jamaican Yellow Yam?

Yellow yam, also known as Jamaican yam or Guinea yam, is a tropical root vegetable that originated in Africa and spread to the Caribbean by way of slaves.

It is a part of “ground provisions”, which is usually a pot of various boiled root vegetables and flour dumplings that is traditionally eaten with Jamaican meals.

They were nutritious and hearty, perfect to be energized to work hard in the fields while being cheap and easy to grow. Yellow yams are even boiled on their own, and the Jamaican yams or the ground provision mixture is eaten with curries, stews, etc. They are also added to most Jamaican soups to make them more filling.

What is normally known as yams in the US is really sweet potatoes, which is actually a separate plant. Yellow yams are a proper member of the yam family, which tastes similar to potatoes while being a bit starchier.

This makes the Jamaican yam better to accompany savory and spicy dishes since the flavor is more neutral.

Yellow yam’s nutrition makes it a great side for any meal. It is packed with vitamins and minerals, making it an easy and cheap way to acquire these vital nutrients that you may not be able to otherwise.

Is Coconut Milk Good For You?

Coconut milk is made from the inner meat of mature coconuts. It is a delicious milk substitute that is used traditionally in many cultures, especially in the Caribbean, Asia, and South America.

Coconut milk has quite a high but healthy fat content, making it perfect for adding to spicy dishes to mellow the flavor and as a base for desserts. Coconut milk is also full of various minerals and vitamins, antioxidants, and even some fiber and protein.

Note that people with allergies to tree nuts can consume coconut because botanically coconut is not a nut, it is a fruit. However, the FDA (Food and Drug Administration) has classified it as a nut. What Is Bay Leaf?

Bay leaves, as the name suggests, are the leaf from a tree, specifically various types of laurel trees. They are commonly found as dried whole leaves in the spice section of any major supermarket, and especially in international supermarkets. They are used in Indian, Latin, and Caribbean cooking, among others.

The laurel tree can also be found in many nurseries, so I have also begun to grow my own.

What Does Bay Leaf Taste Like?

A commonplace where many of you may have seen a bay leaf is in the restaurant Chipotle’s rice. If you have ever wondered why they would put random leaves in their rice, keep reading.

The reason why they are left whole and added to stews, rice, and other dishes, it’s because the leaf never softens. You can cook your dish on the stove for an hour and the leaf will be nearly just as hard as when you added it in. This is why you won’t find ground-up bay leaves, and why they are removed from the food before serving.

However, when they are slowly being cooked, they release a subtle but important flavor. It is hard to describe, but usually, people say it’s a hint of pepper, with nearly a piney flavor. More importantly,  when added to other flavors it works as a great undertone to tie them all together.

Yellow yam can be purchased here in the United States in most Caribbean, Latin, or other international grocers, or some major supermarkets and possibly even Walmart. If you cannot find it, the white-fleshed yam is a more popular variety that can be substituted in this recipe.  

How To Store Jamaican Yellow Yam?

Store yam in a cool dry place, similarly to potatoes and other root vegetables. It can especially be stored like this if the yam is freshly harvested.

It can also be stored in the refrigerator. Usually, I peel, wash, chop, and store yam in the freezer, uncooked in freezer bags, for at least 3 months. 

Why Are Stews Better The Next Day?

In dishes with spices and complex flavors, eating them as leftovers or in a second meal is just as, if not more, enjoyable as when they are initially cooked. Something about sitting and slowly soaking up all of the flavors really will take your super stew to the next level. Also, if you reheat it on the stove this gives it extra cooking time with heat which even further will help all of the flavors to marry.

Ingredients:
4 tablespoons olive oil
4 garlic cloves, minced
1 onion, chopped
1 tablespoon paprika
1 lbs. of beef, cut into cubes
1 tablespoon vinegar
2 cups vegetable broth
6 yams, deskinned and cut in half
1.5 tablespoons watercress, chopped
Salt and pepper to taste

Directions:
1) In a saucepan, add the olive oil, garlic, onion, paprika, beef and saute them, stirring well.
2) Once the beef has browned a bit add the vinegar, vegetable broth, and yams. Season with salt and pepper to taste
3) Close the pan and place over high heat. When it starts boiling, turn the heat to medium and let it cook for about 20-25 minutes until the beef and yams are both tender.
4) Once they are done, remove from the heat and let it cool for about 5 minutes. Pour into a platter, cover with the chopped watercress, and serve while hot.

A NOTE ON RAGOUT D’IGNAME INGREDIENTS

Honestly, this was one of those dishes where the stars just aligned. Easy, quick, delicious (yes please)!

I was able to find every single ingredient at my local grocery store and I am positive you will be able to also. The dish is very fresh, made with no processed food. It just makes you feel good when you eat it.

This is also a dish which could be made vegetarian or vegan VERY easily! Simply remove the stewed beef and replace the beef stock with vegetable stock. Where the majority of the flavor comes from the fresh veggies, it would be just as delicious!

Buy ground chorizo (or you could use hot Italian sauce, but if you do that add 2 teaspoons of paprika to the stew), and make small meatballs out of the mixture. They should be bite-sized. Instructions

1) Shape ground chorizo into small spoon-sized meatballs. In a large pot or Dutch oven, add olive oil over medium heat. Add chorizo meatballs and cook until browned well on all sides, about 8 minutes turning occasionally.

2) Remove meatballs (leaving any grease in the pot) and add chopped yams and onions. Cook for 6-8 minutes until veggies are soft and possibly browned in spots. Add minced garlic and stir together and cook for 30 seconds.

3) Add drained and rinsed beans, fresh thyme and chicken stock. Bring to a simmer and cook for about 5 minutes covered.

4) Remove about a cup of the beans and yams from the pot and mash them well to form a paste. Stir that back into the stew to thicken it. Add meatballs back into the pot.

5) Add rinsed spinach to the pot and cook for another minute or two until spinach is wilted. Season stew with salt and pepper. Serve immediately.

Chorizo Yam Stew

The first part of this recipe is getting the chorizo cooking. Buy ground chorizo (or you could use hot Italian sauce, but if you do that add 2 teaspoons of paprika to the stew), and make small meatballs out of the mixture. They should be bite-sized. You should get 25-30 meatballs out of a pound of chorizo.

Add a few tablespoons of olive oil to a sturdy pot over medium heat and cook the meatballs for about 8 minutes until they are browned nicely and cooked through. These are looking right.

While the meatballs cook, you can chop the yams and onions. This is really the only chopping you have to do so take your time with it. Peel the yam and cube the yam into a small to medium dice. You don’t have to be as exacting as I was, but you don’t want any huge chunks.

I measured out two cups of cubed yams, but you could use more without much issue. If you have extra I would just toss it in.

When the meatballs are done, remove them from the pot, but leave any oil that has accumulated. Add the diced yam and onions along with a few thyme sprigs.

Cook this all together for a few minutes until the veggies soften.

Finishing the Stew

The last piece of this stew is spinach which adds some great color to the stew. You can just use a big bunch of adult spinach. Chop off any huge stems and rinse it well.

When the veggies are soft in your pot, add the garlic to it and cook it for 30 seconds so the garlic doesn’t burn. Then add the chicken stock and white beans. Bring that to a simmer and toss in the spinach.

This will wilt quickly. Maybe a minute or so and then you can add the meatballs back in. Taste the stew and season it with salt and pepper. It’ll probably need a pinch of pepper but might not need salt depending on the saltiness of your chorizo and chicken stock.

Mine was pretty good actually without much extra seasoning.

Okay, last step! Scoop out about a cup of the yam and bean mixture and mash it well with the fork.

Stir this back into the stew and it will thicken it a bit.

Serve up the stew in big, deep bowls.

I just love this flavor combo. It’s my new favorite stew!

This Nigerian stew is literally one of the tastiest stews I've eaten. It's filling, hearty, delicious and full of traditional African flavours and ingredients from peanut and yam to sweet red pepper and beans. 🍲Ingredients

This incredible African Peanut Stew doesn't take long to make and has pretty simple ingredients. I go over these wonderful items below.

Zim's Tribe Sauce - the absolute star of the show, and what allows you to easily make this delicious authentic African dish. It has all the flavours you need from pepper, garlic, sweet pepper, paprika and much more! Zim's Tribe makes African sauces and relishes, as well as infused oils. It's founded and run by the most lovely Nigerian guy who found that it was almost impossible to pick up an "African sauce" in the way you can pick up Indian or Italian sauces. The sauces are made from his own special recipe, which can simply be used as a dipping sauce if you fancy, as well as for full-blown meals. They conveniently range (thank you, Zims!) from mild, medium to hot and EXTRA HOT! I tend to go for the Medium heat one myself.

Smooth peanut butter - well, I'm a self-professed nut butter addict, so a stew with peanut in pleases me greatly! Peanut in stews is traditional in some African cuisine, which I am totally on board with! I love using Biona's Smooth Peanut Butter, and also eat it most mornings on my High Protein Superfood Breakfast.

Yam - this is a very traditional African vegetable, and delicious in Nigerian stew. It's a root vegetable that can be used in a similar way to potato. It adds a real thickness to the stew, especially when left overnight. It's a comforting carby vegetable, and if you haven't tried it, I really recommend it. You'll need to peel it (with a knife is probably easiest), and it's easiest to cut up with a proper chef's knife. The one I have is the Victorinox Chef's Knife which is very reasonably priced and fantastic for chopping bigger vegetables like squash. If you can't find yam, just use potato or sweet potato.

Zim’s Tribe Garlic Ginger Chili Oil - Zim's Tribe also do some amazing infused oils which are delicious for drizzling over salad, and are great for frying. I recommend that you fry the plantain with this oil for extra delightful flavours. You can of course just use your usual frying oil or even bake the plantain.

Plantain - another traditional ingredient that is just divine! A savoury kind of banana that you'll find in a lot of African and Caribbean cooking. It's delicious to serve as an added extra with this Nigerian stew, and I talk more about it in the Serving Ideas section below. If you can't find plantain, you can use unripe banana instead.

Beans - I can't be vegan and not love beans. They are full of protein and fibre (and so keep you super full) and are such an easy addition to any meal, especially curry and stews. You can actually use any kind of bean in this Nigerian stew (use whatever you have available). I love using pinto beans, black eyed peas or black beans in this dish. The dish uses one drained tin/can of beans, but you can of course cook your beans from dried.

Vegetable stock - a real store cupboard essential for me. It makes up the liquid of this African peanut stew, and so it's important you have a good vegetable stock. I use stock made by Nine Meals from Anarchy as it has no preservatives and is made from ACTUAL vegetables (yes, what a shocking concept, but not all stock really is!).

👩🏽‍🍳How-To

This Nigerian stew is simple to make, in part because you can use Zim's Tribe sauce for those key African flavours, which just makes this stew the star of your weekend! In summary you:

👩🏽‍🍳 Prepare the yam by cutting it into cubes. Let the yam cook until a fork easily goes through the yam pieces.

👩🏽‍🍳 In a saucepan put the Zim's Tribe sauce and vegetable stock. Cook for a few minutes then add the peanut butter, and make sure it's well combined.

👩🏽‍🍳Add the beans and cook for a further five minutes. Then add the yam but don't mix too well or the yam pieces will break up. If you leave the Nigerian stew to sit overnight it will get thicker.

👩🏽‍🍳 For the plantain (if using - it really adds to that traditional Nigerian feel), you cut it up and simply free in a bit of oil. Using an infused oil from Zim's Tribe makes it delicious, such as the Garlic Ginger Chili Oil.

👩🏽‍🍳 Serve on rice with the plantain, and sprinkle with fresh coriander/cilantro and salted peanuts.

This Nigerian stew just on its own is delicious and full of those traditional Nigerian flavours. It's easily pimped up with some tasty extras, though. I've suggested fresh coriander/cilantro, salted peanuts (because they bring out the peanut taste EVEN more) and rice if you're extra hungry.

Additional to this, and very important to me as it's one of my favourite ingredients, is fried plantain. It's a traditional African and Caribbean food which is like a savoury banana. When ripe and then fried, it takes on a sweet taste which is just divine. You can fry it in any oil, but I fried mine in Zim’s Tribe Garlic Ginger Chili Oil for extra flavour.

You may also want some bread to mop up those mouth-watering African peanut stew juices. I made these incredible Jamaican Roti which are flakey and moorish, and just perfect for this dish.

Yam recipes such asfried yam, pounded yam, yam and egg stew have become classics in their own right. This yam porridge recipe tastes just my mom’s. The only difference is that it uses parsley which is not typical in my mom’s recipe. However, you can choose to add any herb or any leafy green of your choices like spinach, kale, or ugwu.

Asaro is made from Puna Yam which is boiled till it’s tender and it’s cooked in a blend of Peppers, Tomatoes, and Onions, palm oil, and seasoning. While the dish is more common to the yoruba speaking region of Nigeria, it is still a meal enjoyed by majority alike each with their own regional variation.

How to Make Easy Stove Top Beef Stew

Prep the Ingredients. Peel and chop all of the potatoes into approximately 1 inch cubes. Slice the onion into 6 large wedges. Trim most of the fat from the beef roast, then cut the roast into approximately 1 inch cubes, like the potatoes.

Brown the Meat. Heat olive oil in a large Dutch oven or pot. Add cubed beef, salt, pepper and garlic. Cook until all outsides of the beef are browned, stirring occasionally. Sprinkle the flour over the beef. Toss until all of the beef is evenly coated and flour begins to brown.

Make the Rich, Red Gravy. Pour in the red wine to deglaze, or scrape up any browned bits from, the bottom of the Dutch oven. Whisk in 1 cup of beef broth, continuing to whisk until all of the flour is dissolved. Add tomato paste and Worcestershire sauce and whisk until smooth. Stir in the rest of beef broth, dried thyme, rosemary and bay leaves. Let simmer to tenderize the beef for 30-40 minutes.

Add the Potatoes. Add chopped sweet potatoes, Yukon potatoes and onion. Allow to low simmer, stirring occasionally, for 30 minutes or until potatoes and beef are fork tender. If beef needs a little more time, simmer for another 15 minutes or so. If desired, before serving, stir in a tablespoon of chopped parsley.

Tips for Making the Best Beef Stew Preparing To Make Sweet Potato Beef Stew Ahead of Time

To make meal time easier you can prepare the potatoes, onions and beef chuck roast 1 day in advance. Cover potatoes with cold water in an air tight container in the refrigerator to keep them from turning brown. Trim & cut roast, place in a zip top bag, cover with beef or chicken broth to keep the meat moist, seal and refrigerate. Simply drain ingredients to use the next day!
